Jump to RecipeSomeone requested me for a healthy fruit cake recipe, so I had to make one with protein powder and have a no sugar fruitcake – just what we need for the holidays!
I was really not expecting this turnout here, but this sugar free dried fruit loaf just tuned out beyond amazing!
Ingredients for Protein Fruitcake Bread
This healthy protein fruitcake bread is made with extra healthy ingredients like protein pancake mix, protein powder, applesauce and Greek yogurt; No sugar added needed for this diet friendly fruit cake recipe.
- Protein Pancake Mix – I used the Kodiak Cakes Buttermilk Protein Pancake Mix for this pancake loaf.
You can also make this bread any other just add water pancake mix. - Vanilla Protein Powder needed for a high protein pancake mix bread and also replaces the ‘sugar’.
I used whey-caesin Vanilla protein powder from Quest Nutrition since it based well. - Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein fruit cake bread. Quest again here.
- A bit of Coconut Flour
- Non-fat Greek Yogurt another protein-packed ingredient
- Unsweetened Applesauce
- Unsweetened Almond Milk to add moisture to the bread – the protein powder absorbs a lot.
- Sugar free Maple Syrup for low calorie protein bread with no sugar!
I use the sugar free monk fruit maple syrup from Lakanto (code HAYLSKITCHEN gets you a discount) - Some Melted Butter
- Eggs
And then for the actual fruit cake bread part:
- Dried Mixed Fruit: I used a mix of Apricots, Prunes, Pear, Apple
- Dried Mixed Berries like Blueberries, Cranberries, Cherries
- A bit of extra pancake mix to coat the driedfruit
Tips for perfect Protein Fruitcake Loaf using Pancake Mix
This protein fruitcake loaf with protein powder and pancake mix is quite easy, but here’s some tips to make sure they turn out perfect!
- Use room temperature eggs, yogurt and milk;
This is so the wet ingredients and dry ingredients can mix well.
- Don’t overmix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder – will make it tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free fruit cake recipe.
- Toss dried fruit in extra pancake mix so they don’t stick to the bottom of the loaf when baking.
How to store Sugar Free Protein Fruit Cake Bread
This high protein sugar free fruit cake can be stored on the countertop, in the fridge or the freezer for a healthy breakfast or dessert.
Keep the diet fruit cake recipe in an airtight container on the countertop for up to 2 days or fridge for 6 days.
To freeze, wrap healthy fruit cake loaf slices in plastic wrap, place in a freezer-safe zipper bag, and freeze up to 3 months. Leave them on the countertop or place them in the fridge overnight to thaw.
Alternate Ingredients for Healthy Fruitcake Bread with No Sugar
I made this high protein, sugar free and healthy fruitcake bread with the ingredients and the brands mentioned above, but here’s some other alternatives you can try:
- Protein Pancake Mix: Use any regular pancake mix; You can make healthy protein pancake quick bread with Bisquick or Krusteaz too.
A good base pancake recipe would work as well. - Unflavored Protein Powder: Plain flour (all purpose, whole wheat pastry or 1:1 Gluten free baking flour), but also reduce milk to ⅓ cup
- Sugar-free Maple Syrup: Mashed Banana or Pumpkin Puree
- Almond milk: Any regular milk
- Applesauce: Mashed Banana or Pumpkin Puree
- Greek Yogurt: Coconut Yogurt

Protein Fruitcake Bread with Pancake Mix
Ingredients
- 1⅔ cups Protein Pancake Mix, or any just-add-water pancake mix, weighed ~177g
- ½ cup Vanilla Protein Powder, 45g, 1½ scoops
- ⅓ cup Unflavored Protein Powder, 30g, 1 scoops
- 2 Tbsp Coconut Flour
- ⅔ tsp Baking Powder
- ⅓ cup + 2 Tbsp Unsweetened Applesauce, 110g
- ⅓ cup + 2 Tbsp Unsweetened Almond Milk, 110ml
- ½ cup Non fat Greek Yogurt, 112g
- 2 Tbsp Melted Butter, 28g
- 1 Tbsp Maple Syrup, Sugar-free recommended below, 15ml
- 1 Egg
- ½ cup Dried Mixed Fruit, (Apricots, Prunes, Pear, Apple)
- ⅓ cup Dried Mixed Berries, (BlueberriesCranberries, Cherries)
- 1 tsp Extra Pancake Mix
Instructions
- Preheat oven to 350°F and line an 8½” x 4½” loaf pan with parchment paper.
- In a bowl combine protein pancake mix, vanilla protein powder, unflavored protein powder, coconut flour and baking powder.
- In a large bowl, whisk together Applesauce, milk, Greek yogurt, butter, maple syrup and eggs.
- Add dry mix to wet and fold to combine.Don’t over-mix or loaf will be dense.Batter should be fairly thick; Add 1-2 Tbsp milk if it’s too thick, or 1 tsp more coconut flour if it’s too runny.
- Place dried fruit and berries in a bowl, sprinkle with extra pancake mix and toss to coat.Required to prevent them from sinking to the bottom.
- Add dried fruit to batter and fold to combine.Do not over-mix.
- Transfer batter into pan, smoothen with a spatula or back of spoon and top with remaining blueberries.
- Bake for 55-60 minutes. A toothpick inserted into center should come out dry.
- Cool for 10 minutes, then remove from pan. Transfer to a wire rack to cool completely.
