The best healthy and sugar free Protein Brookies here – a protein brownie and protein cookie mashup! These healthy brookie bars are sweetened with monkfruit sweetener and protein powder, and have no oil or butter either!
Jump to RecipeI was legit so stoked and surprised by how dense and fudgy these protein brookie bars were! Like a proper fudgy brownie cookie bar!
Not even lying, I ate more than 2 of these in one sitting, and had no regrets at all. All the mental peace with that sugar free, gluten free, oil free, low fat factor in these bars.
Ingredients for Protein Brookies
These high protein brookies are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too; The perfect brownie and cookie mashup recipe!
For the Brownie Layer:
- Lakanto’s Golden Sweetener – This is the Golden Monkfruuit 1:1 Sugar Substitute from Lakanto, and keeps this recipe sugar free; (code HAYLSKITCHEN for a discount here).
- Chocolate Protein Powder needed for high protein brownie and also replaces most of the ‘sugar’. I used part whey-caesin Chocolate Milkshake protein powder from Quest Nutrition, and part Chocolate Protein World Whey for this recipe.

- Gluten Free (All Purpose) Baking Flour – or a regular all purpose flour
- Non-fat Greek Yogurt contributes to the oil-free and and high protein part of these brookies
- Almond Milk or regular milk
- Baking Soda
- Runny Tahini (no butter or oil to keep this recipe low fat)
And for the Protein Cookie Layer:
- Lakanto’s Brown Sweetener – This is the Brown Monkfruuit 1:1 Sugar Substitute from Lakanto (code HAYLSKITCHEN for a discount here too)
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount)
- Vanilla Protein Powder needed for high protein cookie layer
I used half whey-caesin Vanilla protein powder from Quest Nutrition, and half the Whey protein form ProteinWorld(code HAYLSKITCHEN gives you a discount here too). - Gluten Free (All Purpose) Baking Flour
- Some Coconut Flour
- More Non-fat Greek Yogurt
- Unsweetened Almond Milk
- Runny Peanut Butter
- Baking Soda
- Sugar free Chocolate Chips or Chopped Chocolate – I use sugar free ones from Lakanto here (HAYLSKITCHEN for a discount here as well).
Tips for Perfect Protein Powder Brookies
These protein powder brookies are dense and just spot on, but actually very easy to make!
- Use room temperature milk and yogurt;
This is so the wet ingredients and dry ingredients of the brownie and cookie layers can mix well.
- Use Runny Tahini and Runny Peanut Butter also so that it mixes well into the batter
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder will make the fudgy brownies and cookie tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy brookies.
- Don’t over-bake the brookies or they might get tough; Remove when the tester/knife comes out still moist.
Under-baking a little is okay.
How to store Healthy Protein Cookie Brownie Bars?
This high protein cookie brownie bars recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!
Store protein powder brookie bars at room temperature in an airtight container for 1-2 days or in the fridge for a week.
To freeze healthy cookie brownie bars, individually wrap in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.
Alternatives for Healthy Brookie Recipe
For the perfect low calorie healthy brookie recipe, I used protein powder and monkfruit sweetener – no sugar – and I would highly suggest using the ingredients recommended.
I do have some alternatives you can try. I haven’t testing them all, so I can’t say how the recipe might turn out.
For the brownie:
- 1:1 Gluten Free Baking Flour: All purpose flour or Whole Wheat Pastry Flour, in the same amount by weight not cups.
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- Golden Monkfruit Sweetener: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Tahini: Almond Butter, Cashew Butter or any nut or seed butter. Peanut butter might add too strong a taste so I wouldn’t recommend it.
For the cookie:
- 1:1 Gluten Free Baking Flour: All purpose flour or Whole Wheat Pastry Flour, in the same amount by weight not cups.
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- Brown Monkfruit Sweeter: Regular Brown sugar (also not sugar free or low calorie anymore)
- Peanut Butter Powder: 2 Tbsp Peanut Butter, but also use only 2 Tbsp Milk
- Peanut Butter: Almond Butter, Cashew Butter or other nut/seed butter
For Vegan Brookies:
This healthy brookies recipe has no milk or eggs or butter, so can easily be made Vegan with the right substitutes.
For a Vegan brookie recipe, use appropriate protein powder and replace Greek Yogurt with coconut yogurt.
Protein Brookies
Ingredients
Brownie:
- ¼ cup + ½ Tbsp 1:1 Gluten Free Baking Flour, 33g, see post for subs
- ⅓ cup Unsweetened Cocoa Powder, or Cacao Powder, 27g
- ½ scoop Whey-Caesin Chocolate Protein Powder, 15g
- ½ scoop Whey Chocolate Protein Powder, 15g
- 2 Tbs + 1 tsp Lakanto's Golden Sweetener, 28g
- ¼ tsp Baking Soda
- ¾ cup + 1 Tbsp Non-fat Greek Yogurt, 184g
- ⅓ cup Unsweetened Almond Milk, 80ml
- 2 Tbsp Tahini, 32g, see post for subs
Cookie:
- ¼ cup + ½ Tbsp 1:1 Gluten Free Baking Flour, 33g, see post for subs
- ½ scoop Whey-Caesin Vanilla Protein Powder, 15g
- ½ scoop Whey Vanilla Protein Powder, 15g
- 3 Tbsp Lakanto’s Peanut Butter Powder, 18g
- 2 Tbsp Coconut Flour, 13g
- ¼ tsp Baking Soda
- ¾ cup + 1 Tbsp Non-fat Greek Yogurt, 184g
- 3 Tbsp Unsweetened Almond Milk, 45ml
- ¼ cup Lakanto’s Brown Sweetener, 48g
- 1½ Tbsp Creamy Peanut Butter, 24g
- 3 Tbsp Lakanto’s Chocolate Chips, 42g
Instructions
- Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
Brownie Layer:
- In a bowl, whisk flour, cocoa powder, chocolate protein powders, Lakanto’s Golden Sweetener and baking soda.
- In another large bowl, whisk together Greek yogurt and almond milk.
- Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the brownie dense.
- Add in tahini and fold.Batter should be thick.
- Transfer batter into pan and smoothen with a spatula or back of spoon.
Cookie Layer:
- In a bowl, whisk flour, vanilla protein powders, Lakanto’s Peanut Butter Powder, coconut flour and baking soda.
- In another large bowl, whisk together Greek yogurt, almond milk and Lakanto’s Brown Sweetener.
- Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the layer dense.
- Add in peanut butter and most of the chocolate chips (reserve few for top) and fold.Mixture should be thick.
- Spread mixture over brownie layer and smoothen with a spatula or back of spoon.Top with remaining chocolate chips.
- Bake for 37-40 minutes; Toothpick inserted into the center should come out slightly wet.
