Incredible S’mores Protein Cookie Dough complete with mini marshmallows, chocolate and grahams. This s’mores cookie dough uses oat flour and protein powder, for a healthy, gluten free no bake dessert.
Jump to RecipeI’d had a smores inspired edible cookie dough on my list for a while, but never got around to it. Needed a quick snack this evening, and this 5 minute recipe really was a lifesaver.
Literally mixed everything in a bowl, and that’s it. And such a big quantity too!
Ingredients for S’mores Protein Cookie Dough
A few simple and healthy ingredients here for this high protein edible S’mores cookie dough; All pantry staples if you’re eating clean and healthy on the regular.
- Vanilla Protein Powder to replace the sweetener. I used Quest Vanilla – a whey-caesin blend (use less milk for a Whey).
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein cookie dough. I used a whey-caesin blend from Quest Nutrition.
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- A bit of Coconut Flour
- Unsweetened Almond Milk or another non dairy or regular milk
And for the s’mores cookie dough effect:
- Plain or Honey Graham Crackers or Biscuits (use gluten free if you need)
- Mini Marshmallows
- Chopped Chocolate I’d recommend the sugar free ones from Lakanto. The code HAYLSKITCHEN works here too.
If your protein powder is not sweet enough, you might need some more ‘sugar’, or use stevia sweetener instead.
To store Edible S’mores Cookie Dough with Protein Powder
This edible S’mores cookie dough for one is perfect for when you want a quick single serving dessert, but you can store any extras if you have them.
Store extra edible S’mores cookie dough for one in the fridge for 3-5 days or freezer for 3 months; Use an airtight container.
To serve frozen protein cookie dough, thaw overnight in the fridge, and add more milk if too hard.
Alternative ingredients for Healthy S’mores Cookie Dough:
I make this S’mores protein powder cookie dough extra healthy with the ingredients above, but here’s some other healthy alternatives to try!
I haven’t tried these all, so I can’t say how each of them would turn out.
- Oat flour: Almond flour, or use heat-treated gluten free flour or whole wheat pastry flour (there’s plenty of videos online on how to do this)
Just make sure you’re not eating raw flour - Unflavored Protein Powder: Almond flour or more oat flour, but start with 1 Tbsp Milk
- Coconut flour: Try using about ⅓ cup of Almond Flour
- Vanilla Protein Powder: You can also trying replacing this with Zero calorie monkfruit sweetener. I use Lakanto for a sugar free option (code HAYLSKITCHEN for a discount here too.
- Almond Milk: Regular Milk
Vegan and Dairy Free Edible S’mores Cookie Dough
Use a plant based protein powder, dairy free chocolate and Vegan marshmallows to get a Vegan s’mores protein cookie dough.

Gluten Free

Ingredients
- 2 Tbsp Oat Flour, 11g
- 2 Tbsp Vanilla Protein Powder, Whey-caesin, 11g
- 2 Tbsp Unflavored Protein Powder, Whey-caesin, 11g
- 2 Tbsp Coconut Flour, 14g
- 2 Tbsp Unsweetened Almond Milk, 30ml
- 2 Tbsp Mini Marshmallows, 5g
- 1 tsp Chopped Chocolate/ Chips, Sugar free recommended, 5g
- ¼ sheet Graham Crackers, Crushed, 3g
Instructions
- Combine all the dry ingredients in a bowl and mix – oat flour, vanilla protein powder, unflavored protein powder and coconut flour.
- Add almond milk – little at a time – and mix well.Use more or less milk depending on how runny you want it.
- Add mini marshmallows, chocolate and graham crackers, and mix.
