- Oat Flour (you can make your own with rolled oats in a high speed blender)
- Chocolate Protein Powder for high protein pop tart, and also replace the sweetener.

- Use cold yogurt so that the dough does not get too sticky and hard to roll.
- Don’t over-mix the dough or it will get too warm and soft.

Instead of an air fryer pop tart, make a baked chocolate chip toaster pastry; Place the chocolate chip pop tart pastry on a parchment lined baking sheet and bake at 425°F for 9 minutes.

Chocolate Chip Protein Pop Tart
Ingredients
- ¼ cup Oat Flour, 22g, see post for subs
- 1 Tbsp Chocolate Protein Powder, 6g
- 1 Tbsp Peanut Butter Powder, 6g
- 2½ Tbsp Non-fat Plain Greek Yogurt, Cold 36g
- ¾ tsp Chopped Chocolate Chips, 3g
Filling:
- ½ Tbsp Chocolate Chips, Sugar free recommended below, 7g
- ⅛ tsp Coconut Oil
- ½ Tbsp Chocolate Protein Powder, about 3g
- 1 tsp Unsweetened Cocoa Powder, 1-2g
- 1½ tsp Almond Milk, 7ml
Instructions
- Process oat flour, protein powder and peanut butter powder in food processor.
- Add Greek Yogurt and process to form dough – about 15 seconds; Stop as soon as ball forms.
- Add chopped chocolate chips and knead together.
- Divide into two halves. Roll each dough into a ball and then into rectangles (about 5”x4”, ⅛” thick); Use scrap pieces around edges to make proper shape if needed.
Filling:
- Place chocolate chips and coconut oil in a bowl and microwave 20-30 seconds until they start to melt. Stir with spoon to melt completely, then let cool a bit (or chocolate will harden).
- Add protein powder, cocoa powder and milk; Stir until smooth.
Assemble and Bake:
- Take one dough rectangle and spread filling in the middle (leave about ½” from the edge).
- Cover with other rectangle, and seal edges with fork.
- Place in air fryer basket and cook at 400°F for 7 minutes.(or bake 425°F for 9 minutes, flipping halfway)
- Let cool for a few minutes.
