A really good coffee protein cookie here, and its like eating a cappuccino!
Ingredients for Cappuccino Protein Cookie Recipe
This healthy cappuccino protein cookie recipe has a few simple ingredients, no butter or oil and no sugar either! A great gluten free protein cookie recipe too.
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Cappuccino-flavored Protein Powder for caffeinated protein cookie! I used the Dymatize ISO100 in Dunkin’ Cappuccino flavor.
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low calorie protein cookie. Quest Nutrition whey-caesin again here.
- Unsweetened Applesauce for a soft sugar cookie without butter
- Non-fat Greek Yogurt contributes to the oil-free part of these protein cookies since it adds the moisture, and also extra protein
- Baking Powder
For the cappuccino cookie topping:
- Cappuccino flavored Protein Powder; Dymatize ISO100 in Dunkin’ Cappuccino flavor again.
- Non-fat Greek Yogurt
- Coconut Flour to thicken
Store Single Serve Coffee Protein Cookie
This coffee protein cookie recipe is a giant single serve and is best had fresh, but you can store it too.
If you want to store it, keep the gluten free coffee cookie recipe in an airtight container and keep on the countertop for up to 2 days, or fridge 5 days.
To freeze healthy cappuccino cookie recipe, place in freezer-safe zipper bag and keep 1-2 months; Don’t forget to thaw before eating!
Alternates for this Healthy Cappuccino Cookie Recipe with Protein Powder
I recommend making this healthy cappuccino cookie using the protein powder and other ingredients and products listed – since it gives the best results.
If you need other options for the flours and such, here’s some alternatives:
- Oat flour: Use Whole wheat pastry flour or even all purpose flour. A 1:1 Gluten-free all purpose baking flour would work too. Go by the weight for these substitutions.
You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it. - Cappuccino-flavored Protein Powder; Vanilla protein powder + 1-2 tsp Instant Coffee
- Unflavored Protein Powder: More flour (also 1 Tbsp)
- Unsweetened Applesauce: Pumpkin Puree or Mashed Banana
- Greek Yogurt: Coconut Yogurt

This single serve cappuccino cookie recipe has no eggs, so can easily be made Vegan too.

Cappuccino Protein Cookie
Ingredients
- ¼ cup Oat Flour, 22g, see post for subs
- ½ scoop Cappuccino-flavored Protein Powder, Whey, 15g, see post for subs
- 1 Tbsp Unflavored Protein Powder, Whey-caesin, 5g, see post for subs
- ¼ tsp Baking Powder
- 2 Tbsp Unsweetened Applesauce, 30g
- 2 Tbsp Non-fat Plain Greek Yogurt, 28g
- ½ Tbsp Creamy Almond Butter, 8g
Topping:
- 2 Tbsp Cappuccino-flavored Protein Powder, Whey, 11g, see post for subs
- 1 Tbsp Non-fat Green Yogurt, 14g
- 1 tsp Coconut Flour, 2g
- Optional: 1 tsp White Chocolate Chips, Melted, 5g
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Combine all the dry ingredients in a bowl – oat flour, cappuccino protein powder (or vanilla + instant coffee), unflavored protein powder and baking powder.
- Add applesauce, Greek yogurt, almond butter and mix.
- Transfer cookie mixture onto baking sheet, spread with spoon and shape into 5-6” cookie.
- Bake about 12-13 minutes – top should be cooked and dry to touch.
Topping:
- Let cookie cool slightly,
- In a bowl, combine protein powder, greek yogurt and coconut flour; Mix until smooth.Add milk if too wet, coconut flour if too dry.
- Spread over cookie, top with melted white chocolate and enjoy!
