Ingredients for this No Bake Protein Oatmeal Cookie Recipe
These no bake oatmeal protein cookies are make with simple and healthy ingredients like protein powder, peanut butter powder and sugar free chocolate chips too.
- Rolled Oats
- Vanilla Protein Powder to make this high protein garbanzo bean cookie.
I used whey-casein Vanilla protein powder from Quest Nutrition, - Unflavored Protein Powder for even more protein. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
- Peanut Butter Powder , also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Unsweetened Applesauce
- Some Creamy Almond Butter; I recommend Magic Bar Almond Butter from American Dream Nut Butter. It’s got an oatmeal cookie flavor and even some mini chocolate chips, granola clusters, shredded coconut, mini peanut butter chips.

If your protein powder is not sweet enough, you might need some more maple syrup, or use stevia sweetener instead.
Tips for the perfect No Bake Oat Cookies with Protein Powder
These no bake protein powder oatmeal cookies are really easy to make, but here’s some tips to get them perfect!
- Use whey-caesin protein powder since it works well with the ratio of ingredients here; Whey absorbs less moisture, so you would have to reduce the amount of applesauce in this case.
- Taste the mixture and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the dough and have sugar free no bake protein oatmeal cookies.
To store No Bake Protein Oat Cookies
These no bake protein oat cookies needs to be stored in the fridge or freezer. Place cookies in an airtight container for up to 5 days in the fridge and up to 3 months in the freezer.
To freeze, stack healthy no bake oat cookies with parchment paper in between, and place in airtight containers or freezer-safe zipper bags.
Alternative ingredients for Healthy No Bake Oatmeal without Sugar:
I make these healthy no bake oatmeal cookies without sugar, using protein powder for the sweetener, and applesauce as a binder. Here’s some options to replace some of the ingredients if you don’t have them.
- Peanut Butter Powder: 2 Tbsp + 2 tsp Regular Peanut Butter, but also use less applesauce – start with 2 Tbsp
- Almond Butter: Peanut Butter, Cashew Butter or any other nut or seed butter
- Applesauce: Mashed Banana or Pumpkin Puree
Vegan No Bake Protein Cookies
To make these no bake oat cookies Vegan, use a plant based protein powder and dairy free chocolate chips.
You might need some sweetener, so add that as per the taste.

Ingredients
- ⅔ cup Rolled Oats, 60g
- ¼ cup Vanilla Protein Powder, Whey-casein, 22g
- ½ scoop Unflavored Protein Powder, Whey-casein, 15g
- ¼ cup Peanut Butter Powder, 24g, see notes for sub
- ¼ cup Unsweetened Applesauce, 60g
- 2 Tbsp Creamy Almond Butter, 32g, Oatmeal Cookie flavor recommended below
- 1½ Tbsp Chocolate Chips, Sugar free recommended below, 21g
Instructions
- In a bowl, combine oats, vanilla protein powder, unflavored protein powder and peanut butter powder.
- Add applesauce and almond butter and mix.
- Add in chocolate chips and fold.
- Divide into 8 portions, roll into balls and flatten into cookies.

There seems to be an oversight here…the protein powder is not vegan, so maybe these cookies should not be labeled vegan. They look delicious, will try making with my pea protein powder and see if they taste ok.

Thanks for following up here. I marked the recipe as Vegan since we do have a Vegan option through substituting the protein powder for a plant-based one.
I would also recommend adding some sweetener and vanilla extract if you use a Vegan protein powder.
