Jump to RecipeI don’t know why, but I’ve been sleeping on the mint chocolate combination. I literally was not at all a mint fan until I tried the Girls Scouts Thin Mint cookies a few weeks ago. MAN those things are addictive!
And then American Dream Nut Butter came out with their Sham Rockin Cashew Butter; Minty Vanilla Milkshake flavor Cashew Butter – which has crunchy brownie, chocolate chips and fudge sauce inside – so come on! You can only imagine how hooked I was on that!
Ingredients for Mint Chocolate Chip Protein Cookie Dough
A clean and healthy recipe for mint chocolate chip protein cookie dough here, with only a bit of extra sugar from the chocolate candies.
- Vanilla Protein Powder for high protein cookie dough, and also replace the sweetener. I used Quest Nutrition whey-casein blend.
- Unflavored Protein Powder; I used the multi purpose one from Quest Nutrition.
- Mint Vanilla flavored Cashew Butter; from American Dream Nut Butter. It’s lower fat and higher protein than normal, and just amazing (code HAYLSKITCHEN gives you a discount on these).
ADNB has other amazing flavors that would work well here too. - Peppermint Extract
- Oat Flour
- A bit of Coconut Flour
- Unsweetened Almond Milk or another non dairy or regular milk
And for the add-ins
- Mini Chocolate Chips – I use sugar free ones from ChocZero here.
- Mint Chocolate Candies – The classic ones from Andes
If your protein powder is not sweet enough, you might need some more ‘sugar’, or use stevia sweetener instead.
Vegan and Dairy Free
Use a plant based protein powder and chocolate to get a Vegan mint chocolate protein cookie dough; The recipe is already dairy free otherwise since it uses almond milk and no actual milk.
Gluten Free
Since it’s made with Oat flour and Coconut Flour, this raw mint chocolate cookie dough is already gluten free!
How to make Mint Chocolate Cookie Dough with Protein Powder
Edible mint chocolate chip cookie dough using protein powder is super easy to make – you just need a bowl and a spoon and 5 minutes.
- Mix the dry ingredients in a bowl: oat flour, unflavored protein powder, vanilla protein powder, coconut flour
- Add in cashew butter, peppermint extract and milk (a little at time) and mix.
You should have a smooth but thick mixture.
- Add in the chocolate chips and chopped mint chocolate, and eat out of the bowl!
Tips for the best Edible Mint Chocolate Chip Cookie Dough
This recipe for the best edible mint chocolate chip cookie dough really is easy, but here’s some tips to get it right:
- Mix dry ingredients completely before adding milk
- Use room-temperature milk so it mixes well
- Add milk little at a time so you don’t end up with runny cookie dough my mistake.
To store No Bake Mint Protein Cookie Dough
This mint protein cookie dough is perfect for when you want a quick dessert, but you can meal prep and store for the week.
Store mint chip protein cookie dough in an airtight container in the fridge for 3-5 days or freezer for 3 months.
Thaw frozen overnight in the fridge, and add more milk if too hard.
Alternative ingredients for Healthy Mint Chip Cookie Dough Recipe:
- Oat flour: Use Almond flour instead
- Unflavored Protein Powder: More oat flour/almond flour, but also reduce the milk. Maybe 1-2 Tbsp, but add little at a time.
- Coconut flour: Try using about 3 Tbsp of Almond Flour. I haven’t tried this myself though.
- Mint flavored Cashew Butter: Regular cashew butter, almond butter, hazelnut butter or even Tahini.
- Almond Milk: Any other milk

Mint Chocolate Chip Protein Cookie Dough – No Bake, Easy!
Ingredients
- 6 Tbsp Oat Flour, 34g, see post for sub
- ¼ cup Vanilla Protein Powder, Whey-Casein, 22g
- ¼ cup Unflavored Protein Powder, Whey-Casein, 22g
- 2 Tbsp Coconut Flour, 14g
- 1 Tbsp Vanilla Mint flavor Cashew Butter, 16g, Recommendation below
- ⅛ tsp Peppermint Extract
- 6 Tbsp Almond Milk, 90ml
- 2 Andes Mint Chocolates, Chopped
- ½ Tbsp Chocolate Chips, Sugar free recommended, 7g
Instructions
- In a bowl mix dry ingredients – oat flour, vanilla protein powder, unflavored protein powder and coconut flour.
- Add in cashew butter, peppermint extract and almond milk – a little at a time – and mix.Use more or less depending on how runny you want it.
- Add chopped mint chocolate and chocolate chips and mix.
