Protein Lucky Charms Cake Ingredients:
This recipe for high protein lucky charms cake is made with whole wheat pastry flour, no sugar and just clean ingredients! No eggs needed in this lucky charms cake, so you can easily make it Vegan!
- Vanilla Protein Powder: For a Lucky Charms cake with no sugar; I used Quest Nutrition Vanilla
- Whole Wheat Pastry Flour
- Coconut Flour
- Unsweetened Applesauce
- Hot Water
- Some Lemon Juice
- A bit of Melted Butter
- Baking Soda
- Vanilla Extract
- Lucky Charms Cereal
For the Protein Frosting for this Lucky Charms Cake:
- Vanilla Protein Powder: I recommend Quest Nutrition Vanilla here since it’s whey-casein and blends well with the yogurt.

Tips for this Lucky Charms Ceral Cake with Protein Powder
This healthy Lucky Charms cereal cake with protein powder really is easy to make, but here’s some pointers to keep in mind when baking to get it right.
- Use whey-caesin and whey protein powder when specified. It works well with the ratio of ingredients in this healthy Lucky Charms cake.
Whey-caesin absorbs more liquid, and whey absorbs less, so you need to adjust the liquid accordingly.
- Use melted Butter so that it mixes well into the healthy cake batter.
- Don’t overmix the batter!
Pour the dry mix into the wet along with the milk and just gently fold them together. Don’t over-mix it or too much gluten will develop, which is what will make the cake gummy and dense.
There will be some lumps, but that’s completely okay!

Protein Lucky Charms Cake – So Great for Everyone!
Ingredients
- ¾ cup + 2 Tbsp Whole Wheat Pastry Flour, see post for subs, 105g
- ⅔ cup Vanilla Protein Powder (Whey-casein), 60g
- ¼ cup Coconut Flour, 28g
- 1½ tsp Baking Soda
- 1 cup + 2 Tbsp Hot Water, 270ml
- ¾ cup Unsweetened Applesauce, 180g
- 1 Tbsp Lemon Juice
- 2 tsp Melted Butter, 10g
- ½ tsp Vanilla Extract
- ¾ cup Lucky Charms Cereal, 37g
Protein Frosting:
- ¾ cup Non-fat Greek Yogurt, 168g
- ⅓ cup Vanilla Protein Powder, Whey-Casein, 30g
- 1 Tbsp Lucky Charms flavor Almond Butter, 14g, Recommendation below
- Stevia Sweetener to taste
- 2 Tbsp Lucky Charms Cereal, 5g
Instructions
- Preheat oven to 350°F and line a 8” cake pan or baking dish with parchment paper.
- In a bowl, whisk flour, protein powder, coconut flour and baking soda.
- In a large bowl, whisk together hot water, applesauce, lemon juice, melted butter and vanilla.
- Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the cake dense.
- Add in lucky charms cereal and mix.
- Pour batter into pan, and bake for 22-25 minutes.Don’t let the batter sit out.A tester inserted into the center should come out clean and center of cake springy to touch.
- Let cool in pan for 10 minutes then transfer to a cooling rack to cool completely.
Frosting:
- Let cool completely first.
- In a small bowl combine yogurt, protein powder, almond butter and optional stevia sweetener. Mix until uniform.Spread frosting over cake.
- Top with lucky charms cereal.
