It’s such a great option for volume eating because it literally tastes like a regular sweet bowl of oats, but you’re getting in so much more volume from the zucchini with very little calories.
It’s a high protein, low far and low calorie option, and also easily Vegan and gluten free!
A lot lot lot of options for the flavor here, but this Oreo protein zucchini oats is probably my number one coz it tastes just like an Oreo cookie. You don’t taste the zucchini at all.
Ingredients for Oreo Protein Zucchini Oats
This Oreo Protein Zucchini Oats has actually healthy and clean ingredients and an extra bump of omega 3s from the chia seeds too!
- Instant Oats
- Shredded Zucchini
- Puffed Kamut Cereal or even puffed rice, rice krispies or Cheerios
- Chocolate Protein Powder I used whey-casein Chocolate flavor from Quest Nutrition.
Whey Chocolate from Prozis or Dymatize ISO are also good options. - Black Cocoa Powder for the Oreo flavor; I use the one from Weirdo Good.
- Chia Seeds
- Pure Vanilla Extract
- Stevia Sweetener
- Water or Almond Milk
And for toppings: Mini Oreos and White Chocolate
How to prepare Zucchini for Oreo Proats?
I recommend using a food processor to shred the zucchini for this Oreo Proats recipe. Its a lot lot quicker than using a grater.
If you don’t have a food processor, a large-hole grater works great too.
How to make Oreo Protein Zucchini Oatmeal
This Oreo protein zucchini oatmeal is super easy to make; All you need is a big bowl and a microwave. As long as you have the shredded zucchini that is.
- Combine the oats, puffed Kamut cereal, chia seeds and water in a bowl.
- Microwave for 1 minute.
- Add in shredded zucchini (I use a food processor for this instead of a grater)
- Microwave for 1½ minutes.
- Add in the rest: protein powder, black cocoa powder, sweetener and vanilla.
Then go ahead and add any toppings.
Can you store Cookies & Cream Protein Zucchini Oats?
Yes! You can make meal prep these cookies and cream protein zucchini oats and keep them in the fridge for a quick breakfast on busy mornings.
Let the oats cool completely, put into airtight containers and keep in the fridge upto 3-4 days.
Microwave to reheat, and add in a little more water to thin it out when its time to eat.
Make-ahead Oreo Protein Zoats?
You can shred the the zucchini for these Oreo protein zoats ahead of time in bulk and keep it in the fridge for upto 5 days.
On the day off, just add it into the bowl after microawaving the oatmeal, and continue the process – same 1½ minutes of microwave time.

Ingredients
- ⅓ cup Instant Oats, 30g
- ⅓ cup Puffed Kamut Cereal, 5g, or Cheerios
- ½ Tbsp Chia Seeds, 6g
- ½ cup Water, 120ml
- 1 cup Shredded Zucchini, moisture intact, 164g
- ⅓ cup Chocolate Protein Powder, 30g, 1 scoop
- 1½ Tbsp Black Cocoa Powder, 9g
- 1½ tsp Vanilla Extract
- Stevia Sweetener, 1 tsp sugar worth
- More Water to thin
Toppings:
- Mini Oreos
- White Chocolate
Instructions
- Combine oats, cereal, chia seeds and water in a bowl and microwave on high for 1 minute.
- Add shredded zucchini; Microwave 1½ minutes.
- Add in chocolate protein powder, black cocoa, vanilla extract and stevia sweetener.
- Mix, adding in more water as needed.
- Top with all your favorites and serve hot!

I found this recipe last year and I make it all the time in the summer when I have fresh zucchini from my garden! I just harvested my first zucchini today so it was Oreo zucchini proats for breakfast 🙂 The zucchini adds a lot of volume, making this breakfast is so filling. The black cocoa really makes it, and I can vouch that you can’t taste the zucchini!

I have been making this or a variation of this recipe every morning. Such a great idea! It’s is high-volume and filling. I basically make it cold overnight then zap in the microwave for 1-1.5 minutes, stir in protein and eat. Quick and tasty!

I just made this. I didn’t have the kamut(but ordered some) so I used some plain special k. I used frozen zucchini from my garden. I sprinkled a few NSA white chocolate chips on top. I cooked it longer than the recipe states because I wanted to be sure the zucchini got some cooking(and it was still pretty cold from being frozen and mostly thawed. ) The first couple bites I could taste the zucchini, but thereafter I did not. It was quite tasty! The only thing is I am not too terribly fond of the texture of the zucchini in there, but maybe I’ll get used to that! Would make again! I never get veggies at breakfast otherwise!

I shred mine fresh (or make it ahead of time but keep in the fridge, not freezer), so it was probably that frozen part that was the issue here.
I’d love to know what you think if you try it with fresh zuke instead.
This is such a delicious and comforting bowl of oats you never want it to end! High protein, simple to make, filling and delicious this is my new favorite breakfast when I want something high volume. And you even get in veggies first thing in the morning:)

This. Was. Fantastic!! All the way through making this, I kept thinking “this is going to be really bad, just another recipe that looks like a great idea but really isn’t”. And to my surprise it was amazing! The taste was incredible. You can’t taste the green stuff at all!
The volume you get for the calories was incredible as well.
I had no toppings with mine and only had access to normal cocoa powder and it still tasted really good!

The zucchini really doesn’t change the flavor of the oats, and just gives you so much more volume.
Regular cocoa and no-toppings is what I use when I want to switch things up or just keep it simple. So many possibilities!
