Jump to RecipeNot gonna lie, the reason I went for this chunky monkey cake recipe is because I had this one single banana and remember having made this really nice Protein Banana Cake a while ago.
Saw some walnuts in my pantry and this had to happen.
Think of eating that chunky monkey ice cream, but in the form of a cake – all the banana and walnut and fudge (from the chocolate) coming though, but none of that sugar. You can eat this cake with no guilt at all!
Ingredients for Chunky Monkey Protein Cake:
This recipe for healthy chunky monkey protein cake is made with no sugar, very little butter, and uses protein powder and mashed banana instead. Here’s the ingredients you need for this chunky monkey ice cream cake.
- Overripe Bananas for their natural sweetness.
- Vanilla Protein Powder: For a chunky monkey cake with no sugar; I used Quest Vanilla whey-casein protein powder.
- Unflavored Protein Powder to replace some of the flour; I use Quest Nutrition’s Multi-purpose Mix Whey-Casein protein powder.
- Whole Wheat Pastry Flour
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Hot Water
- Some Lemon Juice
- A bit of Melted Butter
- Baking Soda
- Vanilla Extract

Tips for this Banana Walnut Chocolate Cake with Protein Powder
This healthy banana walnut chocolate cake with protein powder really is easy to make, but here’s some things to follow to get it right.
- Whisk all the dry ingredients together – flour, vanilla and unflavored protein powders, peanut butter powder, baking soda.
- Whisk the wet ingredients – mashed banana, hot water, lemon juice, butter and vanilla.
- Use extremely over-ripe bananas; You want them to be mostly black on the outside, so that the fruit is sweet enough that no added sugar is needed here.
- Use melted Butter so that it mixes well into the healthy cake batter.
- Add dry mix into wet and whisk lightly till lightly combined.
Then use spatula to fold untiljust combined.- Don’t overmix the batter or too much gluten will develop, which is what will make the cake gummy and dense. There will be some lumps, but that’s completely okay!
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy chunky monkey cake.
- Add most chopped walnuts and chocolate; Fold in gently.
- Pour mix into parchment lined pan. Add remaining walnuts and chocolate on top.
- Bake 22-25 minutes at 350°F.
- Don’t let the batter sit out too long; Pour immediately into baking pan and bake. This is to avoid any reactions between the ingredients.
- Don’t over-bake the cake or it will get tough; Remove when the tester/knife comes out just dry, but moist.
Can you store this Chunky Monkey Snack Cake?
This moist and fluffy chunky monkey snack cake keeps really well for a meal prep snack or dessert.
You can keep the protein powder chunky monkey cake in airtight container at room temperature for a few hours and for 4 or 5 days in the fridge.
To freeze, slice the banana walnut chocolate chip cake, wrap in plastic wrap, and place the pieces in a freezer-safe zipper bag or container. Thaw before eating.
You can even store the cake itself too.
Alternatives for Healthy Chunky Monkey Cake:
For the perfect healthy chunky monkey cake recipe with no sugar, I used protein powder to replace the sugar and I would highly suggest using the ingredients recommended.
I do have some alternatives you can try. I haven’t testing them all, so I can’t say how the recipe might turn out.
- Whole Wheat Pastry Flour: Use All purpose flour or 1:1 Gluten Free Baking Flour in the same amount by weight not cups.
- Unflavored Protein Powder: Use ⅓ cup flour, but also reduce water to 1 cup.
- Melted Butter: Melted Coconut Oil or Dairy Free Butter
- Lemon Juice: Apple Cider Vinegar or White Vinegar
- Sugar-free Chocolate – Regular Chocolate

Chunky Monkey Protein Cake – Low Fat, Sugar Free
Ingredients
- ¾ cup Whole Wheat Pastry Flour, see post for subs, 90g
- ⅔ cup Vanilla Protein Powder, Whey-casein, 60g
- ⅓ cup Unflavored Protein Powder, Whey-casein, 30g
- ¼ Peanut Butter Powder, 24g
- 1½ tsp Baking Soda
- 1 cup + 2 Tbsp Hot Water, 270ml
- ¾ cup Mashed Banana, 180g
- 2 tsp Melted Butter, 10g
- 1 Tbsp Lemon Juice
- 1 tsp Vanilla Extract
- 2 Tbsp Chopped Walnuts, 28g
- 2 Tbsp Chopped Chocolate, 28g, Sugar-free recommended
Instructions
- Preheat oven to 350°F and line a 8” cake pan with parchment paper.
- In a bowl, whisk flour, vanilla and unflavored protein powders, peanut butter powder and baking soda.
- In a large bowl, whisk together hot water, mashed banana, butter, lemon juice and vanilla.
- Add dry mix to wet, whisk lightly for 7-8s and then gently fold until just combined.DO NOT OVER-MIX or protein powder will make the cake dense.
- Add most chopped walnuts and chocolate (reserve few for top) and fold.
- Pour batter into pan, top with remaining nuts and chocolate.
- Bake for 22-25 minutes; Don’t let the batter sit out.A tester inserted into the center should come out clean and center of cake springy to touch.
- Let cool in pan for 10 minutes then transfer to a cooling rack to cool completely.

Made this tonight and it was phenomenal, didn’t have multiple protein powders so I only used a cake pop flavor whey/casein blend and it it by far the best thing Ive ever baked!!
