A real good call there; These bars are not only a delicious way to enjoy the bounties of summer but also a guilt-free pleasure that you can savor with every bite.
And super easy to make with simple ingredients!
Ingredients for High Protein Healthy Peach Crumb Bars
These high protein healthy peach crumb bars are made with whole wheat pastry flour, rolled oats and protein powder, and have no added sugar!
Base for Protein Peach Oat Bars
- Rolled Oats
- Whole Wheat Pastry Flour or other regular flour
- Vanilla Protein Powder – key for the high protein peach bars.
I used Quest Nutrition Vanilla Protein Powder.
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein recipe.
I recommend the Multi-purpose mix protein powder from Quest Nutrition. - Cold Butter
- Unsweetened Applesauce
- Almond Milk
- Cinnamon
- Egg White

How to make Healthy High Protein Peach Crumble Bars with Oats
These protein powder peach crumble bars with oats are really easy to make.
- Prep peaches: Combine sliced peaches, brown sugar, cinnamon, cornstarch, lemon juice in bowl.
Let rest 3-4 minutes so flavor soaks in.
- Combine dry ingredients for the crumble – oats, flour, vanilla and unflavored protein powder, cinnamon.
Use whey-casein protein powder since it works well with the ratio of ingredients here.
If you use a whey protein powder, you might want to reduce the amount of milk to make it less.
- Transfer mix into food processor
- Add chopped cold butter and blitz few seconds until combined.
- Move back to bowl; Add applesauce and egg whites and mix.
Mix the base layer well to form a smooth mixture, but don’t over-mix since the protein powder might make the texture tough.
It should be like a dough.
Taste dough for sweetness; Add powdered sweetener or stevia if needed
- Transfer ¾ mix into parchment-lined baking pan.
- Spead peaches over base layer.
- Add remaining crumble mix on top.
- Bake at 350°F for 25 minutes
Cover with foil tent after 18 minutes to prevent top of peach crumble bars from burning.
To store Protein Peach Bars
To store soft baked protein peach oat bars, let them cool, then place in an airtight container and keep in the fridge for up to a 1 week.
To freeze, place healthy peach oatmeal bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; Homemade peach oatmeal bars should keep for 2 or 3 months. Be sure to let the peach protein bars thaw on the counter before eating!
Alternatives for Healthy Peach Oatmeal Bars!
I made these sugar free and low fat healthy peach oatmeal bars with this particular ingredient list, but here’s some other clean options to choose from.
- Unflavored Protein Powder: Oat flour or Almond Flour. Start with less milk in this case.
- Whey-Caesin Protein Powder: Use whey, but use less milk.
- Sugar-free Monkfruit Brown Sugar: Coconut sugar or regular brown sugar works here.
- Almond Milk: Regular milk or other non dairy milk
- Applesauce: Mashed banana or pumpkin puree would be good alternatives.

Healthy Peach Crumb Bars – High Protein, Sugar Free
Ingredients
Base & Crumb:
- ⅔ cup Rolled Oats, 60g
- ⅓ cup Vanilla Protein Powder, Whey-Casein, 30g
- ¼ cup Unflavored Protein Powder, Whey-Casein, 22g, see post for subs
- ¼ cup Whole Wheat Pastry Flour, 30g
- ¼ tsp Cinnamon
- 2 Tbsp Cold Butter, 28g
- 2 Tbsp Unsweetened Applesauce, 30g
- 1 Egg White, 31ml
Peaches:
- ½ cup Sliced Peaches, 75g, Fresh or thawed from frozen
- 1 Tbsp Zero Calorie Brown Sugar, 12g
- 1 tsp Cornstarch
- ½ tsp Lemon Juice, 3ml
- ⅛ tsp Cinnamon
Instructions
- Line a 8 x 4” loaf pan with parchment paper; leave an overhang to lift out later.
- Preheat oven to 350°F.
Prep Peaches:
- In a bowl, toss together sliced peaches, brown sugar, cornstarch, cinnamon and lemon juice.Let sit 2-3 minutes.
Base & Crumb:
- In a bowl, combine rolled oats, vanilla protein powder, unflavored protein powder, flour and cinnamon.
- Place in small food processor, add chopped cold butter and blitz until just combined and crumbly.Do not over-process or butter will get warm and melt.
- Transfer to bowl.Add in applesauce and egg white and mix. Mixture will be like a dough.
Assemble & Bake:
- Transfer to ¾ mixture into prepared pan and press down.
- Arrange peaches on top.
- Spread remaining ¼ oat mixture chunks on top, and press down.
- Bake for 20-25 minutes (cover with foil after 20 minutes) until slightly hardened.Allow to cool completely, about 30 minutes.
- Lift layers out of pan, place on cutting board and using a sharp knife, slice into 8 bars.
