Ingredients for the Apple Pie Protein Popsicles:
These base for these apple pie protein ice cream pops actually need just 3 simple ingredients – protein powder, pudding mix and milk! And then theres the cinnamon sugar apples on top. Here’s what you need:
- Vanilla Protein Powder – I recommend whey-casein since it make the mix more thick and creamy (and not icy – you know what I mean)
I use the one from Quest Nutrition, and also a tiny bit of the protein powder from Flex (this is not as sweet, so if you use all Flex, you will need to add extra sweetener and bit of vanilla extract). - Vanilla Instant Pudding Mix: I used this sugar free and fat free one from Jello
- Unsweetened Almond Milk
For the Cinnamon Sugar Apples and Pie Vibe:
- Apples
- Cinnamon
- Sugar Free Brown Sugar Alternative like this one from Lakanto, or you can use regular brown sugar too.
- Graham Crackers
How to make Apple Pie Protein Powder Ice Cream
With just no ice cream maker needed, these apple pie protein powder ice cream popsicles are extremely easy to make!
- Prepare the Cinnamon Sugar Apples: In a saucepan over medium heat, combine the diced apples, sweetener, ground cinnamon and water.
Stir occasionally and cook until the apples are soft and the mixture thickens (about 10-12 minutes).
Remove from heat and let it cool. - Blend the Ingredients: In a mixing bowl, combine the vanilla protein powder, almond milk and instant pudding mix. Whisk until the mixture is smooth and creamy.
- Taste and Adjust: Give the mixture a quick taste. If you prefer a bit more sweetness, you can add a natural sweetener like a drop of stevia or monk fruit.
- Add in the Cinnamon Apples: Add the cinnamon apples and graham crackers and gently fold.
- Pour into Popsicle Molds: Carefully pour the mixture into popsicle molds, leaving a small space at the top for expansion as they freeze. Insert popsicle sticks.
- Freeze: Place the popsicle molds in the freezer and let them freeze for at least 2-3 hours, or until fully solid.
- Serve and Enjoy: Remove the popsicles and enjoy your delicious, healthy apple pie ice cream pops!
Tips for Making Apple Pie Ice Cream Pops
Use a High-Quality Protein Powder: The flavor and texture of the popsicles largely depend on your protein powder.
- A properly sweet protein powder will give you the proper sweetness (since there’s no added sugar), and a bad one might give the popsicles a chalky vibe.
- Also make sure to use whey-casein blend of powders; I haven’t tried whey protein so not so sure how well it will work.
Adjust Sweetness to Taste: Since the sweetness comes from the protein powder, you might need to add a bit of stevia, monk fruit, or even a tablespoon of maple syrup or honey (though this will slightly increase the sugar content) if your protein powder is not sweet enough.
Prevent Freezer Burn: To avoid ice crystals forming on top of the apple pie popsicles, cover the tops of your popsicle molds with plastic wrap before putting in the freezer. This can help seal in moisture and create a smoother texture.
Thaw the homemade apple pie pops a bit before eating.
Alternate ingredients for Healthy Apple Pie Ice Cream
A lot of options to make this low fat, sugar free and healthy apple pie ice cream just the way you like. Here’s some options you can try:
- Vanilla Pudding Mix: Use cheesecake flavor or even white chocolate
- Whey-casein Protein Powder: Plant-based protein powder; But also add some sweetener like stevia, and a bit of vanilla extract.
I don’t recommend whey protein. - Almond Milk: Regular milk works instead of almond milk. Any other non-dairy milk also works.
- Sugar Free Brown Sugar: Use regular brown sugar or coconut sugar.
- Graham Crackers: Any other sweet crackers work just fine.
