Jump to RecipeThis snickerdoodle blondie bar recipe was quite a difficult one for me to get. I do have quite a few other blondie recipes like my peanut butter blondies and pumpkin blondies, but for some reason I thought I should try a blondie recipe from scratch.
Looked up a traditional recipe and tried to make my substitutions by replacing butter and sugar with applesauce and extra protein. Definitely the wrong move there because that recipe was quite a fail – the mixture was way too dense and the blondies were just not right.
Went ‘back to my roots’ lol and created these high protein snickerdoodle blondie brownies by adapting one of my own recipes, and WOW. The perfect soft and chewy texture that you would want, but with no sugar or butter needed! Hope you love them!
Ingredients for Snickerdoodle Protein Blondies
Snickerdoodle protein blondies are made with easy and healthy ingredients you might already have in your pantry. If you don’t have any of these, check the substitutions section below.
- Vanilla Protein Powder that provides sweetness without any sugar.
I recommend the whey-casein protein from Quest Nutrition or plant-based protein from KOS. - Unflavored Protein Powder to replace some of the flour. I use the one from KOS.
- Almond Butter Powder, also known as Powdered Almond Butter. I use the one from PB2.
- Flour – Whole Wheat Pastry Flour is my favorite, or 1:1 Gluten Free Baking Flour
- Cinnamon – A Snickerdoodle cookie essential
- Cream of Tartar – this is what makes it a Snickerdoodle cookie blondie
- Baking Soda
The Wet Ingredients:
- Non-fat Greek Yogurt for extra protein and moist blondies
- Unsweetened Applesauce to make blondies soft with no butter
- Almond Milk or regular milk

- 1:1 Zero Calorie Brown Sugar Substitute – I use Lakanto
The Sugar-free Cinnamon Sugar Coating:
- 1:1 Zero Calorie Sugar Substitute – I use Lakanto here as well
- Ground Cinnamon
How to make Healthy Snickerdoodle Blondies with Protein Powder?
This recipe for healthy snickerdoodle blondies with protein powder is extremely easy to make. Here are the steps:
- Preheat your oven to 350°F and line a baking pan (about 8”) with parchment paper.
- Whisk all the dry ingredients in a large bowl: vanilla protein powder, unflavored protein powder, flour, almond butter powder, cinnamon, cream of tartar and baking soda.
- Whisk the wet ingredients in another bowl: Greek Yogurt, applesauce, almond milk, almond butter and brown sugar.
- Add the wet mix to the dry and gently fold to combine. Just be gentle and don’t over-mix the batter. The protein powder will make it too dense.
You should have a thick batter. - Taste batter and add stevia powder if you sweeter snickerdoodle blondie brownies.
- Make the cinnamon sugar topping: In a small bowl combine the sugar and cinnamon.
- Transfer the batter into pan.
Sprinkle on the cinnamon sugar on top. - Bake for about 28-30 minutes.
- Cool slightly, remove from pan and cut into 16 blondie bars.
How to store Chewy Snickerdoodle Blondies Recipe:
These chewy snickerdoodle blondies need to be stored well so they actually remain chewy. To store your fresh baked snickerdoodle blondie brownies, follow these instructions:
- Let Cool: Let the blondies cool completely before putting them away!
- Airtight Container: Use an airtight container so the blondies don’t pick up any odors and remain fresh.
- Room Temperature: Store them at room temperature for up to 3-4 days. This will keep them moist and chewy.
- Refrigerator: For longer storage, keep the blondies in the refrigerator for up to a week. Let them come to room temperature or warm them slightly before serving for the best texture.
- Freezer: To store for up to 3 months, place them in a freezer-safe bag or container. Thaw in the fridge or at room temperature when ready to enjoy.
Subsitutes Healthy Snickerdoodle Blondie Bars Recipe:
I haven’t tried all of these alternatives, but you can make healthy snickerdoodle blondie bars your own by using some of these substitute suggestions:
Dry Ingredients:
- Whey-Casein Vanilla Protein Powder:
- Substitute with plant-based protein powder for a dairy-free alternative.
- A snickerdoodle or cinnamon flavor protein powder would be great too.
- Flour:
- Use whole wheat pastry flour, or a gluten-free all-purpose blend to maintain texture and consistency.
Replace in the same amount by weight not cups. - Oat flour might also be a good gluten-free option.

- Substitute with peanut butter powder or almond flour.
- Coconut flour can be used, but use half the amount as it absorbs more moisture.
- Unflavored Protein Powder:
- Substitute with more flour, but reduce milk to ¼ cup.
- Cream of Tartar:
- Replace with ¾ tsp baking powder, but the blondies might not be as chewy.
- Baking Soda:
- Substitute with ¾ tsp baking powder, though the texture may change slightly.
Wet Ingredients:
- Non-fat Greek Yogurt:
- Substitute with low-fat greek yogurt or plant-based coconut yogurt for a dairy-free version.
- Unsweetened Applesauce:
- Replace with mashed banana or pureed pumpkin, but it will give a slightly different taste.
- Unsweetened Almond Milk:
- Use any plant-based milk like oat milk, soy milk.
- Regular dairy milk if preferred also works.
- Almond Butter
- Any nut or seed nutter – peanut butter, cashew butter, tahini, anything like it.
- Zero Calorie Monkfruit Brown Sugar:
- Substitute with regular sugar or coconut sugar.
Cinnamon-Sugar Topping:
- Zero Calorie Monkfruit Sugar:
- Use granulated erythritol or normal sugar.

Ingredients
Dry Ingredients:

- ⅓ cup Almond Butter Powder, or PB Powder, 32g
- ¼ cup Unflavored Protein Powder, Plant-based or Whey-casein, 22g
- 1 tsp Ground Cinnamon
- ½ tsp Cream of Tartar
- ¼ tsp Baking Soda
Wet Ingredients:
- ¾ cup Non-fat Greek Yogurt, 170g
- ½ cup Unsweetened Applesauce, 120g
- ⅓ cup Unsweetened Almond Milk, 80ml
- 2 Tbsp Almond Butter, 32g
- 2 Tbsp Zero Calorie Monkfruit Brown Sugar, 24g
Cinnamon-Sugar Toppig:
- 1 Tbsp Zero Calorie Monkfruit Sugar, 12g
- ½ tsp Ground Cinnamon
Instructions
- Preheat oven to 350°F and line an 8” x 8” baking dish with parchment paper.
- In a large bowl, whisk dry ingredients: vanilla protein powder, flour, almond/peanut butter powder, unflavored protein powder, cinnamon, cream of tartar and baking soda.

- Add wet mix to dry, and gently fold until combined.Don’t overmix or the blondies will turn out too dense.
- Transfer batter into pan and spread evenly.
- Cinnamon-sugar topping:Mix sugar and cinnamon in a small bowl.Sprinkle evenly on top of blondie batter.
- Bake for 28-30 minutes or until the top is set.Toothpick inserted into the center should come out mostly dry, with only a few crumbs.
- Remove from oven and let cool completely.Slice into 16 pieces.
