I know lemon blueberry is a real good combination for Spring and had been wanting to try something with that flavor profile for a couple of weeks now. And then it just so happened that Sprouts released a new Lemon Blueberry flavor Vegan Protein Powder, so…
NGL I was a little hesitant though since it was a Vegan protein powder, but damn was it good!? It was a very good surprise!
So here we are with these lemon blueberry protein bars that are VERY conveniently Vegan (just sub out the greek yogurt for coconut yogurt).

Ingredients
These lemon blueberry protein bars are made with a few healthy ingredients, and have no added sugars or butter either. Simple ingredients you can easily access.
- Lemon Blueberry Protein Powder needed for protein bars, haha.
I use this protein powder from Sprouts to give it the perfect flavor, but you can always use vanilla as well. I recommend KOS or Truvani in that case. - Flour – I use 1:1 Gluten Free Baking Flour, but Whole Wheat Pastry Flour or regular All Purpose flour works here too.
- 1:1 Zero Calorie Brown Sugar Substitute – I use Lakanto to keep this recipe sugar free.
- Lemon Zest – This really enhances the citrus flavor and freshness
- Baking Powder
- Nonfat Plain Greek Yogurt or Coconut Yogurt for some extra protein
- Unsweetened Applesauce to provide moisture to the bars since protein powder can make it dry otherwise
- Unsweetened Almond Milk
- Cashew Butter

Alternative Ingredients & Customizations
You can easily make these lemon blueberry energy bars you own with some of these alternatives.
I haven’t testing them all so I can’t say how your recipe might turn out. I’d love to know if you do though!
- Protein Powder: Swap lemon blueberry protein powder for vanilla.
Be sure to use 2 tablespoon Lemon Juice with the wet ingredients, and reduce milk to 1 Tbsp. - Flour Options: All purpose flour, 1:1 Gluten Free Baking Flour or Whole Wheat Pastry Flour will work; Use the same amount by weight – 30g.
- Zero Calorie Sweetener: Regular granulated sugar or coconut sugar can be used, but this won’t be sugar free, and also higher in calories.
- Milk Options: Use any plant-based milk like oat, coconut, or cashew milk instead of almond milk.
Regular milk also works here - Cashew Butter: Almond Butter, Peanut Butter, Sunflower Seed Butter, Hazelnut Butter or even Tahini work well.
Dietary Restrictions
- To make plant-based lemon blueberry protein bars dairy free: Use coconut yogurt.
- For a Gluten Free version of homemade protein bars with blueberries, use 1:1 gluten free baking flour.
Flavor Options
- Add on a cream cheese frosting like this recipe I have for a fun twist.
- Swap out the blueberries for raspberries or even blackberries if you’d like!
How to Make Vegan Lemon Blueberry Protein Bars
Step 1: Preheat the Oven & Prep the Baking Pan
Preheat your oven to 350°F (175°C) and grease and line an 8″ x 4″ loaf pan with parchment paper.
Step 2: Mix the Dry Ingredients
In a large mixing bowl, whisk together the dry ingredients:
– Plant-based protein powder
– Flour
– Zero-calorie sugar replacement
– Lemon zest
– Baking Powder
Step 3: Mix the Wet Ingredients
Add in the wet ingredints:
– Greek yogurt (or dairy-free yogurt alternative)
– Unsweetened applesauce
– Almond milk
– Cashew or almond butter
If using vanilla protein powder, stir in lemon juice for the extra citrus flavor.
Step 4: Combine Wet & Dry Ingredients
Whisk gently until just combined. Be careful not to overmix to keep the bars soft and tender.
(Optional) Step 5: Prep the Blueberries
Place the blueberries in a bowl and toss them with a little extra flour—this prevents them from sinking to the bottom of the bars during baking.
Step 6: Fold in the Blueberries
Gently fold the blueberries into the batter, saving a few for topping.
Don’t mix too hard or you’ll crush the blueberries!
Step 7: Bake the Protein Bars
Spread the batter evenly into the prepared baking pan and top with extra blueberries.
Bake for 35-40 minutes.
The top should be set and a toothpick inserted into the center should come out clean.
Step 8: Cool & Slice
Let the bars cool in the pan for 15 minutes, then transfer them to a cooling rack.
Once completely cooled, slice into 8 bars.
Tips for perfect Lemon Blueberry Energy Bars
This lemon blueberry energy bars is a really easy recipe to make even though they have protein powder, but here’s some pointers to get it right.
- Grease AND Line(with parchment paper) the pan; It just adds a little extra layer of surety so you know the bars won’t stick to the pan.
- Whisk all dry ingredients well so everything mixes evenly.
- Use smooth cashew butter so it mixes well with the rest of the ingredients and does not clump.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have healthy lemon blueberry bar recipe with no added sugar.
- Toss blueberries in extra flour so they don’t stick to the bottom of the muffins when baking.

I recommend using a good nonstick loaf pan for this recipe!
How to store Lemon Blueberry Bars for Weightloss
This lemon blueberry bars make a great meal prep for post workout or weightloss!
- Freezer: Wrap each bar individually or stack in a freezer-safe container and freeze for up to 2 months. Thaw frozen lemon blueberry snack bars in the fridge overnight before eating.
- Room Temperature: healthy lemon blueberry bars keep at room temperature in an airtight container for 1-2 days.
- Refrigerator: Store vegan lemon blueberry protein bars in an airtight container for up to 7 days.

Lemon Blueberry Protein Bars – Real Amazing Vegan Recipe!
Ingredients
- ½ cup Lemon Blueberry (or Vanilla) Vegan Protein Powder, 60g
- ¼ cup Flour, 30g
- 1 tablespoon Zero Calorie Granulated Sweetener, 12g
- ½ teaspoon Lemon Zest
- 1½ teaspoon Baking Powder
- ⅓ cup Nonfat Greek Yogurt, 75g
- ⅓ cup Unsweetened Applesauce, 80g
- 2 tablespoon Almond Milk, 30ml
- 1 tablespoon Cashew or Almond Butter, 16g
- OPTIONAL: 2 tablespoon Lemon Juice (if using Vanilla Protein Powder), 30ml
- ½ cup Blueberries, 75g
Instructions
- Preheat oven to 350°F and grease or line an 8” x 4” loaf pan with parchment paper.
- In a large bowl, whisk protein powder, flour, sweetener, lemon zest and baking powder.
- Add in yogurt, applesauce, almond milk and cashew/almond butter.
- If using vanilla protein powder, also add in the lemon juice, and reduce milk to 1 Tbsp.
- Gently whisk until just combined.
- Add blueberries to batter and fold to combine.
- Transfer batter to baking pan and spread evenly.
- Bake for about 34-40 minutes.Top should be set and toothpick inserted into the center should come out clean.
- Let cool in pan for 15 minutes, then transfer to cooling rack to cool completely.
- Slice into 8 bars.
