Super easy Baked Protein Pancakes made with just 4 ingredients! These healthy sheet pan pancakes use kodiak cakes pancake mix and protein powder for a high protein and sugar free recipe.

Literally just throw together the ingredients in a bowl, whisk and bake.
Of course you can add all the fancy mix ins and toppings and such, but this base baked protein pancakes recipe really is very basic!
Ingredients for Baked Protein Pancakes
These baked protein pancakes are made with just 4 simple and healthy ingredients you probably have in your pantry, making this a great breakfast meal prep.
- Protein Pancake Mix – I used the Kodiak Cakes Buttermilk Protein Pancake Mix for these sheet pan pancakes.
You can also bake this with any other just add water pancake mix.
- Vanilla Protein Powder needed for a high protein sheet pan pancake recipe and also replaces the ‘sugar’.
I used whey-caesin Vanilla protein powder from Quest Nutrition since it bakes well. - Unsweetened Almond Milk
- Egg Whites for extra protein!
Tips for Sheet Pan Protein Pancakes
These sheet pan protein pancakes are tasty and actually very easy to make!
- Don’t over-mix the batter!
Make sure you whisk the batter until just combined.
If you over-mix it, the protein powder will make the pancakes tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy sheet pan pancakes.
- Don’t over-bake the kodiak cakes baked pancakes or they might get tough; Remove when the tester/knife comes out just try.
How to store Baked Kodiak Sheet Pan Pancakes:
This baked kodiak cakes sheet pan pancake recipe keeps well for a meal prep breakfast or post workout snack and is freezer friendly too!
Store protein powder baked pancakes at room temperature in an airtight container for 1-2 days or in the fridge for a week.
To freeze healthy pancake mix sheet pan pancakes, individually wrap pieces in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.
Alternatives for Healthy Sheet Pan Pancakes with Mix
For the perfect healthy sheet pan panackes, I used kodiak cakes pancake mix and protein powder and I would highly suggest using the ingredients recommended.
I do have some alternatives you can try. I haven’t testing them all, so I can’t say how the recipe might turn out.
- Protein Pancake Mix: Any just-add water pancake mix like krusteax or bisquik.
You can also try a base pancake recipe from dry ingredients (with the flour and baking powder and such), and then add the rest of the ingredients in this recipe. - Almond Milk: Any other milk

Baked Protein Pancakes
Ingredients
- 1½ cup Protein Pancake Mix, or any just-add-water pancake mix, weighed ~160g
- ⅓ cup Whey-Caesin Vanilla Protein Powder, 30g
- ½ cup Unsweetened Almond Milk, 120ml
- 6 Egg Whites, 186g
Optional:
- Pecans, Almonds, Other nuts
- Chocolate Chips
Instructions
- Preheat oven to 350°F and grease an 6” x 8” pan or baking dish.
- In a bowl, mix pancake mix, protein powder, milk and egg whites.
- Top with any toppings.
- Bake for 20-22 minutes; Toothpick inserted into the center should come out dry.
- Remove from oven and let cool completely.
