It’s so good, I just have it plain. And it goes so so well with the pistachio in this banana bread, I wanted to have even that filling plain!
Ingredients for Healthy Sugar free Baklava Banana Bread
This healthy high protein baklava banana bread is made with simple ingredients like whole wheat pastry flour, protein powder and non-fat greek yogurt, and has no oil and no sugar either!
- Mashed Banana from completely ripe and browned bananas
- Vanilla Protein Powder; This is the source of protein and sweetness in the protein powder banana bread since there’s no added sugar in this recipe. I used whey-casein Quest Vanilla.
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein banana bread. I use Quest Nutrition’s Multi-purpose Mix Whey-Casein protein powder.
- Whole wheat pastry flour which gives it the light texture, bit still keeps it healthy
- Unsweetened Applesauce
- Non-fat Greek Yogurt a high protein low fat banana bread
- Almond Milk or regular milk
- Eggs
- Cinnamon and Cardamom
- Baking Powder
For the healthy baklava banana bread filling:
- Chopped Pistachios
- Chopped Almonds
- Sugar Free Honey; I use this sugar-free keto honey from ChocZero. It really does taste like actual honey!
- Cinnamon and Cardamom
Tips to make Baklava Banana Bread with Protein Powder:
Making this a healthy protein powder baklava banana bread is really easy with no oil and no butter, but here’s some pointers to get it perfectly right!
- Use perfectly ripe bananas; These are easier to mash, and also add a lot of sweetness (so you don’t have to add as much protein powder and maple syrup to sweeten) and you get a healthy banana bread without sugar
- Use room temperature eggs, yogurt and milk;
This is so the wet ingredients and dry ingredients can mix well.
- Blend the wet mix using a hand mixer to prevent any chunks of banana in the batter.
- Don’t overmix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder – will make it tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar baklava banana loaf.
- Chop the nuts for the filling so they hold together well with the maple syrup.
- Grease the baking pan before putting in the mixture. You want to make sure the baked baklava oats comes off easily.
- Cover loaf with foil tent after 40 mins of baking to prevent the top from browning and burning.
Can you store High Protein Baklava Banana Bread
This moist and healthy protein baklava banana bread keeps really well and is great for a meal prep snack, breakfast or post-workout treat, because it’s freezer friendly too.
Store protein powder amish banana bread at room temperature for about 3 days or in the fridge for up-to 1 week in an airtight container.
To freeze the low calorie healthy pistachio banana bread, cut it into slices, wrap each slice in plastic wrap, and place them in a freezer-safe zipper bag, for up to 3 months.
You can also store the whole loaf itself – be sure to let it thaw before you slice.
Alternatives for Healthy Pistachio Banana Bread
For the perfect low fat but moist healthy pistachio banana bread, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try. I haven’t testing them all, so I can’t say how your loaf might turn out.
- Whole Wheat Pastry Flour: All purpose flour, 1:1 gluten free baking flour; The same amount by weight
- Unflavored Protein Powder: More flour, but also reduce the milk to about ¼ cup.
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- Sugar-free Honey: Regular honey, but the recipe will not be sugar-free anymore.

Baklava Banana Bread – Protein-Packed, Oil Free!
Ingredients
- 200 g Mashed Banana, from completely ripe bananas
- ½ cup Unsweetened Applesauce, 120g, or more mashed banana
- ½ cup Non-fat Greek Yogurt, 112g
- ⅓ cup Almond Milk, 80ml
- 2 Eggs, Room Temperature
- 1 cup + 1½ Tbsp Whole Wheat Pastry Flour, 130g
- ½ cup Unflavored Protein Powder, Whey-casein, 45g
- ½ cup Vanilla Protein Powder, Whey-casein, 45g
- 1 Tbsp Baking Powder
- 2 tsp Cinnamon
- 1½ tsp Cardamom
Filling:
- ½ cup Pistachios without shell, Chopped, 56g
- ¼ cup Chopped Almonds, 28g
- 1 Tbsp Honey, 15g, Sugar-free recommendation below
- ¼ tsp Cinnamon
- ⅛ tsp Cardamom
Instructions
- Preheat oven to 350°F and line an 8½” x 4½” loaf pan with parchment paper.
- In a large bowl, whisk together mashed banana, applesauce, Greek yogurt, almond milk and eggs.
- In another bowl, whisk whole wheat flour, unflavored protein powder, vanilla protein powder, baking powder, cinnamon and cardamom.
- Add dry mix to wet, and gently fold until combined.DO NOT OVER-MIX or protein powder and gluten from wheat flour will make the bread dense.
- Filling: In a small bowl, mix chopped pistachio, almonds, honey, cinnamon and cardamom.
- Pour ⅔ batter into prepared loaf pan, spread ⅔ filling in the middle, then pour remaining ⅓ batter.Top with remaining nut filling mixture.
- Bake for 55-60 minutes, covering with a foil tent after 40 minutes.A toothpick inserted into center should come out dry.
- Cool for 15 minutes, then lift out of pan using the lining. Transfer to a wire rack to cool completely, about 30 minutes and cut into slices.
