These pancakes are bananas! Banana Protein Blender Pancakes are a sweet way to start the day with all the nutrients and no guilt. A low-fat, naturally-sweetened, gluten-free recipe that’s also packed with protein and potassium.

Whenever I think of pancakes and pancake batter, I think of “batter will be lumpy” and “do not over-mix”, because that’s what’s you need to keep in mind to make sure pancakes actually rise.
And of course, using a blender ignores both those factors.
Somehow though, maybe it’s the eggs, these pancakes actually work!
The pancakes are super light, both in terms of consistency and calories, and I would say all those 8 pancakes would work for a single serving.
With low fats and high protein, they’re also quite a sweet way to treat yourself after a heavy workout.
Banana Protein Blender Pancakes (Gluten Free & Paleo)
Ingredients
- 1 large Ripe Banana, 135g
- 2 large Eggs
- 1½ scoops Vanilla Protein Powder, 45g, about ½ cup
- ½ tsp Vanilla Extract
- ¼ tsp Baking Powder
- ¼ tsp Cinnamon
- Stevia Sweetener, 1 tsp sugar worth (Use your brand's Conversion Chart)
- Mini Chocolate chips, Optional
- Cooking spray for cooking
Instructions
- In a medium bowl, mash the banana with a fork, then add eggs and vanilla and whisk using a blender or hand blender.
- Add the protein powder, sweetener, and baking powder, and blend again.
- Heat a nonstick skillet on low, lightly grease, and spoon out about 3 Tbsp mixture on it.
- Top with chocolate chips if desired and cook for about 1-2 minutes until edges appear dry, and gently flip over. Cook other side for another minute.
- Stack and serve with some extra chocolate chips or pecans!

We tried this one morning with the family. Prep was super easy and they came out really nice and fluffy! They were a big hit and next time we’re going to try them with blueberries.
