It’s got strips of protein banana cake dipped coffee (instead of lady fingers) and a layer of protein banana pudding instead of the classic mascarpone.
The coffee and banana really came went together so well! And plus, this is actually a healthy recipe with no extra sugar added. Quite low fat and easily gluten-free too!
Ingredients for Banana Pudding Protein Tiramisu
This banana pudding protein tiramisu is made with a protein banana cake, protein cream cheese & Greek yogurt cream, and protein banana pudding. A real healthy dessert!
- Overripe Bananas for their natural sweetness.
- Vanilla Protein Powder: For a high protein banana cake; I used Quest Vanilla
- Unflavored Protein Powder to replace some of the flour in the original recipe. I use Quest Nutrition’s Multi-purpose Mix Whey-Casein protein powder.
- Whole Wheat Pastry Flour
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (discount code HAYLSKITCHEN).
Or use the one from PbFit. - Hot Water
- Some Lemon Juice
- A bit of Melted Butter
- Baking Soda
And for the Protein Cream Layer
This recipe makes a Banana Tiramisu without mascarpone, and uses cream cheese and yogurt instead.
- Reduced Fat Cream Cheese
- Non-fat Greek Yogurt
- Vanilla Protein Powder; This is the source of sweetness; No added sugar in this recipe. Quest again here.
- A bit of Unsweetened Almond Milk
For the Protein Banana Pudding layer:
- Non-fat Greek Yogurt
- Vanilla Protein Powder; I used Quest Vanilla since it’s whey-casein and blends well with the yogurt.
- Banana flavored Instant Pudding Mix: This sugar free and fat free one from Jello
- A bit of Unsweetened Almond Milk
And for aesthtic and assembling:
- Strong Coffee
- Unsweetened Cocoa Powder
Tips to make Protein Powder Banana Tiramisu
This protein powder banana tiramisu recipe is super easy to make; Just bake the cake, cut it up and assemble the layers. Here’s some pointers to get it right.
For the Protein Banana Cake base in this Tiramisu without Lady fingers
- Use extremely over-ripe bananas; Mostly black on the outside, so that the fruit is sweet enough that no added sugar is needed.
- Use melted Butter so that it mixes well into the healthy banana cake batter.
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder will make the cake tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have a sugar free and healthy banana cake tiramisu recipe.
- Don’t let the batter sit out too long; Pour immediately into baking pan and bake.
This is to avoid any reactions between the ingredients.
- Don’t over-bake the cake or it will get tough; Remove when the tester/knife comes out just dry, but moist.
- Let cake cool completely before cutting or the tiramisu won’t hold.
For the Cream:
- Use softened cream cheese so everything mixes well.
- Beat the cream cheese well
You really want to do this step so the cream turns out light and fluffy.

To freeze healthy banana pudding tiramisu, slice and wrap each piece in plastic wrap, and then place in freezer-safe zipper bags.
Thaw in fridge before eating.

For the perfect healthy banana pudding tiramisu recipe, I used protein powder for sweetener, cream cheese and Greek yogurt – no sugar or mascarpone – and I would highly suggest using the ingredients recommended.
I do have some alternatives you can try. I haven’t testing them all, so I can’t say how the recipe might turn out.
- Whole Wheat Pastry Flour: Use All purpose flour or 1:1 Gluten Free Baking Flour in the same amount by weight not cups.
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Melted Butter: Melted Coconut Oil or Dairy Free Butter
- Lemon Juice: Apple Cider Vinegar or White Vinegar
- Greek Yogurt: Coconut Yogurt
- Reduced Fat Cream Cheese: Regular cream cheese
- Sugar-free Jello: Regular Jello

Ingredients
Protein Banana Cake:
- ¼ cup + 2 Tbsp Whole Wheat Pastry Flour, see post for subs, 45g
- ⅓ cup Vanilla Protein Powder, whey-casein, 30g
- ½ scoop Unflavored Protein Powder, whey-casein, 30g
- 2 Tbsp Peanut Butter Powder, 12g
- ¾ tsp Baking Soda
- ½ cup + 1 Tbsp Hot Water, 135ml
- ¼ cup + 2 Tbsp Mashed Banana, 90g
- 1 tsp Melted Butter, 5g
- ½ Tbsp Lemon Juice
Cream:
- 3½ oz Reduced Fat Cream Cheese, 85g
- ⅔ cup Non-fat Greek Yogurt, 150g
- ¼ cups Vanilla Protein Powder, whey-casein, 22g
- ¼ cup Unsweetened Almond Milk, 60ml
Banana Pudding Layer:
- 1 cup Non-fat Greek Yogurt, 225g
- ½ cup Vanilla Protein Powder, whey-casein, 45g
- 2 Tbsp Banana Cream Flavor Instant Pudding Mix, 15g, Sugar free
- ⅓ cup Unsweetened Almond Milk, 80ml
Assembling:
- 1 cups Coffee, Room temperature
- 1 Tbsp Unsweetened Cocoa Powder
Instructions
- Preheat oven to 350°F and line an 8×8” baking pan with parchment paper.
- In a bowl, whisk flour, vanilla and unflavored protein powders, peanut butter powder and baking soda.
- In a large bowl, whisk together hot water, mashed banana, butter and lemon juice.
- Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the cake dense.
- Pour batter into pan, and bake for 22-25 minutes.Don’t let the batter sit out.A tester inserted into the center should come out clean and center of cake springy to touch.
- Let cool in pan for 10 minutes then transfer to a cooling rack to cool completely.
- Cut into half along one edge. You should have 2 thin 4”x8” rectangles. Cut each into 1” strips (7 cuts across long end).
Cream:
- In a large bowl, beat cream cheese using an electric hand mixer or paddle attachment of stand mixer until smooth; About 1 minute.
- Add Greek yogurt and milk and beat again until combined.
- Beat in vanilla protein powder, scraping down the sides if needed.
Banana Pudding:
- In a bowl, mix Greek yogurt, protein powder, banana flavor instant pudding, and milk until smooth.Add milk a little at a time until pudding consistency is reached.
Assemble:
- Dip each cake strip in coffee, then place in 9”x6” glass dish.Repeat and cover entire base (use half strips).
- Spread cream mixture on top (smoothen with back of spatula or spoon)
- Arrange another layer of coffee-dipped cake strips.Spread banana pudding layer on top.
- Cover and refrigerate 6 hours to overnight.Dust with cocoa power (use sieve).
