Actually the best healthy Protein Zucchini Bread with unflavored and vanilla protein powder, no sugar, only a tablespoon of oil, and still so moist! This protein packed zucchini bread is low calorie, low sugar, low fat and just all round amazing for breakfast, dessert or a post workout!
Jump to RecipeYou guys I really cannot with how good and soft and moist and just perfect this protein zucchini loaf is.
I had put down this protein zucchini recipe in my phone a while ago but never made (not sure why), and now that everyone seems to be baking desserts with zucchini, I went for it.
Major regrets on those wasted months.
This zucchini bread is just such a beauty! To be honest, it didn’t even need those chunks of chocolate in there. I’d much rather have the plain sweet loaf itself.
Ingredients for Low Calorie High Protein Zucchini Bread
This high protein zucchini bread is made with healthy ingredients and packed with protein from protein powder and non-fat greek yogurt, has no sugar, and only a bit of oil; A great low calorie and low sugar zucchini bread.
- Fresh Zucchini
- 1:1 Gluten Free (All Purpose) Baking Flour – or a regular all purpose flour
- Unflavored Whey-Caesin Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low calorie zucchini bread. I use Quest Nutrition.
- Vanilla Whey-Caesin Protein Powder; This is the source of protein and sweetness in the low sugar zucchini bread since there’s no actual sugar in this recipe. Quest again here.
- Non-fat Greek Yogurt to add in moisture and have a no oil recipe
- Unsweetened Almond Milk
- Applesauce
- Eggs
- Coconut Oil
- Ground Cinnamon
- A bit of Ground Nutmeg (Optional)
- Baking Powder
- Baking Soda
Optionally, for a healthy and sugar free chocolate chip zucchini bread:
- Sugar free Chocolate Chips: I use the ones from Lakanto again here (the same discount code HAYLSKITCHEN here too)
Protein Powder Note:
I haven’t tried Whey protein, pea protein or other plant based ones, so I can’t say how those would work here.
Be sure to use a protein powder sweetened with stevia or monk fruit if you want a proper low sugar and actually sugar free zucchini bread.
Can you store High Protein Zucchini Loaf
This healthy protein zucchini bread recipe keeps really well and is great for a meal prep recipe.
Store low calorie zucchini bread at room temperature for about 3 days in an airtight container.
To store in the fridge, place protein zucchini loaf in an airtight container and keep up to 1 week.
To freeze the healthy zucchini bread, cut it into slices, wrap each slice in plastic wrap, and place them in a freezer-safe zipper bag; Freeze up to 3 months.
You can also store the whole loaf itself – be sure to let it thaw before you slice.
Tips for the perfect Protein Powder Zucchini Bread
This protein powder zucchini bread is really easy to make, but baking with protein powder can get tricky; Here’s some tips for the perfect zucchini bread!
- Use melted coconut oil
You want to be able to whisk it completely into the wet ingredients; Microwave to melt if needed.
- Use room temperature Yogurt, Milk and Eggs
Microwave these too for about 5 seconds if you took them out of the fridge, otherwise they will make the coconut oil harden.
- Whisk wet ingredients well to prevent any chunks of yogurt in the batter.
- Don’t over-mix the wet and dry mixture or the loaf will be too dense and gummy because protein powder can make a batter tough.
- Cover protein packed zucchini bread with foil tent after 40 mins of baking to prevent the top from browning and burning.

[…] The Best Healthy Protein Zucchini Bread […]
Haylee! This bread was ridiculously good! I used your exact recipe and didn’t change a thing except instead of chocolate chunks, I added fresh blueberries and I also used low sugar blueberry Greek yogurt instead of plain. I will definitely be making this recipe again! Thanks so much!
OMG I’m so happy you liked this bread Mollie! I absolutely love that idea of using blueberries instead of chocolate chips. And the blueb yogurt to amp up that flavor. Something I actually want to try myself now!
My loaf deflated after it cooled but I still enjoy the taste. I will do it again.
Oh no! I’m sorry that the loaf sunk; This could be because of a difference in elevation, or different protein powders?
That said. I’m super happy you liked the taste and plan to make the Zucchini Bread again!
Okay this bread is goals! I used walnuts (my favorite nuts btw) and every time I get one in one of the bites I get excited haha. And I can’t even taste the zucchini so double goals lol
Walnuts really would go so well in this protein zucchini bread; You made a good call there for that crunch! It’s now on my list too.
Your protein breads always have the most beautiful texture!! That is not easy to do!
Thank you so much Kaci! Took a lot of failed attempts when I started out, but now that gut instinct has developed and helped a lot. Hope you give this a try.
