When I want bread pudding, I want it now; Not to wait for that hour of baking! Here’s my go-to recipe for a Lite Microwave Bread Pudding that’s ready in less than 10 minutes. Wouldn’t you like an instant, warm, soft and rich bowl of this goodness too?

Bread puddings are a classic family dessert and great way to use up leftover bread. The origin includes chopping up the bread, topping it with melted butter followed by an egg-milk-sugar-spice mix, and then baking it in the oven for about 45 minutes to an hour.
Now I wouldn’t mind following a recipe along those lines, but other than the crappy ingredients, there’s 2 more big issues with the dessert: big quantity and big cooking time.
This lite version solves them all: it uses no butter, egg whites and stevia to cut down the calories, is a single-serve recipe, and barely takes any time coz it’s made in the microwave.
All of that, with the same – if not more – deliciousness!
Better-for-You Light Microwave Bread Pudding
Ingredients
- 2 Slices Whole Wheat Bread
- Optional mix-ins, Raisins, Chocolate Chips, Nuts
- 1 Egg White, Large
- 6 tablespoon Almond Milk, or other
- ½ teaspoon Vanilla Extract
- Stevia Sweetener, 2 teaspoon sugar worth (Use your brand’s Conversion Chart)
- ¼ teaspoon Cinnamon Powder
- ⅛ teaspoon Nutmeg, Ground
- ⅛ teaspoon Cloves, Ground
Instructions
- Chop the bread into ½ inch squared pieces and divide between 2 ramekins along with mix-ins, if using.
- In small bowl, whisk egg whites until foamy, then add milk, vanilla, sweetener and spices.
- Pour egg mixture over bread.
- Let it stand for about 5 minutes until the milk is well absorbed.
- Microwave on high for about 1½ minute or until a toothpick inserted into center comes out comes out dry.
- Serve warm with your choice of topping!

- Top with ¼ cup Greek Yogurt + ¼ teaspoon Vanilla + ½ packet Stevia Sweetener
