Ingredients For Biscoff Protein Donuts
These Biscoff protein donuts are made with biscoff cookies and simple ingredients – perfect for a quick afternoon baking session.
- Whole Wheat Pastry Flour – or a regular all purpose flour
- Whey-Casein Vanilla Protein Powder – This adds in sweetness for a recipe with no added sugar. I used Quest Nutrition Vanilla Protein Powder.
- Plant-based Vanilla Protein Powder – I used plant-based Kos.
- Unflavored Protein Powder I use the Multipurpose mix from Quest Nutrition.
- Biscoff Cookies
- Baking Powder
- Unsweetened Applesauce – Replaces the fat that’s in most donut recipes.
- Unsweetened Almond Milk
- Melted Butter
- Egg
- Non-fat Greek Yogurt

How to Make Speculoos Protein Donuts
These speculoos protein donuts are really super easy to make – just mix everything in a bowl, put into donut pan and bake. And it’s the same with the glaze on top too.
- Place biscoff cookies in food processor and process until crumbled.
- Whisk dry ingredients in a bowl – flour, protein powders, baking powder, baking soda.
- Whisk wet ingredients in a big bowl – applesauce, milk, yogurt, egg, melted butter.
- Add dry mix to wet and whisk until mostly combined.
- Add Biscoff crumbs and fold with big spatula till just combined.
- Grease 12-cavity donut pan and preheat oven to 350.
Divide batter among donut-pan cavities (Use piping bag for even donuts). - Bake 12 minutes.
Tester inserted should come out dry.
Let cool!
To glaze cookie butter protein doughnuts
- Combine biscoff cookies, protein powder and milk in a food processor till smooth.
- Spread on top of donuts.
Sprinkle on more crushed biscoff.

- Use whey-casein protein powder as specified; It absorbs more liquid. If you use whey, use less liquid.
- Make sure your biscoff donut mixture has enough moisture in it.
Protein powder is quite absorbent and if the wet ingredients are too little, the donuts will be dry! The mix should be like a slightly runny brownie batter.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar biscoff donut.
- Use room temperature egg and yogurt so they mix well with the dry ingredients.
- Be sure to grease the donut pan so the baked s’mores donuts come off easily.
- Let the donuts cool completely before assembling.

Store speculoos doughnuts at room temperature, for 1-2 days in an airtight container, or 5 days in the fridge.

Ingredients
- ½ cup Whole Wheat Pastry Flour, or regular, 60g
- ½ cup Whey-Casein Vanilla Protein Powder, 45g
- ½ scoop Plant-Based Vanilla Protein Powder, 15g
- ¼ cup Unflavored Protein Powder, 22g
- 1 tsp Baking Powder
- ¾ tsp Baking Soda
- ½ cup Unsweetened Almond Milk, 120ml
- ½ cup Unsweetened Applesauce, 120g
- 2 Tbsp Non-fat Greek Yogurt, 28g
- 1 Tbsp Melted Butter, 14g
- 1 Egg
- 6 Biscoff Cookies, 48g
Topping:
- 4 Biscoff Cookies, 32g
- ¼ cup Vanilla Protein Powder, Whey-Casein, 22g
- ¼ cup Almond Milk, 60ml
- 1 Tbsp Cookie-flavored Almond Butter, 16g, Recommendation Below
Instructions
- Preheat oven to 350°F and spray a 12-hole donut pan with cooking spray to grease.
- Place biscoff cookies in food processor and blitz until crumbled.
- In a big bowl whisk wet ingredients – applesauce, milk, yogurt, egg, melted butter
- In another bowl, whisk dry ingredients – flour, vanilla and unflavored protein powder, baking soda and baking powder.
- Add dry mix to wet and whisk until just combined.
- Add in crushed biscoff cookies and fold with spatula.Don’t over-mix
- Divide mixture evenly among donut pan cavities, filling about ⅔-¾ way up.
- Bake for 12-14 minutes or until a toothpick inserted into the donut comes out clean.
- Let cool for 5 minutes and remove from pan. Transfer to a cooling rack to cool.
Topping:
- Let donuts cool completely.
- In a food processor, combine biscoff cookies, protein powder, milk and almond butter.
- Use the back of a spoon or knife to spread frosting on top of donuts.Top with crushed biscoff.

I actually doubled the protein powder and Almond milk in the frosting. I would prefer double the amount of frosting I ended up with, but delish nonetheless! Next time! Love anything Biscoff!
