And a very healthy Trader Joe’s pancake bread copycat recipe too!
Ingredients for Blueberry Protein Pancake Bread
This healthy blueberry protein pancake bread is made with extra healthy ingredients like protein pancake mix, protein powder and Greek yogurt; No sugar and butter needed here.
- Protein Pancake Mix – I used the Kodiak Cakes Buttermilk Protein Pancake Mix for this pancake loaf.
You can also make this bread any other just add water pancake mix. - Vanilla Protein Powder needed for a high protein pancake mix bread and also replaces the ‘sugar’.
I used Whey-casein Vanilla protein powder from Quest Nutrition. - Non-fat Greek Yogurt another protein-packed ingredient
- Almond Milk to add moisture to the donuts – the protein powder absorbs a lot.
- Eggs
And then for the actual blueberry pancake bread part:
- Fresh Blueberries! You could try frozen ones, but I would put them right in without thawing.
- A bit of extra pancake mix to coat the berries
How to store Protein Pancake Mix Quick Bread
This healthy Trader Joe’s pancake bread copycat can be stored on the countertop, in the fridge or the freezer for a healthy breakfast or dessert.
Keep the blueberry pancake bread in an airtight container on the countertop for up to 2 days or fridge for 6 days.
To freeze, wrap healthy pancake quick bread slices in plastic wrap, place in a freezer-safe zipper bag, and feeze up to 3 months. Leave them on the countertop or place them in the fridge overnight to thaw.
Tips for perfect Blueberry Protein Pancake Loaf using Pancake Mix
This protein pancake mix loaf with protein powder is quite easy, but here’s some tips to make sure they turn out perfect!
- Use room temperature eggs, yogurt and milk;
This is so the wet ingredients and dry ingredients can mix well.
- Don’t overmix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder – will make it tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar blueberry pancake bread.
- Toss blueberries in extra pancake mix so they don’t stick to the bottom of the loaf when baking.
Alternate Ingredients for Healthy Pancake Bread with Protein Powder
I made this high protein healthy pancake loaf bread with Kodiak Pancake Mix and the brands mentioned above, but here’s some other alternatives you can try:
- Protein Pancake Mix: Use any regular pancake mix; You can make healthy protein pancake quick bread with Bisquick or Krusteaz too.
A good base pancake recipe would work as well.
- Almond milk: Any regular milk
- Greek Yogurt: Applesauce, Banana or Pumpkin Puree
Or Coconut yogurt for a dairy free recipe.
- Egg: To make pancake mix loaf with no egg, try a flax egg (1 Tbsp flaxseed meal + 3Tbsp water let rest 10 mins) or 3 Tbsp aquafaba. I haven’t given this a try yet though.

Blueberry Protein Pancake Bread – 6-Ingredients, Quick, Heathy!
Ingredients
- 1¾ cups Protein Pancake Mix, or any just-add-water pancake mix, 210g
- ½ cup Vanilla Protein Powder, 45g, Whey-casein
- ⅔ cup Unsweetened Almond Milk, 160ml
- ¾ cup Non fat Greek Yogurt, 168g
- 2 Eggs
- 1½ cups Blueberries, 220g
- 1 Tbsp Pancake Mix
Instructions
- Preheat oven to 350°F and line an 8½” x 4½” loaf pan with parchment paper.
- In a large bowl, whisk protein pancake mix and protein powder.
- Add milk, Greek yogurt and eggs and whisk till just combined.Don’t over-mix or loaf will be dense.Batter should be fairly thick; Add 1-2 Tbsp water if it’s too thick, or 1 Tbsp more pancake mix if it’s too runny.
- Place blueberries (reserve a few for topping) in a bowl, sprinkle with extra pancake mix and toss to coat.Required to prevent them from sinking to the bottom.
- Add blueberries to batter and fold to combine.Do not over-mix.
- Transfer batter into pan, smoothen with a spatula or back of spoon and top with remaining blueberries.
- Bake for 45-50 minutes. A toothpick inserted into center should come out dry.
- Cool for 10 minutes, then remove from pan. Transfer to a wire rack to cool completely.

I made this and it came out great I did sprinkle a little swerve on top of it while I was baking to add a little sweetness but I’m glad it uses so many blueberries. Made these this morning with frozen blueberries. Didn’t have enough pancake mix, so I subbed almond flour and some protein powder for a third. Turned out INCREDIBLE. I also added a streusel topping made with coconut oil, coconut sugar, and oat flour. I had to bake it an extra 5 minutes- but it was so worth it. I am so happy with it!

Unfortunately you would need the protein powder in this recipe since it provides a lot of the volume and sweetness. I personally haven’t tried any other substitute for the protein powder so I wouldn’t feel comfortable suggesting anything else.

This was literally amazing!!! Full disclosure I didn’t have enough pancake mix for a full loaf so I half batched and made muffins instead. Ohhh did they take me back to my college days when Blueberry muffins used to be my guilty pleasure. Best part these are actually healthy so having 2 at a time won’t hurt me ?

Ok. I made a double batch and I am glad I did! The bread was so beautifully browned on top and raw in the middle. (Probably because I used frozen blueberries) I just covered with foil to keep them golden while the middle baked! They turned out perfect! Yum!
