This healthy almond croissant recipe uses reduced fat crescent rolls and a high protein filling made with protein powder! Here’s what all you need:
- Croissants! I use the medium size ones.
For the Protein Brownie Filling
- Chocolate Protein Powder for high protein brownie batter; I used Quest Chocolate Milkshake flavor since its whey-casein and bakes well.
- Unsweetened Cocoa Powder or Cacao Powder
- Coconut Flour
- An Egg White
- Unsweetened Almond Milk
- Baking Powder
How to make High Protein Brownie Croissant?
These high protein brownie croissants are really easy to make for a quick indulgence; No fancy skills needed. Here’s what it takes:
- Preheat the oven to 375°F.
- Make the brownie batter: Mix chocolate protein powder, cocoa powder, coconut flour, and baking powder in a bowl.
Add egg whites and milk and whisk.
- Cut the Croissant: Cut the croissant top down 3 times in a criss-cross (like a pizza).
- Assemble: Fill in the brownie batter in the cavity using a piping bag.
- Bake: Bake for 10-12 minutes until brownie batter is mostly cooked.
Drizzle on melted chocolate; Enjoy!
How to store Brownie Batter Croissant
Whether you’re a die-hard brownie fan or a devout croissant connoisseur, the browniebatter croissant is a must-try, and honestly bet had fresh. If you do need to keep it longer, here’s what to do.
- Keep in an airtight container.
- Store on the countertop for about 2 days.
- Alternatively, in the fridge for upto 5 days.
- To reheat healthy brownie croissant, heat in air fryer for 3-4 minutes at 375°F, or bake 5 minutes at 400°F.
Some alternate ingredients Brownie Croissants with Protein Powder
I made this healthy brownie croissant using protein powder with the ingredients listed above, but here are some other options you can try:
- Whey-casein Protein Powder: You can use whey protein, but also use less milk (about ½-1 Tbsp) to make a thick brownie batter.
- Coconut Flour: Almond flour, oat flour or regular flour might work, but use about ⅓ cup.
- Egg Whites: Aquafaba (aka liquid from canned chickpeas)
- Almond Milk: Regular milk works just as well!

Ingredients
- 2 medium Croissants, 70g each
Brownie Batter:
- ⅓ cup Chocolate Protein Powder, Whey-casein, 30g
- 2 Tbsp Unsweetened Cocoa Powder, 10g
- 2 Tbsp Coconut Flour, 14g
- ½ tsp Baking Powder
- 2 Egg Whites, 62g
- 2 Tbsp Unsweetened Almond Milk, 30ml
Instructions
- Preheat oven to 375°F and line a baking pan with parchment paper.
- Cut croissant from top in 3 cuts to form a criss-cross like a pizza to make a cavity.Don’t cut all the way to the bottom
Brownie Batter:
- In a bowl, whisk chocolate protein powder, cocoa powder, coconut flour and baking powder.
- Add almond milk and egg whites and mix.
Assemble & Bake:
- Fill brownie batter in croissant cavities (tip: use a piping bag).
- Bake for 10-12 minutes.Drizzle on melted chocolate and enjoy!.
