Easy homemade Caramel Almond Protein Bars with flavor and texture but no sugar! These healthy caramel protein bars use protein powder, oat flour and peanut butter powder, for a sugar free and gluten free snack.

These bars really are great for a travel snack – took them on a trip in Florida myself. Definitely survive a flight trip 🙂
Ingredients for Caramel Almond Protein Bars:
These caramel almond protein bars are made with simple healthy ingredients, have no sugar or condensed milk, making them the perfect gluten free, dairy free and sugar free homemade protein bar!
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein. I recommend the Multi-purpose mix protein powder from Quest Nutrition.
- Vanilla Protein Powder for high protein snack bar, and also replace the sweetener.
- Coconut Flour
- Almond Milk
- Some Chopped Almonds
The Protein Caramel Layer
These raw caramel protein bars use a high protein and sugar free caramel layer made with peanut butter powder and protein powder.
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Vanilla Protein Powder for high protein peanut butter caramel.
- Sugar free Maple Syrup for low calorie protein bar with no sugar!
I use the sugar free monk fruit maple syrup from Lakanto (code HAYLSKITCHEN gets you a discount) - A bit of Water
And for the Topping on Homemade Caramel Almond Snack Bars
- Chocolate Caramel Almond Clusters Candy. I used the no-sugar added and Keto ones from Atkins.
- Sugar free Chocolate Bar or Chocolate Chips: I use the chips from Lakanto here (HAYLSKITCHEN for a discount here too). Another option is Lily’s Bar or Chocolate Chips.
- Coconut Oil so the chocolate is easier to melt and more smooth when you drizzle.
To store Caramel Protein Bars
To store high protein caramel snack bars, place in an airtight container and keep on the counter for up to 2 days.
Keep these almond protein bars refrigerated or in the freezer so they stay fresh and last longer. They keep in the fridge for up to a 1 week.
To freeze, place protein caramel snack bars in airtight sealed container, or individually wrapped in plastic wrap and placed in zipper bag; They should keep for 2 or 3 months. Be sure to let them thaw on the counter before eating!
Alternatives for Healthy Caramel Bars Recipe!
I made these healthy, sugar free and gluten free and low calorie caramel almond bars with this particular ingredient list, but here’s some options to choose from.
- Unflavored protein powder: Unflavored Collagen, or even Almond flour or Oat flour
- Peanut Butter Powder: Use 2 Tbsp + 2 tsp Creamy Peanut Butter, but also reduce the water to maybe 1-1½ Tbsp.
- Sugar free Maple Syrup: Regular maple syrup or Honey, but they won’t be Vegan or a no sugar recipe anymore.
- Coconut flour: Try using about 6-7 Tbsp of Almond Flour
Vegan Caramel Almond Bars without Condensed Milk
Since there’s no condensed milk in this recipe, these caramel protein bars can easily be made Vegan with the right ingredients.
Use a plant based protein powder to get a Vegan caramel snack bar;
You also want to make sure you use dairy free chocolate chips and candy.

Caramel Almond Protein Bars
Ingredients
Base:
- ½ cup Oat Flour, 45g
- ½ scoop Unflavored Protein Powder, Whey-caesin, 15g, see post for subs
- ½ scoop Vanilla Protein Powder, Whey, 15g
- 3 Tbsp Coconut Flour, 21g
- 3 Tbsp Unsweetened Almond Milk, 45ml
- 1 Tbsp Chopped Almond, 14g
Protein Caramel:
- ¼ cup Peanut Butter Powder, 24g, see post for subs
- ½ scoop Vanilla Protein Powder, Whey, 15g
- 4 tsp Water, 30ml
- 2 tsp Maple Syrup, Sugar-free recommended below, 10ml
Chocolate Topping:
- 2 Caramel Almond Clusters Candy, Sugar-free recommended below
- 2 tsp Chocolate Chips, Sugar-free recommended, 10g
- ⅛ tsp Coconut Oil
Instructions
- Line a 7×5” pan or loaf pan with parchment paper; leave an overhang to lift out later.
Base:
- In a bowl combine oat flour, unflavored protein powder, vanilla protein powder and coconut flour.
- Add in milk and mix. Mixture will be like a dough.Add more milk if too dry, coconut flour if too wet.
- Transfer to prepared pan and press down.
- Sprinkle on chopped almonds and press again.
Protein Caramel:
- In the same bowl, stir peanut butter powder, protein powder, maple syrup and water.
- Mixture should be thick but smooth and spreadable.
- Spread on top of base and use back of spoon/spatula or fingers to smoothen.
Chocolate topping:
- Chop caramel almond clusters candy and press onto bar.
- Place chocolate chips and coconut oil in a large microwave safe bowl and microwave about 45 seconds, stirring halfway, until completely melted.Drizzle chocolate on bar.
- Transfer to freezer to cool about 15 minutes.
- Lift layers out of pan, place on cutting board and slice into 6 bars.
