This Caramel Popcorn Protein Fudge really is a texture explosion! A crunchy fudge but healthy – made with pecan butter and protein powder, and a bit of caramel popcorn. A great no bake recipe.

Threw together the ingredients in a bowl, mixed it up and spread it into a baking pan to cool.
Definitely one of those minimal-effort, maximum result recipes!
What you need for Caramel Popcorn Protein Fudge
This easy caramel popcorn protein fudge is actually made with just the 3 items – a healthy and nut butter, sugar free protein powder and coconut flour and no condensed milk or white chocolate needed!

- Pecan Butter or Cashew Butter
- Vanilla Protein Powder – for high protein fudge recipe, and also replace the sweetener.

How to make Caramel Protein Fudge Bars:
With this easy list of ingredients, making homemade caramel protein fudge really couldn’t get easier; Just mix and set!
Combine the pecan nut butter, coconut flour and chocolate protein powder in a bowl.
Transfer it into a parchment lined loaf pan – I use an 8 x 4” – and spread and smoothen the top with the back of a spoon.
Place the pan in the freezer for 10 minutes to freeze.
Cut into about 16 pieces.
Tips for Protein Powder Caramel Fudge Bars
- Make sure you use room temperature runny nut butter since a hard one out of the fridge won’t combine well.
- Let the fudge harden before slicing since it will be fairly difficult to do this at room temperature.
How to store Homemade Caramel Popcorn Fudge
Since this caramel popcorn fudge is made without chocolate or condensed milk, it will get soft at room temperature and needs to be store in the fridge or freezer.
Store easy protein fudge in the fridge in an airtight container for up to 7 days.
To freeze protein caramel popcorn fudge bars, place sliced fudge bars in a zipper bag with pieces of parchment paper in between and keep in the freezer for 2-3 months. You can also use a freezer safe airtight container here.
Be sure to let the frozen caramel fudge soften for a few hours in the fridge or at room temperature so it’s not too hard to bite into.
Alternatives for Healthy Caramel Fudge Recipe without Condensed Milk
I made this healthy and low calorie caramel fudge with the ingredients and brands I recommended above, but here’s some alternatives you can try.
- Pecan Butter: Use plain runny almond butter, cashew butter or Tahini; I wouldn’t recommend peanut butter since the flavor is too strong.
- Unflavored Collagen: 2 Tbsp Oat Flour, or 2-3 tsp Coconut Flour
- Coconut Flour: About 3x the amount of almond flour
- Kettecorn: Plain, unsalted popcorn
I haven’t tried these combinations myself, but I’d love to know if you do.
Keto and Low Carb
This caramel fudge bar recipe is already low carb and keto friendly; Just make sure you use a stevia sweetened protein powder and keto-friendly nut butter.
Vegan Caramel Fudge recipe!
This caramel popcorn fudge recipe is without condensed milk, and can easily turned into a Vegan protein fudge by using a compliant protein powder and popcorn.

Caramel Popcorn Protein Fudge
Ingredients
- 1 cup Pecan or Almond Nut Butter, 224g, recommendation below
- 1 scoop Vanilla Protein Powder, 30g, ⅓ cup
- 2 scoops Unflavored Collagen Peptides, about 20g, or oat flour
- 6 Tbsp Coconut Flour, 36g
- 1¼ cup Caramel Popcorn or Kettlecorn, 10g
Instructions
- Line a 8×4” loaf pan with parchment paper (leave an overhang to lift out later).
- In a medium bowl, combine the nut butter, protein powder, collagen powder and coconut flour and mix until smooth.Add popcorn and mix again.
- Transfer mixture into prepared loaf pan, press down and use back of spoon to smoothen.
- Place pan in freezer for about 10 minutes to slightly harden.
- Slice into 20 pieces.
