Ingredients for Carrot Cake Protein Blondies
These carrot cake protein blondies are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too. An overall great carrot cake protein dessert!
- Vanilla Protein Powder needed for high protein blondies and also replaces most of the ‘sugar’.
I used half whey-caesin Vanilla protein powder from Quest Nutrition, and half the Slender Blend form ProteinWorld in these protein powder blondies recipe (code HAYLSKITCHEN gives you a discount on ProteinWorld). They have a Whey Protein Powder that’s great as well. - Whole wheat pastry flour for that lightness of the all-purpose flour, but with the nutritious benefits of whole grains
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too.
- Non-fat Greek Yogurt contributes to the oil-free part of these high protein low calorie cake blondies since it adds the moisture, and also extra protein
- Unsweetened Almond Milk or regular milk
- A bit of creamy Peanut Butter
- Cinnamon and Nutmeg
- Baking Soda
And then for the carrot cake bar part:
- Shredded Carrots
- Optional Pecans or Walnuts to mix in
Tips for perfect Protein Powder Carrot Cake Blondies
This protein powder carrot cake blondies recipe with is really easy to make, and here’s some pointers to get it right.
- Use room temperature milk and yogurt;
This is so the wet ingredients and dry ingredients can mix well.
- Room temperature drippy peanut butter so it mixes well too and does not clump.
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the whole wheat flour or protein powder will make the healthy carrot cake protein blondies tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar raspberry blondie recipe.
How to store Protein Carrot Cake Squares?

Store healthy carrot cake breakfast blondies at room temperature in an airtight container for 1-2 days or in the fridge for a week.

I do have some alternatives you can try, but I haven’t testing them all so I can’t say how your recipe might turn out. I’d love to know if you do!
- Whole Wheat Pastry Flour: All purpose flour, 1:1 gluten free baking flour or Whole Wheat Pastry Flour; The same amount by weight
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- Peanut Butter: Almond Butter, Sunflower Seed Butter, Hazelnut Butter or even Tahini;
To make Vegan Carrot Cake Blondies
For a high protein healthy Vegan carrot cake blondies recipe, use coconut yogurt in place of Greek Yogurt also a plant based protein powder.
ProteinWorld has a Vegan protein blend that could work well here (HAYLSKITCHEN for the discount here too).
I haven’t tried pea protein or other plant based ones, so I can’t say how those would work.

Carrot Cake Protein Blondies – Low Calorie, Sugar Free
Ingredients
- ½ cup Whole Wheat Pastry Flour, 60g, see post for sub
- ½ cup Vanilla Protein Powder, 45g, about 1½ scoops
- ¼ cup Peanut Butter Powder, 24g
- ¼ cup Zero Calorie 1:1 Sugar Replacement, 48g
- 1 tsp Cinnamon
- ¼ tsp Nutmeg
- ½ tsp Baking Soda
- 1 cup Non-fat Greek Yogurt, 225 g
- ⅓ cup Unsweetened Almond Milk, 80ml
- 1 Tbsp Peanut Butter, 16g
- 1⅔ cup Grated Carrots, 197g, from 3 medium
- 1 Tbsp Chopped Pecans, 14g
Instructions
- Preheat oven to 350°F and line an 8” x 8” baking dish with parchment paper.
- In a bowl, whisk whole wheat pastry flour, vanilla protein powder, peanut butter powder, zero calorie sugar replacement, cinnamon, nutmeg and baking soda.
- In a large bowl, whisk together Greek yogurt and Milk.
- Add dry mix to wet, and gently stir until just starting to mix.
- Add peanut butter and carrots and fold until combined.DO NOT OVER-MIX or protein powder will make the cake blondies gummy.
- Add in optional pecans and fold again.Do not over-mix.
- Transfer to baking pan and bake for about 25-27 minutes.
- Top should be set and toothpick inserted into the center should come out dry.
- Remove from oven and let cool completely.Cut into slices and enjoy!

Can it be flour made peanuts (put peanuts in the blender?) Also, if or if it should be Greek yogurt? I do not have, but I could buy right around my house, I only have plain unsweetened plain yogurt, not Greek

Peanut Butter Powder is made from peanuts ground peanuts, but has the fat taken out of it. This is the one I use: https://www.lakanto.com/products/peanut-butter-powder-2-net-carbs-keto
In place of this, I would recommend using 2.5 Tbsp Peanut Butter + 1 Tbsp Protein Powder.
I would also say start with only 4 Tbsp milk (instead of 1/3 cup) and add more if you need. The batter should actually be quite thick.
