Tips for Protein Powder Chocolate Biscoff Bars
These protein powder chocolate biscoff bars are really easy to make, but here’s some tips to get it right.
- Use whey-caesin protein powder for unflavored and whey for vanilla, chocolate since it works well with the ratio of ingredients here.
If you use a whey protein powder, you might want to reduce the amount of milk to make it less.
- Mix the dough well to form a smooth mixture, but don’t over-mix since the protein powder might make the texture tough.
- Taste dough layers for sweetness; Add powdered sweetener if needed
- Make sure the raw chocolate and biscoff bar layers are thick but handleable. Add coconut flour to thicken.
- Let the healthy no bake biscoff chocolate bar layers chill before adding the chocolate, or they will be too soft.
To Store No Bake Chocolate Biscoff Cups
These layered chocolate biscoff cookie bars are best stored in the fridge since they do have a bit of milk in there.
To store no bake chocolate biscoff cups in the fridge, keep in an airtight container for up to 1 week.
To freeze chocolate biscoff protein bites, place in an airtight sealed container or freezer safe zipper bag for 2-3 months. Let them thaw on the counter before eating!
Alternate ingredients for Healthy Chocolate Biscoff Bites
I made sugar free, gluten free and healthy chocolate bisocc protein bites with the ingredients above, but here’s some other clean ingredients you can try.
- Oat flour: Almond flour
- Coconut Flour: Try 3x the amount of almond flour (I haven’t given this a try yet, but it should work)
- Unflavored protein: Unflavored collagen, or even more Oat or Almond flour
- Chocoalte Protein Powder: Use Vanilla
- Almond Milk: Regular milk or other non dairy milk
- Chocolate Chips: Chopped chocolate bar, or leave out if you want.

Use a plant based protein powder and dairy free chocolate chips to make Vegan chocolate biscoff protein bites; There’s no cream, no butter and no eggs in here already 🙂

Chocolate Biscoff Protein Bars
Ingredients
Chocolate Layer:
- ⅓ cup + 1 Tbsp Chocolate Protein Powder, 36
- ¼ cup Unsweetened Cocoa Powder, 20g
- ¼ cup Oat Flour, 22g
- 3 Tbsp Coconut Flour, 21g
- ¼ cup Unsweetened Almond Milk, 60ml
- 1 Biscoff Biscuit, Crushed
Biscoff Layer:
- 10 Biscoff Biscuits, Crushed
- ⅓ cup Vanilla Protein Powder, 30g, 1 scoop
- ¼ cup Unflavored Protein Powder, 22g, see post for subs
- ¼ cup Coconut Flour, 14g
- ¼ cup Unsweetened Almond Milk, 60ml
Chocolate Coating:
- 2 Tbsp Chocolate Chips, 28g, Sugar free recommended below
- ¼ tsp Coconut Oil
Instructions
Chocolate Layer:
- In a bowl mix chocolate protein powder, cocoa powder, oar flour, coconut flour and almond milk.Taste mixture and add sweetener if needed.
- Add crushed biscoff cookie and mix.Mixture should be thick, but handle-able; Add milk if the mix is too dry or coconut flour if the mix is too wet.
- Divide into 6 portions.
Biscoff Layer:
- Place biscoff cookies in a food processor and process until crumbled (or crush in a zipper bag with rolling pin).
- In a bowl, mix crushed biscoff, vanilla protein powder, unflavored protein powder, coconut flour and almond milk.Add milk if the mix is too dry or coconut flour if the mix is too wet.
- Divide into 6 portions.
Assemble:
- Grease the insides of a 6-cup muffin pan (or line with parchment and grease); Or spread into a loaf pan.
- Place a chocolate mixture ball into muffin cavities and press down.Smoothen with back of spoon or small spatula.
- Place bicoff mixture on top; Press down and smoothen.
- Transfer pan to freeer for about 20 min to harden.
Chocolate Topping:
- Place the chocolate chips and coconut oil in a shallow bowl and microwave for about 45 seconds – at 20 second intervals – until it’s completely melted. Let cool about 5 mins.
- Run a sharp knife along sides of cups and remove each one.
- Use spoon to spread and drizzle melted chocolate on each cup.
