Yeah there’s a few of these chocolate + butterscotch chip cookies out there, but these are certainly better than most of those recipes coz not only do they taste good, but they’re also super healthy!
Ingredients for Chocolate Butterscotch Protein Cookies
These chocolate butterscotch protein protein cookies need just a few healthy ingredients, no butter or oil and no sugar either. A healthy cookie for christmas for real!
- Chocolate Protein Powder for healthy, sugar free chocolate butterscotch cookie
I used Quest Nutrition Chocolate whey-casein since it works best for baking. - Cocoa Powder
- Unsweetened Applesauce
- Whole Wheat Pastry Flour
- Stevia Powder; I use Sweetleaf Stevia
- Coconut Flour
- Eggs
- Baking Soda
- Vanilla Extract
And for the mix-ins:
- Butterscotch Chips: I’d recommend the sugar free ones from Lily’s Sweets.
Tips for Cocoa Butterscotch Cookies with Protein Powder
This cocoa butterscotch cookie recipe uses protein powder and it can be tricky, but follow these tips and you’ll get it perfect every time.
- Use whey-caesin protein powder since it works well with the ratio of ingredients here; Whey absorbs less moisture, so you would have to reduce the amount of applesauce in this case.
- Work fast with mixing the dough, rolling and putting into oven. You don’t want the dough to warm up too much.
- Use slightly oiled hands for rolling so that the dough doesn’t stick to your palms.
- Lightly flatten cookie dough on pan – cookies will spread, but not very much
- Leave space between cookies, since they will spread.
- Press on some butterscotch chips on top to make the cookies look pretty 🙂

Ingredients
- 1 cup Chocolate Protein Powder, Whey-casein, about 90g
- ½ cup Unsweetened Cocoa Powder, 40g
- ½ cup Whole Wheat Pastry Flour, 60g
- 3 Tbsp Coconut Flour, 21g
- Stevia Sweetener, 4 tsp sugar worth (Use your brand’s Conversion Chart)
- 1½ tsp Baking Soda
- ¾ cup Unsweetened Applesauce, 180g
- 2 Eggs
- 1 tsp Vanilla Extract
- ¼ cup Butterscotch Chips, 56g, Sugar-free recommended below
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a bowl combine chocolate protein powder, cocoa powder, flour, coconut flour, stevia powder and baking soda.
- In another bowl, whisk applesauce and egg.
- Add dry mix into wet and gently fold until uniform.
- Add most of butterscotch chips and mix again.
- Divide mixture into 12, roll into balls and place on baking sheet (keep 2” space between each).Slightly flatten into shape and press on more butterscotch chips.
- Bake about 7-8 minutes.Transfer to cooling rack to cool completely.

I followed the recipe and it was SO DRY….then I realized that on the applesauce it said 3/4 tbsp but 180g…that doesn’t compute.
Overall I added PB and more applesauce to make it something even resembling dough.
