Turns out they’re so easy, even my sister made a batch haha.
Ingredients for Chocolate Caramel Protein Sandwich Cookies:
These chocolate caramel protein sandwich cookies are made with simple healthy ingredients. There’s no sugar or butter or eggs, making them the perfect gluten free, dairy free and sugar free homemade healthy chocolate sandwich cookie recipe!
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Chocolate Protein Powder needed for a high protein sandwich cookie and also replaces the ‘sugar’.
I used a whey-caesin blend protein powder from Quest Nutrition for this recipe.
Be sure to use a chocolate protein powder sweetened with stevia or monk fruit if you want a proper sugar free protein cookie recipe. - Unsweetened Cocoa Powder
- Almond Butter
- A bit of Unsweetened Almond milk
- Vanilla Extract
The filling for a high Protein Caramel Cookie Recipe:
- Creamy Almond Butter; I used Bundle up Blondie flavor from American Dream Nut Butter flavor.

- Vanilla Protein Powder– This is the replacement for sugar in these protein sandwich cookies; I used a Whey here from Protein World (code HAYLSKITCHEN gives a discount here too)
- Unflavored Protein Powder To add some more protein to this caramel filling; Quest Nutrition whey-caesin again here.
- Sugar free Maple Syrup for low calorie protein caramel with no sugar!
I use the sugar free monk fruit maple syrup from Lakanto (code HAYLSKITCHEN gets you a discount) - Vanilla Extract
- A bit of Water
Tips for Chocolate Caramel Sandwich Cookies with Protein Powder
- Use whey-caesin protein powder for the cookies since it works best for baking and does not dry out the cookies.
- Mix the dough well to form a smooth mixture, but don’t over-mix since the protein powder might make the texture tough.
- Let the healthy chocolate sandwich cookies cool before filling, or the caramel will melt away.
- Use whey protein powder for the caramel for the sugar free caramel filling since it works best with these ratios. Add more water if you use whey.
To store Homemade Chocolate Sandwich Cookies
These homemade chocolate sandwich cookies are made with a gooey caramel filling and can be stored on the countertop or in the fridge or freezer for long term.
Keep protein sandwich cookies in an airtight container on the counter top for 2-3 days, or in the fridge for up to 4-5 days.
To freeze, place protein powder chocolate sandwich cookies in an airtight sealed container or zipper bag and freeze up to 3 months. Be sure to let them thaw on the counter before eating!

I made these sugar free, gluten free and low calorie healthy chocolate caramel sandwich cookie recipe with this particular ingredient list, but here’s some options to choose from.
- Whey-Caesin Protein Powder: Use Whey, but add very little liquid
- Whey Protein Powder: Use Whey-Caesin, but add more liquid
- Oat Flour: Almond Flour
- Chocolate Protein Powder: Try a Vanilla
- Almond Milk: Any other milk
- Almond Butter: Hazelnut Butter, Cashew Butter or Tahini; I don’t recommend Peanut Butter because of the strong flavor.
And options for the Protein Caramel Filling
- Almond Butter: Hazelnut Butter, Cashew Butter or Tahini;
- Unflavored Protein Powder: Avoid this, but also don’t use any water
- Sugar-free Maple Syrup: Regular maple syrup or Honey
- Peanut Butter Powder: 2 Tbsp Almond Butter, but also avoid the water

Chocolate Caramel Protein Sandwich Cookies
Ingredients
Cookie:
- ½ cup Oat Flour, 45g
- ⅓ cup Chocolate Protein Powder, Whey-Caesin, 30g
- 3 Tbsp Unsweetened Cocoa Powder, 15g
- ¼ cup Unsweetened Almond Milk, 60ml
- 2 Tbsp Creamy Almond Butter, 32g
- 1 tsp Vanilla Extract
Caramel Filling:
- 3 Tbsp Peanut Butter Powder, 18g
- ½ scoop Unflavored Protein Powder, Whey-Caesin, 15g
- 2 Tbsp Vanilla Protein Powder, Whey, 11g
- 2 Tbsp Creamy Almond Butter, 32g
- 1 Tbsp Sugar-free Maple Syrup, 15ml, Recommendation below
- 1½ Tbsp Water, 22ml
- ¼ tsp Vanilla Extract
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a bowl combine oat flour, chocolate protein powder and cocoa.
- Add in almond butter, milk and vanilla and mix to form dough ball.Add more milk if too dry, oat flour if too wet.
- Roll dough into ball using hands.
- Place parchment paper on work surface, place dough on and use rolling pin to roll into sheet about ⅛” thick.
- Use small circle cookie cutter or spice jar lid (about 2” wide) and cut out circles.Transfer to parchment lined baking sheet.Repeat with leftover dough until all is used up. You should have 28 circles.
- Bake for 9-10 minutes.
- Let cool on baking sheet 2-3 minutes; Then transfer to cooling rack to cool and harden.
Caramel Filling:
- LET COOKIES COOL FIRST.
- Mix peanut butter powder, vanilla protein powder and unflavored protein powder in a bowl.
- Add almond butter, maple syrup and vanilla, then water (little a time) and mix to form frosting consistency.Add water if too thick, protein powder if too thin.
Assemble:
- Place about 2-3 tsp filling on one cookie, cover with another cookie and smush down.
