I would say this was a slightly cakey soft cookie, with definitely a lot of chocolate!
My favorite part though was definitely the size. This recipe makes one massively giant cookie, but still healthy enough to be a single serve!
The perfect way to satisfy those cookie cravings – especially at midnight – while still keeping it nutritious.
Ingredients for Chocolate Microwave Protein Cookie Recipe
This healthy protein cookie recipe has just 6 simple ingredients, and is eggless, has no butter or oil and no sugar sugar either! A great vegan microwave cookie recipe.
- Chocolate Protein Powder; I used a stevia sweetened one from Quest Nutrition in this recipe to make this high protein cookie sugar free.
- Whole wheat pastry flour
- Oat Flour
- Unsweetened Cocoa Powder or Cacao Powder
- Almond Milk to give the soft cookie a slightly cakey feel, and keep it dairy free.
- Baking Powder

How do you make a Single Serve Protein Cookie in the Microwave
Most microwave dessert recipes need a container of some sort, but this single serve protein cookie has no mug. You shape the protein cookie dough and make a giant microwave cookie on a plate!
- Mix your dry ingredients – protein powder, whole wheat pastry flour, oat flour, cocoa powder and baking powder – in a bowl.
- Add in the milk and stir to form the batter.
- If using chocolate chips, add in most of them, leaving some for the topping later.
- Grease a microwavable plate with cooking spray or oil.
- Transfer protein cookie dough on plate and shape it into a big giant cookie for one.
Sprinkle on more chocolate chips if you’d like.
- Microwave for 1 min 15 seconds. You might need 5-10 seconds extra depending on the microwave; make sure the top is dry to touch.
Let it cool a bit, and indulge!
Alternates for this Giant Protein Cookie for One
I recommend making this giant microwave cookie using the ingredients and products listed – especially the protein powder brand – since it gives the best results.
If you need other options for the flours and such, here’s some alternatives:
- Replace the whole wheat pastry flour with regular all purpose flour.
You can also use 1:1 Gluten-free all purpose flour for this microwave protein cookie if you have dietary restrictions. - You can try to use almond flour in place of the oat flour (I’m a little hesitant about this one, so let me know if you try it).
- Vanilla Protein Powder in place of chocolate.
- Regular non-dairy milk to replace almond milk.
A Vegan Microwave Cookie

Ingredients
- 2 Tbsp Whole Wheat Pastry Flour, 15g (or regular AP)
- 2 Tbsp Oat Flour, 15g
- 2 Tbsp Chocolate Protein Powder, about 11g
- 1 Tbsp Unsweetened Cocoa Powder, or Cacao Powder, 5g
- ⅓ tsp Baking Powder
- ¼ cup Unsweetened Almond Milk
- 2 tsp Chocolate Chips, Optional, Sugar free recommended, 9g
Instructions
- Combine all the dry ingredients except the chocolate chips in a bowl – protein powder, whole wheat pastry flour, oat flour, cocoa powder and baking powder.
- Add milk and stir.
- Fold in chocolate chips, reserving a few.
- Lightly grease a microwave-safe plate with oil or cooking spray.Transfer cookie mixture, spread with spoon and shape.Sprinkle on remaining chocolate chips.
- Microwave on high for about 1 min 15 seconds – top should be dry to touch.Let cool for a few minutes and enjoy!
