I made this for my evening snack after remembering that bread puddings exist from a post I saw on IG; And boy did I regret not having remembered before!
Another major regret – a good one – was making this a high protein single serve bread pudding instead of going for a full-size.
Ingredients for Chocolate Protein Bread Pudding
- Chocolate Protein Powder needed for high protein bread pudding and also replaces the ‘sugar’. I used part whey-casein Chocolate flavor from Quest Nutrition, and part whey Chocolate from Dymatize for this recipe.
- Unsweetened Cocoa Powder or Cacao Powder
- Unsweetened Almond Milk or regular milk
- A bit of Greek Yogurt to replace the heavy cream and make a fat free bread pudding
- An Egg White
- Optionally, Ground Cinnamon
Sugar free Chopped Chocolate or Chocolate Chips – I use monk fruit sweetened ones from Lakanto here (HAYLSKITCHEN for a discount here). Lily’s is another sugar-free option!
How to make Healthy Protein Powder Bread Pudding
This healthy bread pudding recipe is really easy to make, and truly perfect for a dessert for breakfast craving!
Prep!
Start with preheating your oven to at 350°F.
Chop the bread into 1” cubes.
Make the fat free bread pudding custard:
- Mix all the ingredients – chocolate protein powder, cocoa powder, milk, Greek yogurt, egg white and cinnamon – a bowl.
Assemble the Bread Pudding
- Grease a baking dish with coconut oil or cooking spray
- Place Chopped bread cubes in
- Pour skinny bread pudding custard into the baking dish
- Press the bread down and let it soak for about 5 mins
And now Bake & Serve!
For the perfect single serve skinny bread pudding recipe, bake for 20-25 minutes at 350°F.
The custard should be set and top of bread should be a bit crispy.
Top with chocolate chips or chopped chocolate.
Let cool for about 5 minutes.
To Store Skinny Bread Pudding
This skinny bread pudding recipe using protein powder is great for a meal prep dessert or breakfast.
Cover baking dish with plastic wrap and store in the fridge for upto 5 days. You can also use an airtight container.
To freeze chocolate protein powder bread pudding, slice bread pudding into pieces, individually wrap each piece in plastic wrap, place in freezer-safe zipper bag, then freeze.
Alternatives for Healthy Chocolate Bread Pudding Recipe
This healthy chocolate bread pudding works best with the ingredient list, protein powder and brands I recommended, but here’s some options to try:
- Whole Wheat Bread: Regular white bread, or even Texas toast or Brioche
- Chocolate Protein Powder: Use Vanilla flavor, But also increase cocoa powder to maybe ⅓ cup
- Almond Milk: Regular milk
- Greek Yogurt: Coconut Yogurt
Vegan
For a vegan chocolate protein bread pudding, replace the egg white with a flax egg (1 Tbsp flaxseed meal + 3 Tbsp water let rest 5 min) and Greek yogurt with coconut yogurt.
Make sure you use a plant based protein powder and dairy free chocolate chips.

I made this chocolate protein bread pudding recipe as a large batch, but you can also use smaller ramekins and make single serve protein bread puddings; Be sure to reduce the baking time to about 10-15 minutes.

Ingredients
- 8 slices Whole Wheat Bread, 224g
- ⅓ cup Chocolate Protein Powder, Whey-casein, 15g
- ⅓ cup Chocolate Protein Powder, Whey, 15g
- ¼ cup Unsweetened Cocoa Powder, 20g
- 1¼ cup Unsweetened Almond Milk, 300ml
- ½ cup Non-fat Greek Yogurt, 112g
- 4 Egg White, 132
- 1 tsp Cinnamon, Optional
- 1½ Tbsp Chocolate Chips, Sugar free recommended below, 21g
Instructions
- Preheat oven to 350°F, and lightly grease a 9”x6” baking dish (or use an 8”x8” and reduce baking time).
- Cut bread into 1” cubes and place in baking dish.
- In a bowl, whisk together chocolate protein powder, cocoa powder, almond milk, Greek yogurt, egg white and cinnamon.
- Pour chocolate custard mixture evenly over bread slices; Press down and let rest 5 min to soak.
- Bake for 20-25 minutes until mixture is set upto the top; bread should be slightly crisp on top.Sprinkle on chocolate chips.
- Let cool a few minutes, slice into pieces, top with whipped cream and serve.
