These molten chocolate protein churro bites are made with a few simple and healthy ingredients!
- Oat Flour – You can make your own by blending rolled oats in a high speed blender
- Vanilla Protein Powder for extra high protein churro balls, and also replace the sweetener.

These stuffed churro protein balls are really easy to make, but here’s some pointers to make them perfect:
- Use cold yogurt so that the dough does not get too sticky and hard to roll.
- Don’t over-mix the dough or it will get too warm and soft. Also, the protein powder can make the protein churros tough.
- Don’t let dough sit out for too long; Work quickly; You don’t want the dough to get warm and sticky.
- Use wet palms to roll the dough into balls so it doesn’t stick to your palms. The dough can be very sticky.
- Spray with butter spray and coat with cinnamon-sugar ASAP when warm so the coating actually sticks.
To store Churro inspired Baked Protein Balls
Just like regular protein balls and churros, these baked churro protein bites can be stored on the counter, in the fridge or freezer. Let the baked protein balls cool completely before storing.
Store chocolate stuffed churro bites in an airtight container on the countertop for about 1-2 days and in the fridge for 4-5 days.
To freeze, place cooled molten churro balls in an airtight sealed container or freezer-safe zipper bags in the freezer for 2-3 months. Let them thaw on the counter then reheat in oven before eating!

Chocolate Stuffed Protein Churro Bites – Healthy and Easy
Ingredients
- ¼ cup Oat Flour, 23g, see post for subs
- ½ scoop Vanilla Protein Powder, 15g
- ¼ + ⅛ tsp Baking Powder
- 3 Tbsp Non-fat Greek Yogurt, 42g
- 2 tsp Chocolate Chips, 10g, Sugar-free recommended below
Coating:
- 1 tsp Zero Calorie 1:1 Sugar Replacement, 4g
- Pinch of Cinnamon
Instructions
- Preheat oven to 350°F and line a baking tray with parchment paper.
- In a large bowl, combine oat flour, vanilla protein powder, and baking powder.
- Add yogurt and mix until combined to form a dough ball; Stop as soon as ball forms.DO NOT OVER-MIX or the protein powder will make it tough.
- Wet your palms, divide dough into 6 pieces (1-2 Tbsp size) and roll into balls.
- Press a depression, place ~3 chocolate chips in the middle and cover. Roll into ball again.
- Place on prepared baking sheet; Bake 10-12 minutes until outside is slightly browned and looks cooked.
Coating:
- Mix sugar alternative and cinnamon in a shallow bowl.
- When bites are warm, lightly spray with butter spray and roll in mixture.
