Awesome Chunky Monkey Protein Brownies with a rich brownie layer, banana layer and all the mix ins like the ice cream! This healthy chunky monkey banana brownie recipe uses protein powder, monkfruit sweetener and Greek yogurt, and has no added sugar, or oil!

These chunky monkey banana brownies turned out just perfect! Proper rich fudgy brownie layer and then all the banana flavor in that top layer.
And of course all those mix ins!
Ingredients for Chunky Monkey Protein Brownies
These chunky monkey protein brownies are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too; The perfect brownie and banana icecream mashup recipe!
For the Brownie Layer:
- Chocolate Protein Powder needed for high protein brownie and also replaces most of the ‘sugar’. I used part whey-caesin Chocolate Milkshake protein powder from Quest Nutrition, and part Chocolate Protein World Whey for this recipe.

- Unsweetened Cocoa Powder, or Raw Cacao Powder
- Whole Wheat Pastry Flour – or a regular all purpose flour
- Zero Calorie 1:1 Sugar Substitute – This is the Golden Monkfruit from Lakanto, and keeps this recipe sugar free; (code HAYLSKITCHEN for a discount here).
- Non-fat Greek Yogurt contributes to the oil-free and and high protein part of these brownies
- Almond Milk or regular milk
- Baking Soda
- Runny Peanut Butter (no butter or oil to keep this recipe low fat)
And for the Protein Banana Layer:
- Vanilla Protein Powder needed for high protein cookie layer
I used half whey-caesin Vanilla protein powder from Quest Nutrition, and half the Whey protein form ProteinWorld(code HAYLSKITCHEN gives you a discount here too). - Unflavored Protein Powder for just some extra protein and less carbs.
I used a whey-caesin blend from Quest Nutrition. - Whole Wheat Pastry Flour
- Zero Calorie 1:1 Sugar Substitute – Golden Monkfruit Sweetener from Lakanto again; (discount code HAYLSKITCHEN)
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount here too)
- More Non-fat Greek Yogurt
- Unsweetened Almond Milk
- Baking Soda
Add ins for the Chunky Monkey Brownie
- Sugar free Chocolate Chips or Chopped Chocolate – I use sugar free ones from Lakanto here (HAYLSKITCHEN for a discount here as well).
- Chopped Pecans (or Walnuts)
- Banana Slices
Tips for Perfect Protein Powder Chunky Monkey Brownies
These protein powder chunky monkey brownies are dense and just spot on, but actually very easy to make!
- Use room temperature milk and yogurt;
This is so the wet ingredients and dry ingredients of the brownie and banana layers can mix well.
- Use completely mashed banana from a ripe banana – this is sweeter and so you need less sugar in the recipe.
- Use Runny Peanut Butter also so that it mixes well into the batter
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder will make the fudgy brownies and banana tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy brownies.
- Don’t over-bake the brownies or they might get tough; Remove when the tester/knife comes out still moist.
Underbaking a little is okay.
How to store Healthy Chunky Monkey Brownies?
This high protein weight watches chunky monkey brownies recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!
Store protein powder chunky monkey brownie bars at room temperature in an airtight container for 1-2 days or in the fridge for a week.
To freeze chunky monkey banana brownies, individually wrap in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.
Alternatives for Weight Watchers Chunky Monkey Brownies
For the perfect low calorie healthy chunky monkey brownies recipe, I used protein powder and monkfruit sweetener – no sugar – and I would highly suggest using the ingredients recommended.
I do have some alternatives you can try. I haven’t testing them all, so I can’t say how the recipe might turn out.
- Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, in the same amount by weight not cups.
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- Zero calorie Sweetener: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Peanut Butter: Almond Butter, Cashew Butter, Tahini or any nut or seed butter
- Peanut Butter Powder: 2 Tbsp Peanut Butter, but also use only 2 Tbsp Milk
For Vegan Chunky Monkey Banana Brownies:
This healthy chunky monkey brownie recipe has no milk or eggs or butter, so can easily be made Vegan with the right substitutes.
For a Vegan version recipe, use appropriate protein powder and replace Greek Yogurt with coconut yogurt.

Ingredients
Brownie:
- ¼ cup + ½ Tbsp Whole Wheat Pastry Flour, 33g, see post for subs
- ⅓ cup Unsweetened Cocoa Powder, or Cacao Powder, 27g
- ½ scoop Whey-Caesin Chocolate Protein Powder, 15g
- ½ scoop scoop Whey Chocolate Protein Powder, 15g
- 2 Tbsp + 1 tsp Zero Calorie 1:1 Sugar Replacement, 28g
- ¼ tsp Baking Soda
- ¾ cup + 1 Tbsp Non-fat Greek Yogurt, 184g
- ⅓ cup Unsweetened Almond Milk, 80ml
- 2 Tbsp Peanut Butter, 32g, see post for subs
Banana Layer:
- ¼ cup + ½ Tbsp 1:1 Whole Wheat Pastry Flour, 33g, see post for subs
- ½ scoop Whey-Caesin Unflavored Protein Powder, 15g
- ½ scoop Whey-Caesin Vanilla Protein Powder, 15g
- ½ scoop Whey Vanilla Protein Powder, 15g
- 3 Tbsp Peanut Butter Powder, 18g
- ¼ tsp Baking Soda
- ½ cup Mashed Banana, 120g, from one medium
- ⅓ cup Non-fat Greek Yogurt, 75g
- 3 Tbsp Unsweetened Almond Milk, 45ml
- 2 Tbsp Lakanto’s Brown Sweetener, 24g
Mix Ins:
- 3 Tbsp Chopped Pecans, 21g
- 2 Tbsp Chocolate Chips, 28g, Sugar Free Recommended Below
- ¼ Sliced Banana, 30g for topping
Instructions
- Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
Brownie Layer:
- In a bowl, whisk flour, cocoa powder, chocolate protein powders, zero calorie sweetener and baking soda.
- In another large bowl, whisk together Greek yogurt and almond milk.
- Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the brownie dense.
- Add in peanut butter and fold.Batter should be thick.
- Transfer batter into pan and smoothen with a spatula or back of spoon.
Banana Layer:
- In a bowl, whisk flour, unflavored protein powder, vanilla protein powders, peanut butter powder, zero calorie sweetener and baking soda.
- In another large bowl, whisk together mashed banana, Greek yogurt and almond milk.
- Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the layer dense.Mixture should be thick.
- Add in most of the chocolate chips and pecans (reserve few for top) and fold.
- Spread mixture over brownie layer and smoothen with a spatula or back of spoon.
- Top with remaining chocolate chips, pecans and banana slices.
- Bake for 37-40 minutes; Toothpick inserted into the center should come out just dry and moist.
