To make these churro protein waffles without protein powder, you only need 3 ingredients!
- Protein Pancake & Waffle Mix! I used TruEats gluten free, high protein mix. Kodiak Cakes is another option.
- Liquid Egg Substitute or just an egg.
- Almond Milk

- Chocolate Protein Powder: I used the one from Quest Nutrition.

How to make High Protein Churro Waffles with Pancake Mix
Making Churro protein waffles with Pancake Mix is super easy, and here’s some pointers to get them perfect!
For the Churro Protein Waffles:
- Preheat Your Waffle Iron: According to the manufacturer’s instructions.
- Make the batter: Whisk all ingredients in a bowl – pancake/waffle mix, liquid egg (or egg), milk. The mix might be slightly lumpy, but that’s okay.
- Cook Waffles: Lightly grease the waffle iron if necessary. Pour the waffle batter onto the preheated waffle iron (about 1-2 Tbsp at a time) and cook according to the manufacturer’s instructions, typically for 3-5 minutes, or until golden brown.
For the cinnamon-sugar coating:
- Make the cinnamon sugar: Combine sweetener and cinnamon in a large bowl.
- Brush warm waffle with melted butter.
- Coat: Toss waffles in cinnamon sugar mix to coat.
For the Protein Chocolate Sauce:
- Mix Ingredients: In a small bowl, whisk together the cocoa powder, chocolate protein powder, almond butter and water.
Adjust the amount of water to achieve your desired sauce consistency. Mix until smooth and creamy.
Storing Cinnamon Sugar Protein Waffles
Proper storage is key to preserving the freshness and taste of your cinnamon sugar protein waffles and chocolate sauce. Here’s how to store them:
For Cinnamon Sugar Waffles:
For the best taste and texture, enjoy the Churro Protein Waffles immediately after cooking. Waffles are at their crispiest and most delicious when they come fresh off the waffle iron.
- Refrigeration: If you have leftover cinnmaons sugar proteinwaffles, allow them to cool to room temperature. Then stack the waffles between sheets of parchment paper (to prevent sticking) and place in an airtight container. Store the container in the refrigerator for 2-3 days.
- Freezing: If you want to store the cinnamon sugar waffles for a longer period, consider freezing them. To freeze, place the cooled waffles in a single layer on a baking sheet and freeze until solid. Then, transfer the frozen waffles to a resealable plastic bag, separating them with parchment paper. Properly stored, they can stay in the freezer for up to 2-3 months. When you’re ready to enjoy them, reheat in a toaster or oven.
For Protein Chocolate Sauce:
- Refrigeration: Transfer it to an airtight container and store it in the refrigerator. The sauce can be refrigerated for up to 3-4 days.
Sauce may thicken in the fridge; if needed, warm it up slightly in the microwave to achieve the smooth consistency.

- Sweetener Alternative: Instead of monkfruit sweetener, use regular sugar.

Churro Protein Waffles + Chocolate Sauce (Sugar Free)
Ingredients
- ½ cup Protein Pancake mix, 60g
- 2 Tbsp Liquid Eggs, 30g
- ¼ cup Unsweetened Almond Milk, 60ml
Cinnamon Sugar Coating:
- 1 Tbsp Monkfruit Sweetener, 12g
- ½ tsp Cinnamon
- 2 tsp Melted Butter, 10g
Chocolate Sauce:
- ⅓ cup Chocolate Protein Powder, 30g
- 1 Tbsp Cocoa Powder, 5g
- 2 tsp Almond Butter, 10g
- 6 Tbsp Water, 90ml
Instructions
- Preheat waffle iron.
- In a bowl, whisk pancake mix, liquid egg substitute (or egg) and milk.
- Spray waffle iron with cooking oil spray.Scoop out 1-2Tablespoon-fuls batter into waffle iron, leaving gaps.
- Cook for 4-5 minutes.
- Remove from waffle from iron and repeat with remaining batter, greasing each time.
Cinnamon Sugar Coating:
- In a bowl, combine granulated sweetener and cinnamon.
- Brush warm waffles with melted butter, place in cinnamon-sugar mix, toss to coat.
Chocolate Sauce:
- In a bowl, whisk protein powder, cocoa powder, almond butter and water.
