Using protein pancake mix, this apple cinnamon loaf really is an easy protein baking recipe!
It’s all just mix, pour, add cinnamon-sugar, apples, repeat and bake!
Ingredients for Cinnamon Apple Protein Pancake Bread
This healthy cinnamon apple protein pancake bread is made with extra healthy ingredients like protein pancake mix, protein powder and Greek yogurt; No sugar and butter needed here.
- Protein Pancake Mix – I used the Kodiak Cakes Buttermilk Protein Pancake Mix for this pancake loaf.
You can also make this bread any other just add water pancake mix.
- Vanilla Protein Powder needed for a high protein pancake mix bread and also replaces the ‘sugar’.
I used half Vanilla protein powder from Quest Nutrition, and half the Slender Blend form ProteinWorld in these protein powder blondies recipe (code HAYLSKITCHEN gives you a discount here). They have a Whey Protein Powder that’s great as well. - Non-fat Greek Yogurt another protein-packed ingredient
- Almond Milk to add moisture to the donuts – the protein powder absorbs a lot.
- Eggs
And then for the actual Apple Cinnamon Swirl:

How to store Cinnamon Apple Pancake Quick Bread
This high protein pancake mix apple cinnamon quick bread can be stored on the countertop, in the fridge or the freezer for a healthy breakfast or dessert.
Keep the protein apple pancake bread in an airtight container on the countertop for up to 2 days or fridge for 6 days.
To freeze, wrap healthy cinnamon swirl apple pancake bread slices in plastic wrap, place in a freezer-safe zipper bag, and feeze up to 3 months. Leave them on the countertop or place them in the fridge overnight to thaw.
Tips for perfect Apple Protein Pancake Loaf using Pancake Mix
This apple protein pancake mix loaf with protein powder is quite easy, but here’s some tips to make sure they turn out perfect!
- Use room temperature eggs, yogurt and milk;
This is so the wet ingredients and dry ingredients can mix well.
- Don’t overmix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder – will make it tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar apple pancake bread.
- Distribute apples evenly to get a good spread and apple cinnamon swirl layer throughout the protein quick bread
- Press chopped apples into batter in middle so they don’t form a separation layer.
Alternate Ingredients for Healthy Apple Cinnamon Bread with Pancake Mix Protein Powder
I made this high protein healthy pancake loaf apple cinnamon bread with Kodiak Pancake Mix and the brands mentioned above, but here’s some other alternatives you can try:
- Protein Pancake Mix: Use any regular pancake mix; You can make healthy protein pancake quick bread with Bisquick or Krusteaz too.
A good base pancake recipe would work as well.
- Almond milk: Any regular milk
- Greek Yogurt: Applesauce, Banana or Pumpkin Puree
Or Coconut yogurt for a dairy free recipe - Egg: To make pancake mix loaf with no egg, try a flax egg (1 Tbsp flaxseed meal + 3Tbsp water let rest 10 mins) or 3 Tbsp aquafaba.
I haven’t given this a try yet though. - Zero Calorie Sweetener: Regular brown sugar or coconut sugar.

Cinnamon Apple Protein Pancake Bread – Minimalistic and Easy!
Ingredients
- 2¼ cups Protein Pancake Mix, or any just-add-water pancake mix, weighed ~227g
- ½ cup Vanilla Protein Powder, 45g, 1½ scoops
- ⅔ cup Unsweetened Almond Milk, 160ml
- ½ cup Non fat Greek Yogurt, 112g
- 2 Eggs
Filling:
- ¼ cup Zero Calorie 1:1 Brown Sugar Substitute, or regular, 36g
- 1 Tbsp Cinnamon
- 1 medium Apple, Cored and Finely Chopped/Grated, 182g
Instructions
- Preheat oven to 350°F and line an 8½” x 4½” loaf pan with parchment paper.
- In a large bowl, whisk together milk, Greek yogurt and eggs.
- In another bowl combine protein pancake mix and protein powder.
- Add dry mix to wet and fold to combine.Don’t over-mix or loaf will be dense.Batter should be fairly thick; Add 1-2 Tbsp water if it’s too thick, or 1 Tbsp more pancake mix if it’s too runny.
Fill and bake:
- In a bowl, combine brown sugar and cinnamon.
- Transfer ½ batter into pan, spread ½ chopped apples (press down lightly), and sprinkle on ½ cinnamon sugar mixture.
- Add remaining ½ batter, cinnamon sugar and chopped apples.
- Bake for 45-50 minutes. A toothpick inserted into center should come out dry.
- Cool for 10 minutes, then remove from pan. Transfer to a wire rack to cool completely.
Notes
- Taste the batter and see if you need some extra sweetener; I’d recommend stevia if needed.
