But then again, apple blondies sounded a bit too plain for your girl here. Saw some of that coffee-flavored Almond Butter from American Dream Nut Butter I had in my pantry, and inspiration struck.
Coffee and apples really come together so well in these rich and chewy and soft blondies. A real keeper here.

Ingredients for Coffee Apple Protein Blondies
These coffee apple protein blondies are made with a few healthy ingredients, and have no sugar or butter in here.
- Vanilla Protein Powder needed for high protein blondies and also replaces most of the ‘sugar’.
I used the whey-casein Vanilla protein powder from Quest Nutrition. - Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low calorie protein blondie. Quest Nutrition whey-casein again here.
- Whole Wheat Pastry Flour
- 1:1 Zero Calorie Brown Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here).
- Almond Butter Powder, also known as Powdered Almond Butter. I use the one from PB2.
- Non-fat Greek Yogurt contributes to the oil-free part of these high protein low calorie protein blondies since it adds the moisture, and also extra protein
- Unsweetened Applesauce
- Unsweetened Almond Milk
- Coffee-flavored Almond Butter for the rich blondie flavor with the coffee flavor too.

Tips for perfect Apple Protein Powder Blondies
This protein powder apple blondie recipe is really easy to make, and here’s some pointers to get it right.
- Use room temperature applesauce and yogurt;
This is so the wet ingredients and dry ingredients can mix well.
- Room temperature drippy almond butter so it mixes well too and does not clump.
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder will make the low calorie apple blondies tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have healthy apple blondie recipe with no added sugar.
How to store Easy Apple Blondie Squares?
This easy apple blondie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!
Store apple protein powder blondies at room temperature in an airtight container for 1-2 days or in the fridge for a week.
To freeze healthy apple blondie squeares, individually wrap each protein blondie square in plastic wrap and place in freezer-safe zipper bags or air tight container; The low calorie apple blondie bars should keep for 2-3 months.
Alternatives for Healthy Apple Blondies Recipe
I made these healthy apple blondies with the specific products (and brands) and know they turn out amazing this way.
I do have some alternatives you can try, but I haven’t testing them all so I can’t say how your recipe might turn out. I’d love to know if you do.
- Whole Wheat Pastry Flour: All purpose flour, 1:1 gluten free baking flour; The same amount by weight
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Almond Butter Powder: Peanut Butter Powder, or 3 Tbsp more flour (also taste the batter for sweetness and add sweetener if needed)
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- Almond Butter: Cashew Butter, Peanut Butter, Sunflower Seed Butter, Hazelnut Butter or even Tahini.
- Stevia Sweetener: Equivalent of zero-calorie sugar substitute. I recommend Lakanto (code HAYLSKITCHEN gives you a discount here)
You might need to add a Tbsp or so of extra milk.
To make Vegan Apple Blondies
For a high protein Vegan apple blondies recipe, use coconut yogurt in place of Greek Yogurt also a plant based protein powder.
I haven’t tried pea protein or other plant based ones, so I can’t say how those would work here. You might need extra sweetener, and a bit of extra milk.

Coffee Apple Protein Blondies – Amazing Flavor!
Ingredients
- ⅓ cup Vanilla Protein Powder, Whey-casein, 30g
- ¼ cup Unflavored Protein Powder, Whey-casein, 22g
- ¼ cup Whole Wheat Pastry Flour, 30g
- ¼ cup Almond Butter Powder, 24g (or Peanut Butter Powder)
- 2 Tbsp Zero Calorie Brown Sugar Replacement, 24g
- Stevia Sweetener, ¼ cup sugar worth (Use your brand’s Conversion Chart)
- 2 tsp Instant Coffee
- ⅓ tsp Baking Soda
- 1 cup Non-fat Greek Yogurt, 225g
- ⅓ cup Unsweetened Applesauce, 80g
- 2 Tbsp Unsweetened Almond Milk, 30ml
- 1 Tbsp Almond Butter, 16g, Cappuccino flavor recommended below
- 1 medium Apple, Cored and Chopped Small, 180g
Instructions
- Preheat oven to 350°F and grease or line an 8” x 8” baking dish with parchment paper.
- In a bowl, whisk vanilla protein powder, unflavored protein powder, flour, almond butter powder, zero calorie brown sugar replacement, stevia sweetener, instant coffee and baking soda.
- In a large bowl, whisk together Greek yogurt, applesauce and almond milk.
- Add dry mix to wet, and gently stir until just starting mix.
- Add almond butter and fold until combined.DO NOT OVER-MIX or protein powder will make the blondies gummy.
- Add chopped apple and fold.Transfer batter to baking pan.
- Bake for about 25-30 minutes.
- Top should be set and toothpick inserted into the center should come out mostly dry – just a bit moist (will cook in pan as cooling).
- Let cool in pan for 10 minutes, then transfer to cooling rack.
