This is actually my first time baking with collagen powder – I use protein powder in baked goods all the time – but yes, you can use collagen powder in baking and it works out just great! It’s a great way to make high protein desserts without protein powder.
These collagen protein brownies had the exact rich flavor and fudgy texture you expect from a normal brownie, but has so much extra protein and actual potential health benefits as well. Stronger nails and hair, even joints.

Ingredients for Collagen Protein Brownies
These fudgy collagen chocolate protein brownies without protein powder are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too; The perfect collagen dessert recipe!
- Unflavored Collagen Peptides needed for high protein brownies. I use the one from Further Foods (HAYLSKITCHEN gives you a discount)
- Unsweetened Cocoa Powder, or Raw Cacao Powder (HAYLSKITCHEN.15OFF to save on Kiva Cacao)
- Gluten Free (All Purpose) Baking Flour – or a regular all purpose flour
- 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
- A bit of Coconut Flour
- Creamy Peanut Butter
- Non-fat Greek Yogurt contributes to the oil-free part of these high protein brownies since it adds the moisture, and also extra protein
- Egg Whites for extra high protein without the added fat from the yolk
- Almond Milk or regular milk
- Vanilla Extract
- Baking Soda
- Optionally Sugar free Chopped Chocolate or Chocolate Chips – I use sugar free ones from Lakanto here (HAYLSKITCHEN for a discount here as well). Lily’s is another sugar-free option!
How to make Collagen Powder Brownies with no Protein Powder?
This recipe for chocolate protein collagen brownies is extremely easy to make; just mix and bake!
Here’s what it takes:
- Preheat your oven to 350°F and line a baking pan (about 8”) with parchment paper.
- Whisk all the dry ingredients in bowl: collagen protein powder, cocoa powder, gluten free baking flour, coconut flour, zero calorie sweetener and baking soda.
- Whisk the wet ingredients in a large bowl: Peanut butter, almond milk Greek Yogurt, egg whites and vanilla.
- Add the dry mix to the wet and gently fold to combin; Be gentle
You should have a slightly runny batter. (Taste batter and add stevia powder if you want it sweeter).
- Transfer the no sugar protein brownie batter into pan, top with chocolate chips and bake for about 25-30 minutes.
How to know when collagen peptides peptides brownies are ready?
Baked collagen peptides protein brownies are ready when the top is completely set and dry, and a tester (toothpick or thin sharp knife) comes out mostly dry.
For extra fudgy collagen brownies, let some moisture be there on the tester – this should be at about 25 minutes.
Wait until cool!
Don’t cut too soon or they will be too soft.
Tip!
Use a plastic knife to cut the brownies; these collagen protein brownies are quite fudgy and will stick to a metal knife when cutting.
Alternatives for Healthy Protein Brownies without Protein Powder
For the perfect fudgy and moist protein collagen powder brownies, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try. I haven’t testing them all, so I can’t say how your recipe might turn o
- 1:1 Gluten Free Baking Flour: All purpose flour or Whole Wheat Pastry Flour.
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Peanut Butter: Almond Butter, Cashew Butter, or any nut or seed butter.
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
How to store Collagen Brownies?
This high protein brownie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!
Store chocolate collagen powder brownies at room temperature in an airtight container for 1-2 days or in the fridge for a week.
To freeze collagen brownies, individually wrap in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.

This brownie is the BOMB! I tried lots of brownies on my life and I am very picky when comes about my food and what I put in my body, so this brownie gets a 5 star review from me from every single point of view. They are beyond delicious, good ingredients, easy on my stomach, and healthy! Bonus, if you don’t have to make them or just don’t feel like it, definitely order them from Haylee like I did. This recipe was great, I loved the brownies. One thing though, collagen is awesome, but doesn’t actually count towards your protein intake. It misses an essential amino acid so its an incomplete protein. It’s great for skin, nails, and hair though!

I haven’t tried subbing out the sugar substitute with Honey, so I can’t say how it will work.
The batter texture is quite gooey as it is, and I’m afraid honey might not work as well here (especially since we need a whole 2/3 cup worth).
You could find Lakanto or Swerve sweetener at a lot of grocery stores if you’re open to buying it.
Coconut sugar would work in place too!

I think I made this recipe or a very similar one with almond flour instead of the regular flour and wowza! After letting them cool (completely, like put them in the freezing cold garage for a bit) they were so dense and fudgey. Very addicting and so filling. Can anyone else vouch for almond flour substitute for this?

These are so fudgey and goey-just like my favorite type of brownie. Not dry nor too cakey like some no sugar protein brownies. These are perfect and even heated up they’re delicious and fudgey. I cooked mine in my toasted oven for 18lbs minutes which yielded the perfect texture once cooled.

Can we replace the coconut flour with another flour?
Hi Rimi! I would really recommend the coconut flour here since it works very different in baking as compared to other flours. It’s a lot more absorbent!
If you’re not able to get some, I would say try 1/2 cup or 2/3 cup of Oat flour instead.

Instead of Greek yogurt, you could try coconut yogurt. I don’t think regular would work here.
This is hands down my favorite recipe (so far). These do not taste like there is ANYTHING high protein about them. I have made multiple batches of these and they are so delicious, my whole family eats them. They love the gooey texture and brownie batter flavor. Most of my protein treats, I do not have to worry about sharing. These are a huge exception, I even made one batch in secret to freeze the leftovers!
