But to be honest it really wasn’t!
It was just mixing the dough, rolling the balls, flattening and baking.

Ingredients for Cookie Crisp Protein Cereal
This recipe for cookie crisp protein cereal is made with a few healthy ingredients, uses oat flour, and has no eggs or sugar either.
- Oat Flour – Use gluten free if needed, or make your own from rolled oats
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly low calorie protein cereal. I used a whey-caesin blend from Quest Nutrition.
- Protein Powder for high protein cookie cereal recipe, and also replace the sweetener.

- A bit of Water

Tips for Homemade Protein Cookie Cereal
This homemade protein cookie cereal is are really easy to make, but here’s a few pointers to make them just right every time.
- Use Oat Flour not Oats
You want a smooth cookie dough here. You can also make your own oat flour by blending oats in a high speed blender.
- Creamy Tahini, not crunchy
So that it mixes in smoothly with the rest of the protein cookie dough.
- Add water a little at a time so you dont end up with a runny dough. It should be sticky, but handle-able.
- Use slightly wet palms when rolling dough
This is to prevent the dough from sticking to your palms
- Let the cookies cool completely before eating
They will crisp up more when cooled
Make Ahead and Store Mini Protein Cookies Cereal
Store these mini protein cookies in an airtight container on the countertop for 2 and enjoy them as a high protein breakfast or post workout meal.
To store Mini chocolate chip protein cookies cereal in the freezer, keep in freezer-safe zipper bags for 2-3 months.
Alternative Ingredients for Healthy Cookie Crisp Cereal Recipe
I made this healthy cookie crisp cereal with protein powder and oats to keep it sugar free and gluten free, but here’s some other alternatives
- Oat flour: Use an equal amount of almond flour (by cups).
Update from reader’s comments: This alternative has been successfully used by a reader. - Unflavored Protein Powder: More oat flour (1½ Tbsp) and reduce water to 1½ Tbsp.
- Tahini: Cashew butter, almond butter or any nut or seed butter; I would not recommend peanut butter because of the strong flavor.
- Chocolate Chips: Chopped Chocolate Bar. I use the one from Lakanto here too (samce code HAYLSKITCHEN for the discount)
Vegan Twix Protein Powder Cookies
Since there’s no eggs or butter needed, all you need for vegan protein mini cookies is to use a plant based protein powder and dairy free chocolate chips.

Cookie Crisp Protein Cereal – Mini but Powerful!
Ingredients
- ⅓ cup Oat Flour, 30g
- 2 Tbsp Vanilla Protein Powder, 11g
- 1½ Tbsp Unflavored Protein Powder, 8g, see post for subs
- ½ Tbsp Runny Tahini, 8g, see post for subs
- ½ tsp Baking Powder
- 2 Tbsp Water
- ½ Tbsp Mini Chocolate Chips, Sugar-free recommended below, 7g
Instructions
- Preheat oven to 350°F, and line baking sheet with parchment paper.
- In a bowl, combine cookie ingredients – oat flour, vanilla protein powder, unflavored protein powder, baking powder and tahini.Add water – a little at a time – to form dough. It should be soft, only a little sticky. Still handleable.
- Fold in chocolate chips.Do not over-mix.
- Scoop about ½ Tbsp dough at a time and divide into 15 parts. Use slightly wet fingers and palms.
- Roll into balls, place on lined baking sheet, and and flatten.
- Bake for 12-15 minutes.
- Let cool completely, about 10 minutes (move to cooling rack to speed up process).

I didn’t understand, I have vanilla flavored protein but I don’t have unflavored protein, what can I use to replace the unflavored protein? more flour? if so the same amount of unflavored protein? I saw the replacement and I didn’t see for the flavorless protein or I didn’t understand, excuse me 🙁

Sorry I’m just seeing this now.
You would replace the unflavored protein powder with more Oat flour (1½ Tbsp Oat flour) and decrease the water to 1½ Tbsp as well).

This is such a great idea! Seems much more cost effective than purchasing protein cereal.
I really couldn’t agree more. The store bough protein cereal can get quite expensive, and this homemade version is quite easy!
Okay so I prepped them to have for breakfast tomorrow morning but they just kept staring at me and I gave in #noregrets. But now I just want to eat the whole batch!!!
Btw I used almond flour (20 g for those who might not want to do the math haha) and it worked like a charm!
