Jump to RecipeIf you’re on the hunt for a snack that’s not only out-of-this-world delicious but also fuels your body with the power of protein, you’ve arrived at the perfect place. These bars aren’t just about satisfying your cravings; they’re a testament to smart snacking.
We’ve all heard about cosmic brownies, so these take it to the next level; Think a high protein blondie-flavor base with a vanilla-y butter-y frosting (without butter) and the candy coated chocolate bits on top. Really perfect!
Ingredients for Cosmic Blondie Protein Bars
These cosmic blondie protein bars are made clean ingredients – no sugar or butter – and even have a cosmic blondie flavor cashew butter!
- Whey-Casein Vanilla Protein Powder for high protein cosmic blondie bars, and also replace sugar. I used Quest Nutrition.
- Whey Vanilla Protein Powder; I recommend Dymatize for this.
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe. Quest Nutrition whey-casein again here.
- Cashew Butter Powder: The same one from PB2.
Peanut Butter Powder from Lakanto (the code HAYLSKITCHEN gives you a discount) or PbFit works too. - Whole Wheat Pastry Flour
- 1:1 Zero Calorie Brown Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here).
- Cosmic Blondie flavor Cashew Butter
I recommend American Dream Nut Butter (code HAYLSKITCHEN gives you a discount) Cosmic Blondie CB, or any other Cashew Butter here; Its lower fat and higher protein. - Unsweetened Almond Milk
- Unsweetened Applesauce
- Nonfat Plain Greek Yogurt
- Coconut Flour
- Vanilla Extract
- Baking Soda

- Nonfat Plain Greek Yogurt
- Whey-Casein Vanilla Protein Powder: I used Quest Nutrition.

- Candy Coated Chocolate Chips – These are the “cosmic brownie sprinkles” to go on cosmic blondies! Here’s the ones I used from Amazon.
How to make Blondie Bars with Candy Coated Chips and Protein Powder
This cosmic blondie bars recipe with candy coated chocolate chips is a really easy recipe to make, but here’s some pointers to get it right.
- Whisk all wet ingredients well so its a smooth mix.
Greek yogurt, applesauce, milk, cashew butter, brown sugar, vanilla,
Use drippy cashew butter so it mixes well with the wet ingredients and does not clump.
- Mix all dry ingredients.
Whey-casein and whey vanilla protein powder, unflavored protein powder, flour, coconut flour, cashew butter powder, baking soda. - Add dry mix to wet and whisk a bit first, then fold with spatula.
Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder will make the low calorie cosmic blondie bars tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have healthy cosmic blondie bar recipe with no added sugar.
- Pour mix into parchment lined pan.
- Bake 25-30 minutes at 350°F.
Don’t over-bake the bars or it will get tough; Remove when the tester/knife comes out just dry, but moist. - Let cool completely (10 minutes in pan, then on cooling rack).
Cooling is required or frosting will melt. - Frosting: Mix greek yogurt, protein powder and cashew butter.
Spread on base. - Sprinkle candy coated chocolate bits on top.
- Slice into 16 pieces.
How to store Protein Cosmic Blondie Squares?
These high protein cosmic blondie squares are a great meal prep; cosmic blondie snack bars must be kept in the fridge in an airtight container for 3-4 days.
To freeze healthy cosmic blondie protein squares, place in freezer-safe zipper bags or use air tight container; They should keep for 2-3 months. Thaw before eating.
Alternatives for Healthy Cosmic Blondie Bars Recipe
I made these healthy cosmic blondie bars with the specific products (and brands) mentioned, but I do have some alternatives you can try.
I haven’t testing them all so I can’t say how your recipe might turn out. I’d love to know if you do!
- Whole Wheat Pastry Flour: All purpose flour, 1:1 gluten free baking flour; The same amount by weight
- Unflavored Protein Powder: 2½ Tbsp flour, But also reduce yogurt to ⅔ cup.
- Flavored Cashew Butter: Regular Cashew Butter, Almond Butter, Peanut Butter, Sunflower Seed Butter, Hazelnut Butter or even Tahini.
- 1:1 Zero Calorie Brownie Sugar Replacement: Regular brown sugar
- Cashew Butter Powder: Almond Butter Powder or Peanut Butter Powder
- Almond Milk: Any other milk

Cosmic Blondie Protein Bars – Healthy and So Good!
Ingredients
- ¼ cup Vanilla Whey-Casein Protein Powder, 22g
- ¼ cup Vanilla Whey Protein Powder, 22g
- ½ scoop Unflavored Protein Powder, Whey-Casein, 15g
- ⅓ cup Cashew Butter Powder, 32g, or PB Powder
- ¼ cup Whole Wheat Pastry Flour, 30g
- 3 Tbsp Coconut Flour, 21g
- ⅓ tsp Baking Soda
- ¾ cup Non-fat Plain Greek Yogurt, 168g
- ½ cup Unsweetened Applesauce, 120ml
- ½ cup Almond Milk, 120ml
- ¼ cup Cosmic Blondie flavor Cashew Butter, 56g, Recommendation Below
- 2 Tbsp Zero Calorie Brown Sugar Replacement, 24g
- 1 Tbsp Vanilla Extract
Frosting:
- ¾ cup Non-fat Plain Greek Yogurt, 168g
- ⅓ cup Vanilla Protein Powder, Whey-casein, 30g
- 1½ Tbsp Cosmic Blondie flavor Cashew Butter, 21g, Recommendation Below
- 1 Tbsp Candy Coated Chocolate Chips, 12g
Instructions
- Preheat oven to 350°F and grease or line an 8” x 8” baking dish with parchment paper.
- In a bowl, whisk vanilla protein powder(s), unflavored protein powder, cashew butter powder, flour, coconut flour and baking soda.
- In a large bowl, whisk together wet ingredients – yogurt, applesauce, milk, cashew butter, brown sugar and vanilla.
- Add dry mix to wet, whisk lightly for 7-8s and then gently fold with spatula until just combined.DO NOT OVER-MIX or protein powder will make the bars gummy.
- Pour into baking pan; Bake for about 25-30 minutes.Top should be set and toothpick inserted into the center should come out mostly dry – just a bit moist (will cook in pan as cooling).
- Let cool in pan for 10 minutes, then transfer to cooling rack to cool completely.
Frosting:
- Let bars cool completely.
- In a bowl, mix Greek yogurt, protein powder, cashew butter, until smooth.Spread over cooled bars.
- Sprinkle candy coated chocolate bits on top.Cut into 16 bars and serve!
