Are Protein Cookies Healthy?
Whether or not a protein cookie is healthy depends on the ingredients used in it and what the macros are for the serving size. A ton of butter, fat and white flour are not good signs.
This high protein skillet cookie uses clean ingredients and is definitely healthy!
Ingredients for Chocolate Chip Protein Cookie Skillet
- Whole Wheat Pastry Flour – or a regular all purpose flour or gluten free baking flour
- Vanilla Protein Powder – This adds in sweetness, so this protein cookie recipe has no added sugar; I used Quest Nutrition Vanilla Protein Powder.
- Peanut Butter Powder, also known as Powdered Peanut Butter. I use Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount here too)
- Zero Calorie Brown Sugar – This is the Brown Monkfruuit 1:1 Sugar Substitute from Lakanto, and keeps this recipe sugar free; (code HAYLSKITCHEN for a discount here)
- Coconut Flour
- Unsweetened Applesauce (see the alternatives below)
- Almond Butter: Use the creamy runny one
- Egg
- An Egg White
- Baking Soda
- Chocolate Chips – I use sugar free ones from Lakanto here too. Lily’s is another sugar-free option!
How to make Protein Powder Skillet Cookie
This recipe for a giant chocolate chip protein cookie is really easy to make; Bowls and a skillet are all you need.
Here’s what it takes:
- Preheat your oven to 350°F and lightly grease a 10” cast iron skillet.
- Whisk all the dry ingredients in bowl: flour, coconut flour, vanilla protein powder, peanut butter powder and baking soda.
- Whisk the wet ingredients in a large bowl: Applesauce, almond butter, sweetener, egg and egg white.
- Add the dry mix to the wet and gently fold to combine. Just be gentle and don’t over-mix the batter. The protein powder will make it too dense.
You should have a thick batter. (Taste batter and add stevia powder if you want it sweeter)
- Add in some chocolate chips and fold to combine.
- Transfer batter into skillet, top with more chocolate chips and bake for about 12 minutes.
How to serve this Healthy Chocolate Chip Protein Cookie
This chocolate chip protein cookie skillet makes a great dessert, date night recipe, or even post workout treat!
I would highly recommend topping the warm protein cookie with a few scoops of some healthy ice cream. To keep it sugar-free, try my protein powder ice cream or banana ice cream (aka nice cream).
Another great option would be to have this low calorie cookie skillet with a high protein peanut butter spread!
A cold glass of milk would also go really well.

Can you make ahead and Store Skillet Cookie for Two
Anabolic protein powder cookie skillet can be made ahead and stored in the fridge or freezer.
To store healthy skillet cookie as a whole, place cast iron skillet in large zipper bag, seal and keep on countertop up to one day.
Protein cookie can be stored in airtight containers in the fridge for 1 week.
For a longer-term option, cut it up into pieces, optionally wrap each one in plastic wrap and keep the chocolate chip protein cookie in a freezer safe zipper bag. They should last a few months.
Alternatives for ingredients for Anabolic Cookie Skillet:
This anabolic cookie skillet is a very adaptable recipe, and here’s some healthy ingredients swaps to make this clean dessert.
- Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, in the same amount by weight.
- Zero Calorie Brown Sugar Alternative: Regular coconut sugar or brown sugar (this won’t be sugar free though, and also higher in calories)
- Almond Butter: Peanut Butter, Tahini, Cashew Butter, or any nut or seed butter.
- Applesauce: Pumpkin Puree
No skillet? Use a loaf pan, or cake pan, muffin tins, whatever you please! Make sure to adjust the baking time.

Extremely Easy Chocolate Chip Protein Skillet Cookie
Ingredients
- ½ cup Vanilla Protein Powder, Whey-casein, 45g
- ¼ cup Peanut Butter Powder, 24g
- ¼ cup Whole Wheat Pastry Flour, 30g, See post for subs
- 1½ Tbsp Coconut Flour, 10g
- 1 Tbsp Zero Calorie Brown Sugar Alternative, 12g
- ¾ tsp Baking Soda
- ½ cup Unsweetened Applesauce, 120g see post for subs
- 1 Egg, Room temperature
- 1 Egg White
- ½ Tbsp Almond Butter, 8g
- 2 Tbsp Chopped Chocolate or Chocolate Chips, Sugar-free recommended below, about 28g
Instructions
- Preheat oven to 350°F and grease an 8” cast iron skillet.
- In a bowl combine vanilla protein powder, peanut butter powder, flour, coconut four, sugar alternative and baking soda.
- In another bowl, place whisk applesauce, egg, egg white and almond butter.
- Add dry mix into wet and gently fold until uniform.
- Add in chocolate chips or chopped chocolate, reserving a few for the top.
- Pour batter into greased pan/skillet and spread evenly with a spatula or back of a spoon.Top with remaining chocolate chips.
- Bake for 11-12 minutes, a toothpick inserted into the center should come out with few crumbs attached.Cookie will cook more in skillet while cooling.
- Let cool for about 10 minutes and serve warm with some vanilla (protein or banana) ice cream!
