This recipe for fluffernutter protein bars takes all the flavor of a fluffernutter sandwich and turns it into a healthy snack that you can feel good about eating.

Ingredients for Fluffernutter Protein Bars
These Fluffernutter protein bars are made with a healthy ingredients like protein powder, whole wheat pastry flour, peanut butter powder and have no extra sugar or fats.
- Vanilla Protein Powder needed for high protein blondies and also replaces most of the ‘sugar’.
I used whey-casein Vanilla protein powder from Quest Nutrition. - Unflavored Protein Powder; Multipurpose mix from Quest Nutrition here too.
- Whole Wheat Pastry Flour
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Creamy Peanut Butter – I recommend marshmallow flavor peanut butter from American Dream Nut Butter (Double Stuffed and Fluffed or Rainbow Dream Bar are amazing).
These are lower fat and higher protein than normal, and just amazing (code HAYLSKITCHEN gives you a discount on these).
ADNB has other amazing flavors that would work well here too. - 1:1 Zero Calorie Brown Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too.
- Unsweetened Applesauce
- Eggs
- Vanilla Extract
- Baking Powder
And then for the fluffernutter part:
- Mini Marshmallows
How to make Peanut Butter Marshmallow Protein Bars
These peanut butter marshmallow protein bars are really easy to put together! One of those mix dry, mix wet, mix both and bake kind of recipes.
- Whisk dry ingredients – flour, vanilla and unflavored protein powders, peanut butter powder, baking powder and salt.
- Whisk wet ingredients in step 1 – applesauce, brown sugar and peanut butter.
Room temperature drippy peanut butter so it mixes well too and does not clump. - Whisk wet ingredients in step 2 – add eggs and vanilla extract.
Use room temperature eggs;
This is so the wet ingredients and dry ingredients can mix well. - Add dry mix to wet and fold to combine.
Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the whole wheat flour or protein powder will make the healthy peanut butter marshmallow squares tough, dense and gummy.
- Add in mini marshmallows; Fold again.
Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have low sugar fluffernutter dessert recipe. - Pour into 8×8” baking pan.
Grease and line with parchment paper to prevent bars from sticking to pan. - Bake 22-25 minutes at 350°F.
Remove when toothpick/tester comes out dry with only few crumbs. Bars will overcook and harden otherwise.
How to store Homemade Fluffernutter Dessert Bars?
This healthy fluffernutter bars recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!
Store protein fluffernutter bars in an airtight container at room temperature for 1-2 days or in the fridge for a week.
To freeze peanut butter marshmallow protein bars, individually wrap each square in plastic wrap and place in freezer-safe zipper bags or air tight container; The fluffer nutter bars should keep for 2-3 months.

- Whole Wheat Pastry Flour: All purpose flour, 1:1 gluten free baking flour or Whole Wheat Pastry Flour; The same amount by weight
- 1:1 Zero Calorie Brown Sugar Replacement: Regular brown sugar
- Applesauce: Pumpkin Puree
- Unflavored Protein Powder: More flour, but also reduce applesauce to ¾ cup + 2 Tbsp

Ingredients
- 1 cup Whole Wheat Pastry Flour, 120g, see post for sub
- ⅔ cup Vanilla Protein Powder, Whey-casein, 60g
- ⅔ cup Unflavored Protein Powder, Whey-casein, 60g
- ⅓ cup Peanut Butter Powder, 32g
- 1 tsp Baking Powder
- ½ tsp Salt
- 1 cup Unsweetened Applesauce, 240g
- 5 Tbsp Zero Calorie Brown Sugar Replacement, 60g
- ¼ cup Peanut Butter, Marshmallow flavor recommended below, 56
- 2 Eggs
- 2 tsp Vanilla Extract
- 1 cup Mini Marshmallows, 45g
Instructions
- Preheat oven to 350°F and line an 8” x 8” baking dish with parchment paper.
- In a bowl, whisk whole wheat pastry flour, vanilla protein powder, unflavored protein powder, peanut butter powder, baking powder and salt.
- In a large bowl, whisk together applesauce, brown sugar and peanut butter.Add eggs and vanilla and whisk.
- Add dry mix to wet, and gently stir until just starting to mix.DO NOT OVER-MIX or protein powder will make the bars gummy.
- Add most marshmallows and fold to combine.
- Transfer to baking pan, top with remaining marshmallows.
- Bake for about 22-25 minutes, or until toothpick inserted into the center comes out dry.Remove from oven and let cool completely.
- Slice into 16 bars.
