Just amazing Fudgy Protein Brownies that are actually healthy and low calorie! These fudgy chocolate protein brownies use protein powder, monk fruit, almond butter and sugar free melted chocolate; No sugar, butter or oil needed!

It took 3 attempts and lets just say those first 2 were very bad fails. Ended up having protein bars instead of brownies.
This third one was so good I indulged in 3 of these just after shooting them because I couldn’t wait any longer.
Ingredients for Healthy Fudgy Protein Brownies
These fudgy chocolate protein brownies are made with a few healthy ingredients, and have no eggs, no oil, no sugar and gluten free too; The perfect chocolate protein powder recipe!
- Chocolate Protein Powder needed for high protein brownie and also replaces most of the ‘sugar’. I used part whey-casein Chocolate flavor from Quest Nutrition, and part whey Chocolate from Dymatize for this recipe.
- Unflavored Protein Powder to replace some of the flour (and carbs) in the recipe for a slightly lower carb high protein brownie. Quest Nutriton Multi-purpose here.
- Unsweetened Cocoa Powder, or Raw Cacao Powder
- Whole Wheat Pastry Flour – or a regular all purpose flour
- 1:1 Zero Calorie Sugar Substitute – I use Lakanto, to keep this recipe sugar free; (code HAYLSKITCHEN for a discount here too)
- Some Stevia Sweetener
- Non-fat Greek Yogurt contributes to the oil-free part of these high protein brownies since it adds the moisture, and also extra protein
- Almond Milk or regular milk
- Baking Soda
- Vanilla Extract
- Runny Almond Butter or Cashew Butter (no butter or oil to keep this recipe low fat)
- Sugar free Chocolate Chips or Chopped Chocolate – I use sugar free ones from Lakanto here (HAYLSKITCHEN for a discount here as well). Lily’s is another sugar-free option!
What Protein Powder to use?
Baking with protein powder can be tricky, and the best protein powders I’ve found for this is a mix of whey and whey-caesin blend.
I haven’t tried Whey-only protein, pea protein or other plant based ones, so I can’t say how those would work here.
Be sure to use a chocolate protein powder sweetened with stevia or monk fruit if you want a proper sugar free brownie recipe.
How to make Fudgy Protein Powder Brownies?
This recipe for low fat and low calorie chocolate fudge protein brownies is extremely easy to make; just mix and bake!
Here’s what it takes:
- Preheat your oven to 350°F and line a baking pan (about 8”) with parchment paper.
- Whisk all the dry ingredients in bowl.
- Whisk the wet ingredients in a large bowl.
- Add the dry mix to the wet and gently fold to combine. Just be gentle and don’t over-mix the batter. The protein powder will make it too dense.
You should have a thick batter. (Taste batter and add stevia powder if you want it sweeter)
- Add in almond butter and chocolate chips and fold to combine.
- Transfer the no sugar protein brownie batter into pan, spread and bake for about 25 minutes. Top should be set and dry, and a tester (toothpick or thin sharp knife) comes out mostly dry.
For extra fudgy brownies, let some moisture be there on the tester – this should be at about 22 minutes.
Wait until cool!
Don’t cut too soon or they will be too soft.
Tips for Perfect Fudge Chocolate Protein Brownie Recipe
- Use room temperature milk and yogurt;
This is so the wet ingredients and dry ingredients can mix well.
- Use Creamy Almond Butter also so that it mixes well into the batter
- Let melted chocolate cool a little before adding it in the batter. It’s okay if its a bit warm.
- Don’t over-mix the batter!
Make sure you gently fold the dry mix into the wet to combine them.
If you over-mix it, the protein powder will make the fudgy brownies tough, dense and gummy.
- Taste the batter and see if you need some extra sweetener. I’d recommend using stevia powder to maintain the consistency of the batter and have sugar free and healthy fudgy brownies.
- Don’t over-bake the brownies or they might get tough; Remove when the tester/knife comes out mostly dry.
Under baking a little is okay.
Alternatives for Healthy Fudgy Brownies
For the perfect low fat but moist protein brownies, I would highly suggest using the ingredients and brands I recommended; I do have some alternatives you can try. I haven’t testing them all, so I can’t say how your recipe might turn out.
- Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, in the same amount by weight; not cups.
- Unflavored Protein Powder: 20g more Flour, but also reduce yogurt to 1¼ cup (281g)
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Any other milk
- 1:1 Zero Calorie Sugar Replacement: Regular confectioners sugar or coconut sugar (this won’t be sugar free though, and also higher in calories)
- Peanut Butter: Almond Butter, Cashew Butter or any nut or seed butter.
How to store Fudge Protein Brownies?
This high protein fudgy brownie recipe keeps well for a meal prep dessert or post workout snack and is freezer friendly too!
Store fudgy chocolate protein powder brownies at room temperature in an airtight container for 1-2 days or in the fridge for a week.
To freeze fudge protein brownies, individually wrap in plastic wrap and place in freezer-safe zipper bags or air tight container; They should keep for 2-3 months.

Fudgy Protein Brownies – Amazing, Healthy, Low Calorie!
Ingredients
- ½ cup Unsweetened Cocoa Powder, or Cacao Powder, 40g
- ¼ cup Chocolate Protein Powder, Whey-Casein, 23g
- ¼ cup Chocolate Protein Powder, Whey, 23g
- ½ scoop Unflavored Whey-Casein Protein Powder, 15g
- ¼ cup Whole Wheat Pastry Flour, 30g, see post for subs
- 2 Tbsp Zero Calorie 1:1 Sugar Replacement, 24g
- Stevia Sweetener, ¼ cup sugar worth (Use your brand’s Conversion Chart)
- ⅓ tsp Baking Soda
- 1⅓ cup Non-fat Greek Yogurt, 300g
- ½ cup Unsweetened Almond Milk, 120ml
- 1 tsp Vanilla Extract
- 3 Tbsp Almond or Cashew Butter, 48g, see post for subs
- 3 Tbsp Chocolate Chips, Melted, 42g, Sugar-free recommended below
Instructions
- Preheat oven to 350°F and line an 8” x 8” brownie pan or baking dish with parchment paper.
- In a bowl, whisk cocoa powder, chocolate protein powders, unflavored protein powder, zero calorie sugar replacement, flour, stevia sweetener, and baking soda.
- In a large bowl, whisk together Greek yogurt, almond milk and vanilla.
- Add dry mix to wet, and gently fold until just combined.DO NOT OVER-MIX or protein powder will make the brownie tough.
- Add in almond butter/cashew butter and chocolate chips and fold.Batter should be thick.
- Transfer batter into pan, smoothen with a spatula or back of spoon.
- Bake for 25-27 minutes or until the top is set. Toothpick inserted into the center should come out slightly damp.
- Remove from oven and let cool completely.Cut into slices and enjoy!
Notes
- For extra gooey brownies, remove at 22 minutes when the tester comes out slightly moist.

I made these today and to be honest I goofed the recipe – I used chocolate casein protein powder instead of whey but they came out great anyway! I also subbed a low carb GF flour and bumped up the baking powder and they’re nice and fluffy. This is a fantastic protein brownie recipe and it will be in my regular rotation!

Never knew making a healthy and nice tasting chocolate brownie is this quick and simple!! I used almond flour, almond butter for this recipe and it turned out amazing. I could have taken it out in 18-20 mins as mentioned, but for some reasons left it for 30 mins as it looked as if its not done yet. It still tasted great, so maybe 20 mins next time.
The good (and healthy) stuff really doesn’t have to be that hard!
I believe they took longer since Almond flour bakes different. I’m so glad the alternatives worked out though!
Meal prepping these was so easy and helpful. 4 stars cuz I liked low cal brownies more but that’s probably just me preferring chocolate only flavored brownies over pb and chocolate…
Meal prep protein brownies is the way to go. These ones do have the hint of peanut butter – as opposed to the pure chocolate low calorie version; Maybe you could try an almond butter or cashew butter if you give them another go and let me know what you think?
