Very good call here because this hot baked cookie dough pot was just the perfect single serve protein dessert I needed for a quick sugar free craving satisfier.
I ended up eating some of the raw cookie batter as well and was afraid I wouldn’t have enough to fill that ramekin!
Ingredients for Hot Half Baked Protein Cookie Pots
This single serving half baked protein cookie dough is made with a few simple and healthy ingredients, is gluten free, has no butter or oil and no sugar sugar either!
- Vanilla Protein Powder for high protein hot cookie dough that’s also sugar free.

A third alternative would be Quest. - 1:1 Gluten Free Baking Flour
- Coconut Flour
- An Egg White for even more protein
- A bit of Peanut Butter
- Almond Milk to make this recipe dairy free
- Baking Powder

How to make a Half Baked Cookie Dough for One with Protein Powder
This hot half baked protein cookie dough is a super quick recipe and takes just one bowl.
- Preheat your oven to 350°F and lightly grease a ramekin.
- Mix your ingredients – gluten free baking flour, protein powder, coconut flour, egg white, peanut butter, baking powder and almond milk (adding slowly) – in a bowl.
Batter should be smooth but slightly thick. Add more coconut flour if it’s too runny, milk if too dry.
- Add in most of the chocolate chips or chunks, leaving some for the topping later.
- Transfer high protein cookie dough batter onto the ramekin.
Sprinkle on more chocolate chips.
- Bake the hot cookie dough for 10 min. The top should be just set
Let it cool a bit, and indulge!

- Gluten Free Baking Flour: Use Oat flour, whole wheat pastry flour or all purpose flour (in the same amount by weight, not tablespoons).
You can try to use almond flour; I’m a little hesitant about this one, so let me know if you try it. - Coconut Flour: Maybe 3x of almond flour, or reduce the amount of milk; I haven’t given this a go either.
- Vanilla Protein Powder: Chocolate protein powder or any other flavor
- Almond Milk: Regular or any other non-dairy milk
A Vegan Hot Baked Protein Cookie Dough
To make single serve hot baked protein cookie dough recipe, use plant based protein powder and replace egg whites with aquafaba.

Ingredients
- 3 Tbsp Vanilla Protein Powder, about 17g
- 1 Tbsp 1:1 Gluten Free Baking Flour, 8g, see post for subs
- 2 tsp Coconut Flour, 5g
- ¼ Baking Powder
- 1 Egg White, 30g
- 1½ Tbsp Unsweetened Almond Milk
- 1 tsp Peanut Butter, 5g
- ½ Tbsp Chocolate Chips, Sugar free recommended below, 7g
Instructions
- Preheat oven to 350°F and grease a 1 cup ramekin with cooking spray.
- In a bowl, stir vanilla protein powder, gluten free flour, coconut flour, egg white, peanut butter, baking powder and milk (gradually).Batter should be smooth but thick; Add more coconut flour if too runny and milk if too dry.
- Add in half the chocolate chips.
- Transfer batter into ramekin and top with more chocolate chips.
- Bake for 10-11 minutes.Top should be just set.
- Let cool for a few minutes and enjoy!
