Jump to RecipeAfter I posted the Chocolate Croissant a few weeks ago a lot of you requested an Almond Croissant on my IG. Having never had this before I was skeptical but OMG am I glad I made this recipe.
The mouth feel after the first bite was just Muuaaahh! So So So good. My husband absolutely loved it too! He said it was the real deal.
No jokes, I was really surprised (and super excited) when I saw that the texture of my almond paste filling for these croissants looked EXACTLY like the one I saw from videos. And that too when I used no butter or sugar, but protein powder instead!
Ingredients for Healthy Almond Croissant
This healthy almond croissant recipe uses reduced fat crescent rolls and a high protein filling made with protein powder! Here’s what all you need:
- Frozen Croissant Rolls: I use the reduced fat crescent rolls from Pillsbury, but you can also use these large ones!
For the Protein Almond Filling
- Vanilla Protein Powder: I recommend Dymatize Vanilla Protein Powder for this recipe
- Almond Flour
- Unsweetened Applesauce
- Egg
- Salt
For the Sugar Syrup
- Water
- 0 calorie Monkfruit Sweetener like this one from Lakanto
For the Topping
- Sliced Almonds
- Powdered 0 calorie Monkfruit Sweetener also from Lakanto
How to make High Protein Almond Croissant?
These high protein almond croissants are really easy to make!
- Bake Croissants previous day: Follow the package instructs and bake the croissants – about 10 minutes at 375°F.
Let the croissants sit overnight in an air-tight container.
The next day:
- Preheat the oven to 375°F.
- Make the filling:
Mix vanilla protein powder, almond flour, applesauce, egg and salt in a bowl.
Separate the filling into ⅔ and ⅓ portions.
- Make the syrup:
Mix water and sugar in a bowl.
- Assemble:
- Cut the croissants into halves length-wise
- Brush sugar syrup on the bottom half surface
- Use the ⅔ mixture and spread on the bottom half
- Cover with the top half
- Brush the top with some more syrup
- Spread the ⅓ filling mixture on top
- Sprinkle with sliced almonds
- Bake
Bake for 8 minutes.
Sprinkle with powdered sweetener, enjoy!
Tips for Sugar Free Almond Croissant
Making these sugar free almond croissants is really really easy, but here’s some pointers so you can get it perfect!
- Use day-old croissants! You want them to be soft so they can cut easily, and then bake to turn crispy and flaky.
Fresh croissants would not be easy to work with.
- Use whey protein powder as specified; It absorbs less liquid. If you use whey-casein or plant-based, use more liquid.
- Whisk the egg before adding to the mix so the filling turns out real smooth.
- Add powdered sugar immediately after baking so it sticks on the warm croissant.
How to store Easy Almond Filling Croissant
These easy almond filling croissants need to be stored in an airtight container; Keep them on the countertop for about 2-3 days.
To reheat healthy almond croissant, I heat in air fryer for 3-4 minutes at 375°F, or bake 5 minutes at 400°F.
Some alternate ingredients Almond Croissants with Protein Powder
I made this healthy almond croissant using protein powder with the ingredients listed above, but here are some other options you can try:
- Reduced Fat Croissant: Use regular small croissants, or large croissants!
- Whey Protein Powder: You can use whey-casein protein, but also add extra applesauce to get the consistency of the filling to match the video.
- Monkfruit Sweetener: Regular sugar, coconut sugar or date sugar work just fine.

Ingredients
- 16 Day-old Prepared Frozen Reduced Fat Crescent Rolls, 28g each
- or 8 Large Croissants
Filing:
- ½ cup Vanilla Protein Powder, Whey, 45g
- 80 g Almond Flour
- ½ cup Unsweetened Applesauce, 120g
- 1 Egg
- ¼ tsp Salt
Sugar Syrup:
- 3 Tbsp Water, 45ml
- 1½ tsp 0 calorie Monkfruit Sweetener, 6g
Topping:
- ½ Tbsp Sliced Almonds, 28g
- Powdered 0 Calorie Monkfruit Sweetener
Instructions
Previous Day:
- Preheat oven to 375°F and bake croissants according to package instructions (about 10 min for small croissants).
- Let cool and keep overnight in an airtight container.
Day of:
- Preheat oven to 375°F and line a baking pan with parchment paper.
Almond Filling:
- In a bowl combine vanilla protein powder, almond flour, unsweetened applesauce, egg and salt.
- Divide mix into ⅔ and ⅓.
Sugar Syrup:
- Whisk water and monkfruit sweetener in a bowl.
Assemble:
- Cut croissants in half, length-wise (tip: use serrated knife).
- Brush sugar syrup on the bottom half surface.Use ⅔ filling mixture and spread filing on bottom half of croissants.
- Place top halves on.Brush more sugar syrup on top and spread ⅓ filling mixture on top.Sprinkle on sliced almonds.
Bake:
- Bake for 8 minutes.
- Sprinkle on powdered sweetener.
