Ingredients for High Protein, Healthy Chocolate Chip Cookie Delight
This Healthy Chocolate Chip Cookie Delight is made with a sugar free cookie dough base, vanilla pudding layer, chocolate pudding and topping – using protein powder instead of sugar.
The Cookie Dough Base
- Vanilla Protein Powder for healthy protein cookie dough base that’s also sugar free
I used Whey-Caesin Vanilla protein powder from HTLT Supps.
Quest Nutrition works great too. - Unflavored Protein Powder to replace some of the flour and drop some carbs. I use Quest Nutrition’s Multi-purpose Mix Whey-Casein protein powder.
- Oat Flour
- Coconut Flour
- Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
- Unsweetened Almond Milk
- Sugar free Chocolate Chips or chopped Chocolate – I use monk fruit sweetened ones from Lakanto here (HAYLSKITCHEN for a discount here). Lily’s is another sugar-free option!
For the Protein Vanilla Pudding
This recipe makes a sugar free and low fat pudding layer.
- Non-fat Greek Yogurt
- Vanilla Protein Powder HTLT Supps or Quest Nutrition again here
- Vanilla Instant Pudding Mix: I used this sugar free and fat free one from Jello
The Chocolate Protein Pudding
- Non-fat Greek Yogurt
- Chocolate Protein Powder HTLT Supps or Quest Chocolate here
- Unsweetened Cocoa Powder
- Vanilla Instant Pudding Mix: I used this sugar free and fat free one from Jello
The Topping:
- Sugar free Cool Whip
Tips for No Bake Chocolate Chip Cookie Dessert Recipe
This chocolate chip cookie dessert recipe is really very easy to make – just layer on the cookie dough, pudding and whipped cream!
For the Protein Cookie Dough base in this healthy layered dessert:
- Add milk only a little at a time or the mixture will be too runny.
- Mix the dry ingredients well before adding in the wet so you have a smooth mix.
And for the Pudding:
- Mix the dry ingredients first, and then add the wet so that everything mixes smooth.
For topping:
- Use thawed cool whip topping (not frozen).
- Let lasagna chill in fridge 1-2 hours before eating so it can set.

I do have some alternatives you can try. I haven’t testing them all, so I can’t say how the recipe might turn out.
Base:
- Oat Flour: Almond flour, or heat-treated flour (don’t forget to heat-treat, raw flour is not good)
- Unflavored Protein Powder: More Oat flour or Almond Flour, but also reduce the milk to about ½ cup – ⅔ cup (add little at a time)
- Almond Milk: Regular milk
Chocolate and Vanilla Pudding:
- Greek Yogurt: Coconut Yogurt
- Almond Milk: Regular Milk
- Vanilla Pudding Mix: Chocolate flavored
Topping:
- Sugar free cool whip: Regular version or Coconut whipped cream

Ingredients
Cookie Dough Base:
- 1 cup Oat Flour, 90g
- ¾ cup Coconut Flour, 84g
- ⅔ cup Vanilla Protein Powder, Whey-casein, 60g
- ⅔ cup Unflavored Protein Powder, Whey-casein, 60g
- ½ cup Peanut Butter Powder, 48g
- ¾ cup Unsweetened Almond Milk, 180ml
- 3 Tbsp Chocolate Chips, Sugar free recommended below, 42g
Vanilla Pudding:
- 1 cup Non-fat Greek Yogurt, 225g
- ⅓ cup Unsweetened Almond Milk, 80ml
- ½ cup Vanilla Protein Powder, Whey-casein, 45g
- 2 Tbsp Vanilla Instant Pudding Mix, 15g, Sugar free
Chocolate Pudding:
- 1 cup Non-fat Greek Yogurt, 225g
- ½ cup Unsweetened Almond Milk, 120ml
- ½ cup Chocolate Protein Powder, Whey-casein, 45g
- 4 Tbsp Unsweetened Cocoa, 20g
- 2 Tbsp Vanilla Instant Pudding Mix, 15g, Sugar free
Topping:
- 4 oz Sugar free Cool Whip, 1½ cup, 112g, Thawed
- Optional crushed Chocolate Chip Cookies
Instructions
- Prepare an 8” x 8” pan or baking dish.
- In a bowl, combine protein powders, oat flour and coconut flour, peanut butter.
- Add milk (little at a time) to form a dough.
- Add chocolate chips and mix.
- Transfer to pan, and use back of spoon/spatula to press down and spread.
Vanilla Pudding:
- In a bowl, mix Greek yogurt, protein powder, vanilla instant pudding, and milk until smooth.
- Add milk a little at a time until pudding consistency is reached.
- Spread over base.
Chocolate Pudding:
- In a bowl, mix Greek yogurt, protein powder, cocoa powder, vanilla instant pudding, and milk until smooth.
- Add milk a little at a time until pudding consistency is reached.
- Spread over vanilla pudding layer.
Topping:
- Spread cool whip on top of pudding and top with crushed chocolate grahams or cereal.
- Cover with plastic wrap and chill 1-2 hours in the fridge.
- Cut into 12 pieces and enjoy.
