Jump to RecipeQuite an accidental recipe here if I’m being honest. I was going for a crunchy chocolate protein ball recipe and wanted the crunchy ingredient to stand out with a color contrast. Accidentally added in some instant oats and got some sort of a speckled look.
This really was not what I wanted for a protein truffle or ball, so I decided to improvise. We don’t waste ingredients when it’s possible to make another healthy no bake chocolate dessert.
Randomly remembered seeing a chocolate salami on someones’s Instagram post recently and realized this speckled thing looked something like that.
Added in some crackers and hazelnuts and voila! A quick and easy no bake chocolate salami that turned out to be Vegan as well!
Ingredients for High Protein Healthy Chocolate Salami
This homemade chocolate salami is made with clean ingredients like oats, cocoa powder and sweetened with protein powder – a healthy, no bake recipe with no eggs either!
- Instant or Rolled Oats; for a gluten free chocolate salami recipe
- Oat Flour – You can make your own by blending dry oats
- Chocolate Protein Powder for high protein cookie that’s also sugar free.

A third alternative would be Quest. - Graham Cereal/Crackers – I used Catalina Crunch Honey Graham Cereal for a sugar free recipe.
- Chopped Hazelnuts – or any other nuts like walnuts or almonds too
- Unsweetened Cocoa Powder
- Unsweetened Almond Milk
How to make Chocolate Salami Log with Protein Powder and without Eggs
This healthy spinoff of a Russian chocolate salami is a simple no bake recipe since it’s made without eggs.
- Process the oats, oat flour, cocoa powder and protein powder in food processor about 30 seconds until it’s fine.
- Transfer to a big bowl, add in the milk and mix with a big spoon to form a dough.
If mix is too dry, add about a teaspoon of milk; If it’s too wet, add some oats.
- Add in chopped graham cereal/crackers and nuts and mix again.
- Set a large piece of plastic wrap – about 12-15” long – on a work surface.
- Place the dough on the plastic wrap and shape it into a log or salami shape with your hands.
- Roll up the plastic to make a proper salami shape, then secure ends using strings or elastic. Or just twist and tie a knot!
- Place in fridge for about 1 hour to cool and harden.
- Slice using sharp knife and enjoy! Or simply bite it into your homemade salami as is!
Alternate Ingredients for Homemade Chocolate Salami
The ingredient list I used for this protein chocolate salami log makes it sugar free and extra healthy, but you can also make some substitutions and have the same amazing flavor!
Regular Chocolate Salami Recipe with Cocoa Powder
To make something similar to a classic Russian chocolate salami, instead of healthy graham cereal, you can make this chocolate salami with regular crackers, tea biscuits or vanilla wafers.
Another option is to switch out the protein powder with an equal amount of other sweetener. I would recommend Lakanto 1:1 Zero Calorie Monkfruit sweetener to keep it sugar free (code HAYLSKITCHEN gets you a discount on their website).
Vegan Chocolate Salami
For a vegan chocolate salami recipe, use a plant based protein powder; ProteinWorld has a Vegan protein blend as well.

To store No Bake Chocolate Salami
You need to store this healthy chocolate salami log in the fridge or freezer since it’s made with milk as a binder for all the dry ingredients.
Store no bake chocolate salami in the fridge for 1 week tightly wrapped in plastic wrap or in an airtight container.
For a freezer friendly make ahead chocolate protein salami, keep prepared salami in an airtight sealed container in the freezer for 2-3 months as a whole log or in slices. Let thaw on the counter before eating!

Healthy Chocolate Salami – High Protein & Sugar Free
Ingredients
- ½ cup Rolled/Instant Oats, 45g
- ¼ cup Oat Flour, 22g
- ⅓ cup Chocolate Protein Powder, 30g, 1 scoop
- ¼ cup Unsweetened Cocoa Powder, 20g
- ¼ cup Unsweetened Almond Milk, 60ml
- ¼ cup Chopped Graham Cereal or Biscuit Crackers, about 20g
- 1½ Tbsp Chopped Hazelnuts or other, 14g
Instructions
- Place oats, oat flour, cocoa powder, protein powder in food processor and process until file – about 30 seconds.
- Transfer to a bowl, add milk and mix with a big spoon to form a dough.If mix is too dry, add about 1 tsp milk, or more oats if too wet.
- Add in chopped graham cereal/crackers and nuts; Mix well.
- Lay a piece of plastic wrap – about 12-15” long – on a work surface.
- Transfer dough onto plastic wrap and shape into rough log/salami using hands.Roll into a salami shape and secure ends using strings or elastic (or twist and tie a knot).
- Place in fridge for about 1 hour to cool.
- Slice using sharp knife and enjoy.
