Jump to RecipeSomeone requested a coconut cream pie recipe a while ago, and I honestly thought it was one of the most unhealthiest pies out there since it was made with coconut. Not gonna lie, I was hesitant to try a healthy coconut cream pie recipe, but turned out it’s very much possible!Coconut flour and shredded coconut really bring in that flavor here!
I made it as minis, but this recipe can totally work for a large version as well.

These healthy coconut cream pie minis are made a few simple and healthy ingredients you probably have in your pantry already!
- Mini Graham Cracker Pie Crusts: I used these ones from Keebler
- Vanilla Protein Powder for high protein coconut cream pie recipe.
I use the whey-casein one from Flex, but Quest Nutrtion works well here. - Vanilla Instant Pudding Mix: I recommend this sugar free and fat free one from Simply Delish or Jello
- Unsweetened Almond Milk or Lite Coconut Milk for even more flavor
- Shredded Coconut
- Coconut Flour
How to make High Protein Coconut Cream Pie with Protein Powder
This high protein coconut cream pie uses protein powder as a sweeter but is super easy to amke recipe is basically just mixing everything in a bowl and assembling into pies.
- Spread shredded coconut on a pan and broil 1-2 minutes until just browned.
- Mix milk, vanilla protein powder, pudding mix in bowl.
Use whey-casein protein powder since it works well with the ratio of ingredients here.
If you use a whey protein powder, you might want to reduce the amount of milk to make it less. - Add toasted coconut and coconut flour and mix again.
Taste mix for sweetness; Add stevia if needed. - Divide mix among mini pie crusts.
Smoothen top with spatula. - Place in fridge for 30 minutes.
- Add whipped cream topping, remove from cups and enjoy!

The Best Healthy Mini Coconut Cream Pie
Ingredients
- 4 Mini Graham Cracker Pie Crusts
- ½ cup Unsweetened Almond Milk, 120ml
- ⅔ cup Vanilla Protein Powder, Whey-Casein, 60g
- 1 Tbsp Vanilla Instant Pudding Mix, 7g, Sugar free
- Optional ⅛ tsp Stevia Sweetener, = 1 tsp Sugar
- 2 Tbsp Unsweetened Shredded Coconut, about 10g
- 1½ Tbsp Coconut Flour, 10g
- Whipped Topping
Instructions
- Spread shredded coconut on a baking sheet and Broil for about 1-2 minutes until lightly browned and toasted.
- In a bowl whisk milk, protein powder and pudding mix.
- Add toasted coconut and coconut flour; Whisk again.
- Divide among pie crusts.
- Chill 30 minutes in fridge.
- Top with whipped cream and serve.
