To make French Toast with eggnog, you essentially replace most of the milk (and some of the sweetener) from a regular recipe with Eggnog. You would still need a bit of milk to thin the soaking mixture though since classic egg nog is thicker than milk.

- Eggnog Almond Milk or regular or light Eggnog
- Brioche Bread
- Vanilla Protein Powder – I used Quest Nutrition Vanilla Protein Powder for this recipe
- Egg Whites
- Almond Milk – You can use any other reduced fat milk too
- A bit of Ground Nutmeg
Tips for Eggnog French Toast with Protein Powder
This Egg nog French Toast recipe with protein powder really is easy, but here’s some tips to get it right.
- Whisk the mixture to get rid of lumps or they’ll just stick on to the bread.
- Soak the bread so that the flavor and protein powder get well absorbed into the bread.
- Use medium-low heat so the high protein Eggnog French Toast slices don’t burn – this can happen quite easily with the protein powder.
- Be gentle when you flip.
The bread should come off the pan very easily!

If you want to make this Eggnog protein French toast recipe Vegan, you try replacing the egg white with aquafaba.
This recipe uses Almond Milk-based eggnog and almond milk, and is dairy free already. Use regular milk instead of almond milk, and regular eggnog instead of Almond nog if needed.

Actually Healthy Eggnog French Toast – High Protein, Low Sugar
Ingredients
- 4 slices Brioche Bread, about 112g
- ½ scoop Vanilla Protein Powder, Whey-casein 15g
- ⅓ cup Eggnog, Almond Milk-based recommended, 80ml
- 1 Tbsp + 1 tsp Almond Milk, or other, 20ml
- 1½ Egg White, 45g
- ⅛ tsp Nutmeg
- Olive Oil Spray for greasing
Instructions
- In a large shallow bowl or container whisk together eggnog, milk, egg whites, vanilla protein powder and nutmeg.
- Place sliced bread in mixture and let soak for about 2-3 minutes. Flip, and soak other side for another 2-3 minutes.
- Heat a large non-stick skillet over medium-low and spray with cooking spray.
- Place soaked bread on pan and cook for 2-3 minutes, flip, and cook other side for another 2 minutes.Cook one slice at a time if using a small skillet.
- Serve with whipped cream or your choice of toppings.
