Jump to RecipeAfter making that amazing Protein Skillet Cookie recipe, I was just looking for opportunities to use that recipe to make a similar cookie-ish dessert. Saw some halloween candy in my pantry, and these leftover candy cookie bars were perfect.
A soft and chewy protein halloween candy cookie bar that you’re going to want more of!
Ingredients for Healthy Halloween Cookie Bars
These high protein halloween cookie bars are made with a few healthy ingredients (no butter) and some classic – and some healthy – halloween canday.
- Vanilla Protein Powder for healthy, sugar free pumpkin cookie
I used Quest Nutrition Vanilla whey-casein since it works best for baking. - Unsweetened Applesauce
- Peanut Butter Powder, also known as Powdered Peanut Butter. I use Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount here).
PbFit or PB2 are good options too. - Whole Wheat Pastry Flour
- Zero Calorie Brown Sugar – This is the Brown Monkfruit 1:1 Sugar Substitute from Lakanto, and keeps this recipe sugar free; (code HAYLSKITCHEN for a discount here)
- Coconut Flour
- An Egg
- An Egg White
- Almond Butter; I’d recommend American Dream Nut Butter Cookie Batter Almond Butter; Code HAYLSKITCHEN gives you a discount.
- Baking Soda
And for the mix-ins:
- Candy Coated Chocolate; I recommend the ones from Lily’s; Regular M&Ms work too.
- Peanut Butter Cup Candy; I use high-protein, low carb one from Quest Nutrition, but Reese’s works out as well.
- Mini Twix Chocolate Bars
- Mini Snickers Bars
Tips for Homemade Halloween Candy Cookie Bars
This Halloween candy cookie recipe is super easy, but heres’ some tips to get it perfect every time.
- Use whey-casein protein powder since it works well with the ratio of ingredients here; Whey absorbs less moisture, so you would have to reduce the amount of applesauce in this case.
- Use room temperature ingredients so they mix well.
- To make it look pretty, save some chocolate candy for topping 🙂
- Remove bars from oven when the top of the center is cooked, but still soft; Bars will continue to cook when cooling.
- Let cool completely before cutting, or the bars will be too fudgy and fall apart.
Store Leftover Halloween Cookie Bars
These leftover halloween cookie bars can be stored on the countertop, in the fridge or even frozen.

To freeze healthy protein powder halloween cookie bars recipe, place in freezer-safe zipper bag with parchment paper between each once, and keep 1-2 months; Don’t forget to thaw before eating!

If you need other options for the flours and such, here’s some alternatives:
- Whole Wheat Pastry Flour: All purpose flour or 1:1 Gluten Free Baking Flour, in the same amount by weight.
- Applesauce: Mashed Banana or Pumpkin Puree
- Zero Calorie Brown Sugar Alternative: Regular coconut sugar or brown sugar (this won’t be sugar free though, and also higher in calories)
- Almond Butter: Peanut Butter, Tahini, Cashew Butter, or any nut or seed butter.
- Sugar-free Chocolate: Regular Chocolate Chips

Healthy Halloween Cookie Bars – High Protein, Low Sugar
Ingredients
- ½ cup Vanilla Protein Powder, Whey-casein, about 45g
- ¼ cup Whole Wheat Pastry Flour, 30g
- ¼ cup Peanut Butter Powder, 24g
- 1½ Tbsp Coconut Flour, 10g
- 1 Tbsp Zero Calorie Brown Sugar Substitute, 12g
- ¾ tsp Baking Soda
- ½ cup Unsweetened Applesauce, 120g
- 1 Egg
- 1 Egg White
- ½ Tbsp Flavored Almond Butter, 8g, Recommendation Below
Candy:
- 2 Mini Twix Chocolate Bars
- 1 Mini Snickers Chocolate Bar
- 1 Peanut Butter Cup, High Protein recommended below
- 20 g Candy Coated Chocolate or M&Ms, Sugar free recommended below
Instructions
- Preheat oven to 350°F and line a loaf pan with parchment paper (or grease).
- In a bowl combine vanilla protein powder, peanut butter powder, flour, coconut four, sugar alternative and baking soda.
- In another bowl, place whisk applesauce, egg, egg white and almond butter.
- Add dry mix into wet and gently fold until uniform.
- Add most of chopped chocolate candy and candy coated chocolate and mix again.
- Pour batter into greased pan/skillet and spread evenly with a spatula or back of a spoon.Top with remaining chocolate.
- Bake about 12-14 minutes – top should be cooked and dry to touch, but still soft.Transfer to cooling rack to cool completely.Slice into 8 bars.
