Jump to RecipeWith everyone making green food this time of year, I decided to hop on the train; Oh man this might just be my most favorite dessert lasagna yet. Yes, even better than my high protein chocolate lasagna recipe.
The flavors of mint and chocolate go so so well together in this recipe, I cannot! It really is just perfect!
Smooth, silky and just absolutely delicious. And the best part is that it’s healthy too – low fat, low sugar and lower calorie.
Ingredients for Healthy Mint Chocolate Dessert Lasagna:
This high protein healthy mint chocolate dessert lasagna is made with layers of healthy with sugar free base, protein puddings and a low fat whipped cream too.
The Base
- Sugar-free Mint Chocolate Oreos – I used these sugar-free sandwich cookies from Sunday’s
- Rice Krispies Cereal
- Chocolate flavor Almond Butter; I recommend Chocolate Mint Lentil Almond Butter from Broma
Or Mint Chocolate Dream from American Dream Nut Butter (code HAYLSKITCHEN gives you a discount on these). It’s lower fat and higher protein than normal, and just amazing . ADNB has other amazing flavors that would work well here too. - Cocoa Powder
- Sugar free Chocolate flavored Syrup; These Skinny Syrups from Jordan’s are what I recommend.
For the Mint Protein Pudding Layer
- Non-fat Greek Yogurt
- Vanilla Protein Powder; I used Quest Nutrition Vanilla here.
- Vanilla Instant Pudding Mix: I used this sugar free and fat free one from Simply Delish. If you can’t find it, Jello is a great option too.
- Peppermint Extract
- Green Food Color
- A bit of Unsweetened Almond Milk
The Chocolate Protein Pudding
- Non-fat Greek Yogurt
- Chocolate Protein Powder for high protein pudding; I used Quest Nutrition for this recipe here.
- Cocoa Powder
- Chocolate Instant Pudding Mix: Simply Delish or Jello
- Unsweetened Almond Milk
The Topping:
- Reduced Fat Cool Whip
- Mint Chocolate Oreo – The same one from Sunday’s here.
How to make Mint Chocolate Delight with Protein Powder?
This protein powder mint chocolate delight recipe is super easy to make – just make all the layers one at a time, spread them out in turn, and completely smoothen out before adding on the next one!
- Prepare the Base Layer:
- In a small food processor, combine mint chocolate sandwich cookies, rice krispies cereal, cocoa powder, chocolate almond butter and syrup. Mix until a crumbly texture forms.
- Press the mixture into the bottom of a lined dish to create the first layer.
- Create the Peanut Butter Layer:
- In a separate bowl, mix creamy yogurt, vanilla protein powder, vanilla instant pudding mix, peppermint extract, green food color and milk until well combined.
- Spread the mint protein mixture over the base layer.
- Create Chocolate Layer:
- In a bowl, mix yogurt, chocolate protein powder, cocoa powder, chocolate instant pudding mix and milk until well combined.
- Spread the chocolate mixture over the mint layer.
- Whip Up the Creamy Topping:
- Carefully spread the cool whip over the chocolate layer.
- Chill and Set:
- Place the no bake chocolate mint layered dessert in the refrigerator for at least 2 hours or overnight to allow the flavors to meld and the layers to set.
- Garnish and Serve:
- Before serving, sprinkle chopped mint chocolate Oreo on top for an extra layer of indulgence.
- Once fully set, slice the dessert into squares or bars and indulge.

This healthy mint lush dessert recipe is really very easy to make, but just keep this in mind:
- For base:
- add syrup only a little at a time or the mixture will be too runny.
- Use a food processor to crush the oreos and rice krispies so the mix gets smooth.

- 3 Tbsp Rice Krispies Cereal, 5g
- 1½ Tbsp Mint Chocolate flavor Almond Butter, 24g, Recommended below
- 1½ Tbsp Cocoa Powder, 7g
- 2 tsp Sugar-free Chocolate Syrup (eg. Skinny Syrup), 10ml
Mint Protein Pudding:
- 1 cup Non-fat Greek Yogurt, 225g
- ⅓ cup Vanilla Protein Powder, Whey-casein, 30g
- 2 Tbsp Vanilla Instant Pudding Mix, 15g, Sugar-free
- ¼ tsp Peppermint Extract
- ⅛ tsp Green Food Color
- ¼ cup Unsweetened Almond Milk, 60ml
Chocolate Protein Pudding:
- 1 cup Non-fat Greek Yogurt, 225g
- ⅓ cup Chocolate Protein Powder, Whey-casein, 30g
- 2 Tbsp Cocoa Powder, 10g
- 2 Tbsp Chocolate Instant Pudding Mix, 15g, Sugar-free
- ¼ cup Unsweetened Almond Milk, 60ml
Topping:
- 1 cup Reduced Fat Cool Whip, 80g, Thawed
- 1 Sugar-free Mint Chocolate Oreo
Instructions
- Prepare an 8” x 8” pan or baking dish.
- In a food processor combine oreos, rice krispies, cocoa powder, chocolate flavor almond butter and chocolate syrup.
- Transfer to pan, and use back of spoon/spatula to press down and spread.
Mint Protein Pudding:
- In a bowl, mix Greek yogurt, protein powder, vanilla instant pudding, peppermint extract, green food color and milk (adding milk little at a time) until smooth.
- Spread over base.
Chocolate Protein Pudding:
- In a bowl, mix Greek yogurt, protein powder, cocoa powder, chocolate instant pudding, and milk (add milk little at a time) until smooth.
- Spread over mint pudding layer.
Topping:
- Spread cool whip on top of pudding.
- Cover with plastic wrap and chill 1-2 hours in the fridge.
- Sprinkle on chopped mint chocolate oreo, cut into 6 pieces and enjoy.

This mint chocolate dessert lasagne was so good! You honestly can’t tell it’s a high protein dessert or yogurt. I put mine into a chocolate pie crust because I don’t have a food processor and it was still great! Even if you just ate the filling would be great.
